This looks great thank you 😊 Red sauce gives me heart burn so always looking for alternatives. I've done butternut, zucchini, cauliflower.. Butternut with a little lemon and garlic has been my go to faux Mac and cheese 😋 Blender is so fast love it ❤
I have been waiting so long for a healthy Alfredo sauce recipe that I would love! This is it!!! I'm going to make this tonight for my daughters! They love your recipes and your channel so much! Your banana oatmeal cookies were their 1st introduction to cooking when we found you 2yrs ago! ❤ Thank you for another great recipe! ❤
I made this today. It is absolutely delicious. I put it on acorn squash. I added some turkey sausage. Wow!!!. I didn't want to use milk so I used coconut cream. I cannot believe how delicious this is. Next time I'm going to put it on spaghetti squash.
I've made this for years! Added to pasta, bakes (think chkn, broc and or califower bake). Old enough to have been eating and cooking w cottage cheese daily for years
Just got your book. Loved it. Very informative regarding pantry and house staples. Also helpful with food prep. Takes a long time at first but easy when you want to prepare dinner… except my husband is eating my celery, carrots and radishes! Thank you
Thank you Dani for another amazing recipe and all the tips, hints and variations. My best to you and yours for the holiday season! Sincerely, Pamela, CANADA🤩
Wow, Dani! I like creamy and alfredo sauce, but far too heavy for me, so this a great alternative! Chickpea pasta? I had no idea there was! This is wonderful, girl! Thanks my friend and Cheers! 🥰 Enjoy your weekend!
Love this idea! I tend to buy bottled for a quick meal but this is a much better alternative. FYI, I do not see the Italian and Garlic spices in the recipe provided. Thank you, Dani!
I plan to try this tomorrow! My husband and I love pasta with sauce, but most are high in calories and fat. I don't make them often. I'm excited to try this! We enjoy your other recipes so much because they are healthy, satisfying, and TASTE GOOD. We also like the new added protein ideas. We're active seniors, so the added protein is essential to our "maturing" health! 😁
Hi Dani, I'm going to try your recipe. I love Alfredo pasta!! I always use this chickpea pasta, which is good and nutritious, and it has to be rinsed after be strained Thank you 🌷
I recently bought a chickpea pasta and I always have cottage cheese. This would be great with some steamed broccoli! I'll tag you on IG if I make it, yum!
Nice, Can we do cc pesto? Cover pot to speed up boil. Micro and spoon will blend CottageCheese (cc), too. (vegan ingred to help nutro yeast, nut protein). Or, some alternative pasta's take much longer, like brown rice pasta. Check 25% before and after box time, Cheese frequenlty likes nutmeg and ground red pepper. Love. I'm so inspired by this. CC is in the zone... Try cottage cheese n parm instead of ricotta in Lazagna. MMMM.
This was very good. I added some fresh minced garlic, grilled chicken and mushrooms. My basil turned black-ish in the fridge and was only in there 2 days hmm, advice on why that happened? I'd make this again and add more veggies. Yum
Good recipe👍. Though I would substitute lactose free cottage cheese and unsweetened almond milk. Maybe some sliced portobello & peas. And a hugh green salad to cancel out the 6 teaspoons of "hidden sugars" in the chickpea pasta. Subtract the fiber number from the carb number and divide what's left of the carb by 5. That last number is the teaspoons amount of "hidden sugars," even when the nutrition label says zero sugars added.
We found the Banza brand chic pea pasta better than all the other “protein” pastas! Tried them all about 6 months ago. It’s even better tasting than traditional pasta, & WAY healthier. Where has this been our whole lives? 😂I’ve made Low carb, low fat, & high protein versions of Alfredo, Baked Macc & cheese, & Goulash, Spaghetti…& so much more! Thank you for this new recipe with cottage cheese (it’s clearly having a moment..) as the cheese sauce vs. heavy cream or cream cheese & butter. We will be trying it for dinner tonight! 😋🍝
Usually when I make the alfredo sauce with cottage cheese, it's never the same each time. Recently, I was trying to thicken it a little with a bit of flour like with some sauces, but as soon as I did that all water was separated from the curds and then I was stuck eating watery pasta with curds. (I didn't want to waste any.
Hi ! Could I use a non dairy cottage cheese and a Parmesan cheese alternative and non dairy milk ? I was wondering if it would drastically change the texture and flavor. Please let us know ! I love Alfredo sauce but since I had my gallbladder removed I’m allergic to all dairy 😢. Thanks for sharing ❤
Barilla red lentil is the tastiest with the nicest texture. Either the spaghetti or Rotini. It's best to make fresh. Don’t meal prep the pasta. The texture gets weird.
Your recipebis missing one indigrient that turns into an actual heatable sauce that doesnt break : cornstarch. Add about 12-15g of cornstarch into the bleander, then heat the souce in the pan until it bubbles. The cornstarch will stabilize the sauce so the protein doest separate from the fat. You can store it and use for later.
@@iamblessed3539 well it's just a starch, a powerful thickener, which is also tasteless and doesn't cause gut problems like gum thickeners can. No need to overthink it :)
You are going to want to make this recipe tonight! It's so quick and easy + packed with protein. Enjoy. XO
Can we add lemon to make it citrus

Ohhhhh ya !!! Definitely doin this 2nite...Dani Dlish Dishes 😅
What she says about the chickpea pasta is super true. It will 100% turn to mush if you follow the box. This is true for every brand I have tried.
Agreed!

Wow this looks really versatile... imagine it with mushrooms, broccoli, roasted garlic chips.... 😍 Great idea, thank you!!
I tried it today, literally soooo good, even better than normal pasta sauce.
I've made this for years! Added to pasta, bakes (think chkn, broc and or califower bake).

This looks amazing! I love Alfredo Sauce. This would probably be good over some potatoes as well.
This ISN'T Alfredo sauce at all
@@mrswilberta version
@@gratefultammy there is no "version". Its either Alfredo or a bastardization. People who eat that crap probably think Olive Garden is authentic

Can't wait to try this. Looks like a great weeknight meal.
Thank you for this recipe! I had some leftover cooked butternut squash so I added it to the blender sauce until smooth; so yummy!

I did something similar with ricotta last night. Super easy & way less saturated fat.

I just adjusted the written recipe; thanks for the heads up and enjoy!

I’m not a fan of pasta made with legumes but this still sounds good with regular pasta. Great recipe I love cottage cheese
This looks so yummy😋

You can add two egg yolks and chopped up crispy bacon or Guanciale plus a lot of pepper = Carbonara!
For the parmesan cheese, can you use the shelf stuff or did you grate your own
Does this reheat well?
Wonder how it would taste with silken tofu instead of the cottage cheese..hmmm..might have to try both ways😊
Can you use almond milk?
Very tasty,❤❤❤🎉🎉

Yummy.
Delicious recipe. Thank you!
Please be mindful of the chickpea pasta and high levels of glyphosate.
Right! Always have to check before you buy now..
This looks so delish I wish I could prepare it for myself but I am so lactose intolerant that the Parmesan cheese will hurt my stomach for days😢😀

How does it taste compared to a normal Alfredo sauce?
I agree not 6minbut more.like 3 1\2 min and it is cooked Thank you
Could you swap in a mozzarella cheese for the Parmesan?
Does ricotta have less protein than cottage cheese and will the dish have same results if I use ricotta? I find cottage cheese too salty.
Thank you ! I will try this for sure, but... Not on " vege " noodles ! I'm sorry, but I hate it... 🤷🏼♀️ Thanks again !
Mom!! Why didn’t I get to eat this 😡. I want even told about this
Have you tried this with zucchini noodles??

I've tried the Banza pasta B4, didn't care for it, maybe I over cooked it.?
It overcooks VERY easily!
I agree I tried it B4 and it was gooey and unpleasant. Maybe I will try it again and just cook it less
Anyone lactose intolerant? Does cottage cheese bother you?
You can find lactose-free brands (I know Good Culture has a lactose-free option!)
@@CleanandDeliciousDani Oh awesome thank you!!

Arrowroot flour is a healthier alternative. It is a one for one replacement for cornstartch.
@iamblessed3539 yeah you can use it as well, but there's nothing unhealthy about cornstarch
