    Possibly the most asked questions on my channel are how to make a chinese curry and what's in a chinese curry sauce?
    Well I'm going to show you!
    This recipe has been handed down from my grandfather down to my mum, and then to me and my siblings. It is honestly the best chinese curry I've ever tasted. Based on a Malaysian/Chinese recipe, the base is made from fruit, curry powder, garlic, chillis and lots more to create that fabulous depth of flavour. It is warming, sweet, moderately spicy and so, so satisfying.
    Once you've made your curry base (link above), which is made in a big batch and can be stored in the freezer for a very long time, making the actual dishes is really quick and simple.
    I find that food connects us as families and people and helps make special memories. This being my grandfather's recipe is super special to me and it give me great pleasure to share it with you.

    You will need (for 3-4 servings):
    1 ladle of curry base (see link above)
    600g chicken thigh fillets
    1/2 white onion
    1 tbsp sugar
    Several pinches of salt to taste
    Cold water
    For the chicken marinade you will need:
    1 tbsp sugar
    1 tbsp sesame oil
    2 tbsp light soy sauce

    Nice video and iOS, clear instructions as most of your other videos. One thing I would like to suggest though is not to keep ‘double dipping’ your spoon after you have tasted it once, twice, etc. and then uae the same spoon you’ve just used is then used again and again. This, in any kitchen, would get you instantly fired. Apart from that, as I say, a nice video. All the best and look forward to seeing more.

      Thank you! I absolutely agree with that. However, as I was making this for myself and my wife I assumed that would be ok. Remember, I am not in any way claiming to be a chef - just a keen home cook. Point taken, though - best to set a good example. I will be keeping fresh spoons on standby for future videos.
      It's really so great to get feedback like this as it proves that people really watch my recipes. I'm still shocked that anyone does :)

    Like your vids mate. I am so glad you don't use MSG. I have developed some kind of wierd allergy to it now. I walk past a take out and it makes me feel sick.

      MSG is a weird one. Scientifically there’s nothing wrong with it, but I hear of too many people who have reacted to it for me to dismiss it as just rumours and myths. But my personal reason for not using msg is that if you cook well with good ingredients then it’s simply not needed.

    You can marinate chicken breast in baking soda and corn starch to tenderise the meat

      Hi Maggie. The link to the sauce recipe is in the video description. One thing though - it’s a recipe passed through my family and is for making a bulk batch of curry concentrate. However once you’ve made it, it will keep in the freezer for at least 6 months so you only have to make it a couple of times a year to keep you supplied with curry 😊

    Real Chinese people don’t eat curry with a spoon . They eat with chopsticks, unless it’s soup

      Sorry to disappoint. This is a two part recipe as the actual curry recipe is quite involved so I had to do it in two videos.
      I didn’t want to do any shortcuts as it’s my grandfather’s recipe.
