Yoshi was originally first though of as a horse but it was seen to not fit so they began thinking of making his turtle and eventually made him into the dino-dragon we all know and love. Yoshis don't necessarily only say the name of their species but rather that is part of the species sounds they make to speak in their own language. Yes Yoshis do have their own language in which they speak in similar to how Kongs do. In SMRPG Mario's Buddy Yoshi translates for him since he can speak both Yoshish and English. In PM64 we see some who probably can speak English and in NSMBUD a Baby Yoshi speaks in Yoshish but is understood. Also, it's only really in the anime where Pokemon say their names. While in the games with the exception of Pikachu all Pokemon make sounds. The egg thing is probably because in the games the eggs kinda look like a Yoshi egg. Meanwhile the anime has them in all sorts of appearances. The only real connection Yoshi has to Pokemon is that old urban legend that you could evolve a Dragonite into a Yoshi.

It's been years since I played those games so I forgotten about that. Of course I don't belive the yoshi is a pokemon theory, but the fact that some yoshis have spoken English could be connected to the pokemon anime of some pokemon speaking to humans.
