- Eden Gebre Egziabher owns and operates Makina Cafe, the first and only Eritrean and Ethiopian food truck in New York City. Driven by her passion for the foods she ate as a child growing up in Addis Ababa, Eden serves Eritrean and Ethiopian staples like injera bread, chicken and beef tibs, misir (spicy red lentils), tikel gomen (cabbage with carrots and potatoes), gomen (collard greens), and sambusas, which are similar to samosas. Eden, born and raised in Ethiopia from parents of Eritrean descent, aims to use Makina Cafe to celebrate her two countries of origin and their cuisines.

I love this food truck. I was going once a week before COVID hit. Now I am not commuting into the city and miss it. I was browsing yelp for Ethiopian food, and the truck had better ratings than the sit down restaurants which made me find where it was. Probably walked 10 blocks to get to it but it was worth it.

Women like this are absolutely critical in showing how small businesses can start and grow the economy.
She inspires other women to start businesses and introduces many to cultures they may not have been introduced to (and provides jobs).

She made up that part. There are a lot of women in the food truck/stand/cart business in New York. Of the half a dozen food truck/stand/cart near my office, half are run by women (Halal grill, roast nuts, fruit salad). Look at Munchies' own videos on New York street food, so many are run by women including black women.

I just moved from DC and the one thing i miss is the Ethiopian food/coffee/markets. If her truck was anywhere near my place of work, i would have this literally every day for lunch. No question.
Ethiopian food is one of my favourites. We are lucky enough to have a decently sized Ethiopian community here in Manchester, UK so there are two or three great restaurants to get it. Makina is on my hit list for next time I'm in NYC though.

@KM Y Injera making started around 100BC, In the highland part of Ethiopia, presently Gonder and Gojam( Amhara Region) . But for sure Every Ethnicity modified it to their needs. For Example in Oromia they call it Budenna and Laftoo, Somali's call it Canjeroo. So basically now it has become an East African Dish.

She now can. Ethiopia and Eritrea patched up their differences and no more fighting between them.
She is vague about her immigration status. Her story implies refuge, but she might be illegal (i.e. was not granted asylum). If she is here as an asylum status, then if she goes back, she looses her "credible fear" and thus her visa/green card is revoked. She could also already be a USC, but unlikely given she never says anything to that affect.
