    Hi.. can I use T55 how would I need to adjust the hydration 😊

      It's hard to say exactly how to adjust the hydration. Theoretically, T55 absorbs slightly less water than T65. Please reserve some liquid and do not add it all at once. Adjust based on the texture of the dough. When you touch the dough it should feel slightly sticky but can be easily rubbed off from the finger tip.
