Slow Cooker Squash Soup | For those nights that start to feel like autumn!

    INGREDIENTS
    - 3 lb winter squash (butternut, buttercup, kabocha)
    - 1 stalk celery, roughly chopped
    - 1 carrot, roughly chopped
    - 1 onion, roughly chopped
    - 3 cloves garlic
    - 1 apple, core removed and chopped
    - 2 tbsp fresh minced ginger
    - 2 tsp curry powder
    - 3/4 tsp cinnamon
    - 2 tsp kosher salt
    - 1 tsp black pepper
    - 2 cups chicken or vegetable stock (up to 4 cups stock, depending on desired thickness of soup)
    - 1 tbsp apple cider vinegar
    - 1 15-oz can full-fat coconut milk
    For the apples:
    - 2 apples
    - 2 tbsp maple syrup
    - 1 tsp cinnamon
    INSTRUCTIONS
    - Clean the squash by removing the ends and cutting down the middle lengthwise. Scoop out the seeds with a spoon and peel and dice the squash into 1-inch pieces. Place in a 4- or 6-quart slow cooker. Add the celery, carrots, onion, smashed garlic cloves, apple, fresh ginger, curry powder, cinnamon, kosher salt, and black pepper.
    - Pour in the chicken stock, cover with the lid, and set on high for 6-8 hours. When finished, a knife should pierce the squash and apples with no resistance.
    - Add the apple cider vinegar and coconut milk.
    - Use an immersion blender and purée the soup, leaving a little texture. Alternatively, the soup can be puréed in a blender in batches. If using a countertop blender, make sure to leave the vent slightly ajar to allow any steam to escape. Serve with slices of cooked apples (recipe below).
    For the apples:
    - Cut the apples into quarters and remove the cores. Slice each quarter into three or four slices and add all the slices to a medium skillet. Pour over the maple syrup and cinnamon.
    - Cook the apples over medium heat until they are slightly softened and caramelized, about 5 minutes. Remove from the heat and serve.

    Wow, I would’ve never thought you weren’t a chef. Everything you do the way you explain it spell chef. I’ve learned so much watching your channel. I found it when I was trying to start a garden and I came across your channel and I’m so glad I did because now I have a nice garden. So I have everything I want all in one channel. How to cook food, how to do a garden and how to renovate my house lol. You have a beautiful house by the way. And Kip is just so cute. I can’t wait to continue watching your videos and learning.

    Kaleb - my girlfriend made this soup tonight. After a torturous 6+ hours of smelling it and thinking about it, I have to say it ended up exceeding our expectations. Just incredible flavor and texture. Highly recommended to anyone watching this.

    Nice looking soup. I like the addition of curry. I don’t have a slow cooker so I roast all my vegetables. I usually add carrots and a little tomato as well. I never make it the same way twice. But why I am commenting is two cloves of garlic is not a lot. I roast a whole head of garlic. But there is no right or wrong, that is the beauty of soups!

    This looks delicious! I have a butternut squash soup recipe that's OK, but I'm looking forward to trying yours since mine doesn't include ginger. I like to garnish mine with roasted, salted pepitas.

    Butternut squash soup is my absolute favorite! I’ve been making it for many years, thought it was in my own recipe, lol! In addition to organic ginger, I also add grated organic turmeric, and a wee bit of cayenne for the health benefits. I top it off with full fat coconut milk. It adds a decadent, creamier texture to it. Occasionally, I will add lemon grass for brightness. Lovely contrast to the warming spices. Excellent video, thank you so much!❤

    Thank god you shared this video because I have to prepare food for my mom and I accidentally bought one of those kinds of squash and had no idea what to do with it lol 😂❤ I was just gonna cut in half and shove it in the oven and save the seeds but now I can make a warm hug in the crock pot because she’s always freezing to death now a days. ❤❤❤I hope she likes it!

    I have to be honest. This recipe had a bit too much heat for my pallet. I will make it again with half the curry and larger, tastier apples and a touch more cinnamon. It was good though. My friend liked it. Thank you, Kaleb.

    Oh my goodness I need to make this. I can’t use curry my daughters allergic so I’ll probably just omit it completely maybe replace it with a tiny bit of cloves I’m not sure. My family lives soup but love making soups from scratch & I know they’d live this one. They aren’t typical stash eaters just this looks so cozy & divine I know it will bring them over to the squash lovers side with ease. Thank you as always for sharing & for being such a cutie pootie

    Kaleb, your funny and I enjoy your talks, cause you think like me. I watched you cut that apple core with the huge knife towards you and I was like..uh oh!..then you said "dont do this"! Well, I am recovering from surgery from cutting my finger thru the nerve with that same knife, so I can attest to your warning. I was swatting at a gnat while cutting a juicy tomato only I caught my finger instead of the gnat. Can never be too careful with those knives...they get the utmost respect in my kitchen!

      Do you mean the coconut milk? If so, you can use any other milk or half and half or even heavy cream. A coconut isn't a nut. It's considered a fruit.

    Geez... does it matter if I put the coconut milk and ACV right in with everything from the beginning? UGH, I didn't realize I needed to add it at the end before I mix it all up. :/ I was just in a hurry to get it all in the pot and cooking up for later! Boooooooo me!
