I do basically the same thing but I do my noodles and let them drain in a colander over a pan or large bowl for 10-15 minutes and always put them in a thirsty towel and gently pat to get as much water out as possible before putting in the hot oil. I didn't see her do this at all. It helps too with the oil spitting and popping. I also use young small to medium size zuccs. I have seen some folks use these monster over grown things which are nothing but water and big seeds - the same with yellow crookneck squash or cukes for that matter. There is a just right size. Use them young and no more than mid size and the seeds will be small, the flesh tender and the flavor much better.

Hello! I don’t think it’s more calories, but even if it is, calories from healthy fats are way better than calories from pasta. The carbohydrates from pasta turn into sugar as soon as you eat them and cause spikes in blood sugar. Which causes the release of insulin I used to feel same as you until I started to gain weight in my late 30s for no appointment reason. After a few weeks of research, I quit all sugar and all pasta, bread, pastry etc and list 35 pounds in 3 months. I’m now in my late 40s and I’m in a better shape I’ve ever been - even in my 20s.
