Keep diversity in the income streams and try and balance them so you are not too dependent on any single one. It's tricky but is less stressful if you can keep balance.

Seems your best cost saving is working from home! That will change if you do your lease of a bakery. It will be a big bite out of your income!
i agree once you open a shop the costs will rocket and no guarntee of success either its a gamble
