Queen Victoria Street is my local coffee shop. The other thing that is great about Rosslyn is they are open at 6.30, when a LOT of Londoners actually get it. London starts early and they do too, which is great. Also, they also offer a small cup of either chilled still or chilled sparkling water, which is absolutely divine with their espresso. All round great model. QVS is a perfect place to watch the sun rise whilst sipping an espresso during the spring and summer months.
I went there in Summer in London Wall branch! So great! Just walk in - order - pay - get what I ordered... Easy! Coffee ice-creams were absolutely amazing! It's expensive but full of joy!

I'd argue high volume specialty coffee is 2.5 wave - you get specialty coffee but you lose the personal touch of getting served specialty coffee by your local barista
Very insightful and also accurate video. One of the best speciality coffee shops in London just based on the coffee, when you factor in the location, the pressure and the volume it is even more impressive.
Good concept and proven successful business model but the people who work there might not think the same See Dritan Alsea coffee in Germany. A true artisan coffee shop in similar fast business environment
Always curious to know more about how it is possible to secure real estate in those areas... It is not even a matter of being able to pay for the rent / repayments. It's really about how big your address / phone book is ...
Rosslyn Coffee is high-volume and it shows. I work on London Wall and I've been disappointed with each trip I've been to there. Roasting Party on Moorgate (across the street) is far better
i just don't support pushing productivity in coffee shops and trying to get as many coffees sold as quickly as possible - even if they are amazing. In my opinion, coffee shops should not be those stressful places where everybody is rushing. Maybe it is just a romantic idea, but would it not be way nicer to have more cafes that offer coffee instead of one where there is no ambiance, but just good coffee served by baristas pushed to their limits? These coffee shops just resemble an assembly line more than anything else and are emblematic of the fast-paced world we live in with little regard for the humans that work there and focus only on productivity and economic growth.
Finally someone points out the awful inhumanity of this concept. The business purports to be a marvel of efficiency (which I am sure it is), but what about those who work there. "There is never a time when you are not pulling a shot". What a disgusting grind, no pun intended. This type of establishment is more akin to an industrial farm for than a cafe.

I use these guys almost daily. When you're there it doesn't feel rushed. It's actually more calm than a standard coffee shop, they've reduced a lot of mental noise by removing tables etc, and there's a sense of community when you're all stood inside this small space waiting for a coffee. The background music is always tasteful, and I've never actually witnessed them shouting! Definitely give them a try.
The Irish co- owner describes walking into his coffee shop on a Thursday morning as akin to walking into a busy pub on a Friday night. No bloody thanks, sounds horrible first thing in the morning. Also, hope they are paying the 6 staff who do 1500 coffees a day a decent wage. Way the Aussie guy describes the system sounds like when I worked in fast food. Nothing speciality about it, assembly line coffee!
With these concepts of high volume are they even thinking about sustainability? There’s a lot of waste with these idea of mostly to go with no seating space.
Interesting 🤔 As you saw in the video, it’s a different setup to server specialty coffee to busy office workers in the City. It was our first “official” visit too but it’s mainly because we haven’t been to London past 5 years or so.
@@EuropeanCoffeeTripYou need to come up to the city I grew up in in the North of England, which is Manchester, which has a lot of good speciality coffeeshops now. Although I live in London now, every time I go back to Manchester, there is always a new speciality coffeeshop opening up.
I live in London, I can understand you as most of their locations are around Financial and office area mostly near Bank station so not area that normally visitors will pass around but their coffee are fab
Sounds and looks soulless and sterile. Hearing the guy talking about position 1-6 and those motivational buzzword business speak makes it look like call centre version of a cafe.
I used to work near the original rosslyn shop and gotta say they staff in there were incredibly friendly. Was always a highlight of my day popping in at lunchtime :)
They spent 0 seconds talking about the coffee beans 🙄, sorry this is not a specialty coffee store, it’s a Starbucks wanna be. I won’t be surprised if if the business is sold in a few years time.
Yeah, I know what you mean. You can actually have nice ceramic cups for both espresso drinks or filter coffee (as we did several times). Still, many people rush back to the office or to the meeting. It's the reality of areas like City of London. Suprisingly, we saw many people who found the time to enjoy brewed cup (with Marco SP9) based on the rotating menu of international roasters.
So now we know. Rosslyn is just like Blank St Coffee - they use autofroth and autofilter machines to make their coffee. Not 100% barista drinks. I feel cheated. Basically manned airport lounge coffee machines.
What defines 100% barista drink? It's a busy location, serving many cups of coffee to people they wants it, so we appreciate they utilised some technology rather then burn their baristas out. There are many repetitive baristas tasks that doesn't add value to the customer (like weighing coffee, tamping or steaming the milk) that we can delegate to machines. The smile and good chat with a person behind counter is invaluable and that's what matters (if quality levels are reached).
Well, you need to be well trained barista to fit in but I rarely see so optimistic and happy baristas as at Rosslyn. Working within the well thought structure has its benefits too. The team work was very strong.

Low Volume Omakase/Course Fine/Ultra Specialty Coffee = 4th Wave
Standard Specialty Coffee = 3rd Wave

I consider me self as coffee snobs, but ngl I visited London many times but never even heard or crossed this cafe once.
