This video is a great example of what my mom always told me, "No one is born knowing". If you want to have a cofffee shop but feel discourage, dont worry! These pros once started as a novice. You can work your way up!
Emi and Mathieu demonstrated exceptional professionalism and I can feel their love for coffee and their customer through the screen. Their bar production is second to none!
Incredible roasters! I love MAME so much. My friends, who usually don't drink coffee without milk, always drink MAME without milk when they visit me and ask what kind of incredible coffee I brewed. I am so glad to have discovered your coffee. Thank you for your work!
I love what there are doing, I went there many times (last time being yesterday) but I have do say that I was disapointed several times! First, Mathieu and Amy was never there and the people making filter probably unfortunately don't have the same skills. It was sometimes good, sometimes just "normal" for specialty coffee" but I must admit, I was never shoked as I was at Coffee Collective or La Cabra and others worldwide know coffe shops.

I think speciality coffee is missing special warm milk drinks that have some twist to them. I once tried a cortado with coconut milk and some rose flavour it cost way too much but it was so good. Just what I want, not a daily drink but something to try and experience
Filmed in March 2024 so yes, it’s a couple of months old (it takes time to edit such a video 😉). Good catch, they switched to Hario Switch and we filmed the recipe with Emi too. The technique is very similar though!

MAME has a very good coffee. My main problem with MAME is that they don’t launch new coffee (for espresso machines) so often.

Must be an old video. MAME haven’t been using the gina filter brewers for a few weeks now.
