There isn’t enough sugar in this recipe to taste. The sugar cuts the taste of the buttermilk. Also, I forgot to add that an egg is not necessary for good cornbread. It only gives the bread a cake texture.
I'm from Kentucky and we never put sugar in cornbread. My grandmother in Tennessee never put sugar in cornbread. I read a comment that said sugar cuts the taste of the buttermilk. You can't taste the buttermilk in the first place. The buttermilk helps keep your cornbread from getting too dry. I also lived in North Carolina for twenty two years and nobody I ever knew would put sugar in cornbread.
In the south a lot of people use buttermilk in cornbread but sugar is never used in cornbread. When you add sugar you are making cornbread muffins and that is the only time you add sugar. Normally it is cornbread that is made for meals.
That cornbread looks so good. I could eat the whole skillet with some butter. I make mine with buttermilk too. But I dont use the sugar. Now you got me wanting some. I may have to make a skillet tomorrow.
That is lovely cornbread. 💜 I also put a little sugar in mine. Then the next day I warm the leftovers and slice a piece, butter it really well and pour a little honey over it. Delicious with a cup of coffee.

She was born & raised in Louisville Mississippi & she always added sugar to her cornbread & that's how I've always made it & have taught my son's how to make it. Thank you for sharing your videos.
To all the naysayers, according to the Charlotte Observer, "Southern cornmeal was exclusively sweet white cornmeal until industrial milling came along in the early 20th century. After that time, mills used corn harvested before it was ripe. So the cornmeal was less sweet," making a little sugar a perfectly reasonable addition. I'll take it one step further: if you DON'T add sugar, you're making inauthentic cornbread. A teaspoon of sugar in modernday cornmeal would be just enough to make it taste as it should without making it taste like a dessert.
Love your videos, and I also add some sugar to my cornbread, not enough to make it sweet but it just needs it, like it needs some salt. I also fry hoe-cakes, and always add a pinch of sugar to those also. Thanks for sharing your stories, love those as much or more as your recipes, lol.

Here in Spokane, WA, we like our cornbread sweet!! In fact, I don’t care for unsweetened cornbread and I put enough sugar and honey in and on mine so it’s as sweet as a cake!! Mmm!! 😁

My grandmother always used Three Rivers cornmeal as well. And I agree, it’s the best corn meal there is. Like you say, stores just stopped selling it and it was nowhere to be found. UNTIL, I stopped at a SAV A LOT in another town very close to mine, and low and behold, THEY HAD IT! They still do. So I always go to that store just to buy my corn meal. I’d gladly send you a bag or drop it off to you somewhere. We come through your area every now and then. Most people I know never heard of Three Rivers, so it really tickled me to hear you mention it. It is indeed, the superior corn meal. Really enjoying your videos. God Bless!

I also used Three Rivers cornmeal and I was so disappointed when I couldn't find it anymore. Like you I now use White Lily. I was raised on cornbread without sugar. My daughter and two of my grown grandchildren live with me and they prefer sugar in cornbread so that is how I cook it. I love cornbread either way.
I always add an egg to my cornbread. Sometimes I add sugar sometimes I don’t. 1 tsp doesn’t change the taste much. If I use buttermilk, I add sugar. If I just use sweet milk, I usually don’t.
I agree with you about the sugar! I grew up with no sugar in cornbread, but i find a bit of sugar enhances the flavor. I still make mine from scratch. I grew up on white cornmeal, but i preger yellow.

Thank you for referring me back to this video on how to make cornbread ❤. I don’t have cornmeal, buttermilk, a cast iron skillet or the corn stick pan but did write it down as you made it. My daddy used to cook with cast iron so will see if I can find one of his skillets. My mom would never use them because she said they were too heavy for her and he was fussy about caring for them for some reason. As a child many years ago I remember him saying never to wash them with dish soap though don’t remember why. I’ve been very sick all week with a bad back and my husband and I have bad COVID so this recipe will have to wait till I feel better. How long do you leave the cornbread in the oven and know when it’s done? Do you test it like a cake using a toothpick? Thank you so much for referring me back to this. It sounds delicious ❤
I just happen to have a cornstick pan. I love the crust of cornbread. Get a quart of buttermilk. Martha White/Pillsbury/White Lily, any will do. But if you find Three Rivers Cornmea, it’s my favorite. Remember, if you run low on buttermilk, a tbsp of water will thin the mixture to pancake consistency. Experiment!
Well being new to your channel I wanted to say you are so right about sugar in cornbread. I LOVE CORNBREAD, in fact I eat it right up. Of course it’s best to me out of the oven nice warm and sweet. It’s like a cake and I eat it for breakfast with coffee by just heating it up in the microwave. I want to share my recipe with you and your fans and maybe you will try it as well. It’s very easy to make and I think you will like it. Cheers from Florida…Brian Sift 1 cup flour 3/4 cup sugar Sift 1 cup Cornmeal 2 Tsp baking powder 1/4 tsp salt Now mix all dry ingredients together with a fork Add one large egg room temperature Use hand mixer to mix by slowly adding 1- 1/4 cup of whole milk in three parts as you’re mixing it. Then add 3 tablespoons of melted butter and mix very well and let’s stand 10 minutes before you put it in the oven. Spray grease your pan set oven at 400° bake for 28 minutes

My Mom always made cornbread, crispy and in an iron skillet. It was my Daddy’s favorite alongside ham & beans and fried okra with a tall glass of ice cold buttermilk.

I once had the pleasure of chatting with Dedra Grizzard, the widow of the late great Lewis Grizzard - columnist, comedian, author of many books including : Kathy Sue Loudermilk I Love You, When my love returns from the ladies room will i be too old to care, & Elvis is dead and i don't feel so good myself, &many others -he also was a proud Georgia Bulldog , a lover of BBQ and a great American. As the plane too off the book would slide out to start reading. ;-) i have a huge collection of autographed books(hardbacks) by him and i have one big book autographed by Dedra and Lewis' manager,,,after Lewis passed away. I highly recommend it, surprised it was so expensive, it was 25.00 when i saw it but he has moved up in the world...mainly in independent films. i have a video on here i made years ago...its hard to believe how many years 😄you want to see it?

Just be sure to use self rising corn meal mix and flour. I made that mistake once. 😢 my hubby loves yellow cornbread so I really cheat and use jiffy mix.

@@langeblanc494 About 15-20 minutes. Depends on thickness of cornbread (I like about 1-1/4 to 1-1/2 inches thick). The bread will start browning on top. Remove from oven, flip bread over to a nice brown crust. If you don’t think it is quite done in the middle, place it back in oven 5-6 minutes. You will be able to tell. Once or twice experimenting and baking cornbread will become routine. You want your cornbread to be nice and brown on the bottom. Be sure and flip the bread. This keeps it crisp on the bottom which is now the ‘top’.
I can tell Pat that you know how to make good corn bread. My mother made her cornbread up mixing it from scratch with her hands using buttermilk, Crisco and a little tiny bit of sugar also. I can't cook like she did because she never wanted anybody in the kitchen with her.
You are asking the wrong person. I don’t follow the rules! Nowadays they say sweets are not what cause high blood sugar. Glad they said that because the next time I go shopping I’m buying ice cream and chocolate brownies. I quit taking Metformin. Sorry, but that’s how it is. I don’t trust Metformin. Don’t listen to me when it comes to medications. I hate taking pills.
I put a little sugar in my cornbread no more than a tablespoon...it takes away the bitterness. On the other hand I can't stand thick sweet cornbread cooked in Pyrex like the Yankees do. Cornbread in my opinion should be cooked in an hot iron skillet in a hot oven.

Scratch would have been when you couldn’t buy mixes that already had ingredients like salt, baking powder, etc. Today we buy cornmeal mixes in a pkg. If you like your cornbread to have a crust, you turn it over immediately. That way the moisture in the bottom of the skillet doesn’t make the crust soft. It is just better that way..
@@babydoe42 No. Egg isn’t needed. Gives cornbread a more cakelike texture and it crumbles more. BTW, a tsp of sugar merely keeps the cornbread from having a buttermilk taste. You cannot taste the sugar at all. Don’t be fooled by the ideas of the sugar.

South Carolinian here and my family has always added a tablespoon of sugar. I use Yelton's cornmeal.

I’m from Georgia and I like cornbread both ways but in Georgia well the south in general we never add sugar “ we call that Yankee cornbread “ lol my sweet grandmother always made it with buttermilk it was so fluffy and delicious anyways you are so talented, humorous and such a sweet lady! My Mom always made cornbread, crispy and in an iron skillet. It was my Daddy’s favorite alongside ham & beans and fried okra with a tall glass of ice cold buttermilk.

I once had the pleasure of chatting with Dedra Grizzard, the widow of the late great Lewis Grizzard - columnist, comedian, author of many books including : Kathy Sue Loudermilk I Love You, When my love returns from the ladies room will i be too old to care, & Elvis is dead and i don't feel so good myself, &many others -he also was a proud Georgia Bulldog , a lover of BBQ and a great American. (i loved Lewis) anyway Dedra was discussing cornbread and i mentioned that i loved "sweet cornbread"...she laughed and said Phillip !!! thats not cornbread, thats CAKE!!! well i still love sweet cornbread ;-)

@@chitchatwithgrannypat7900 Ive read most of his books, when i was in Alaska i had to fly a lot all over the state from Barrow at the tip top of the state all the way to Shemya which is a 2x4 mile island at the end of the aleutian chain and i'd always keep a Grizzard paperback in my jacket pocket and tell people if i crash you'll know what i was doing...reading a Lewis Grizzard book. As the plane too off the book would slide out to start reading. ;-) i have a huge collection of autographed books(hardbacks) by him and i have one big book autographed by Dedra and Lewis' manager,,,after Lewis passed away. Still miss him, im always wondering what Lewis would be saying today...i can imagine, but yeah. ;-)

@@chitchatwithgrannypat7900 Lewis passed away in 1994 from heart problems...it was his 5th heart surgery...you probably saw a show by Bill Oberst /jr...he is an actor from SC. I saw his show years ago and we developed an online friendship of sorts. I highly recommend it, surprised it was so expensive, it was 25.00 when i saw it but he has moved up in the world...mainly in independent films. i have a video on here i made years ago...its hard to believe how many years 😄you want to see it?

Yes, I always do. I never put egg in my cornbread. Egg gives it a cake like texture. You know how it goes, I do what Mom did!

Oven temperature 450 degrees. Use iron skillet if you have one.

@@langeblanc494 About 15-20 minutes. Depends on thickness of cornbread (I like about 1-1/4 to 1-1/2 inches thick). The bread will start browning on top. Remove from oven, flip bread over to a nice brown crust. If you don’t think it is quite done in the middle, place it back in oven 5-6 minutes. You will be able to tell. Once or twice experimenting and baking cornbread will become routine.
You want your cornbread to be nice and brown on the bottom.
Be sure and flip the bread. This keeps it crisp on the bottom which is now the ‘top’.

I can tell Pat that you know how to make good corn bread.
My mother made her cornbread up mixing it from scratch with her hands using buttermilk, Crisco and a little tiny bit of sugar also.
I can't cook like she did because she never wanted anybody in the kitchen with her.

You are asking the wrong person. I don’t follow the rules! Nowadays they say sweets are not what cause high blood sugar. Glad they said that because the next time I go shopping I’m buying ice cream and chocolate brownies. I quit taking Metformin. Sorry, but that’s how it is. I don’t trust Metformin. Don’t listen to me when it comes to medications. I hate taking pills.
I put a little sugar in my cornbread no more than a tablespoon...it takes away the bitterness. On the other hand I can't stand thick sweet cornbread cooked in Pyrex like the Yankees do. Cornbread in my opinion should be cooked in an hot iron skillet in a hot oven.
I use a tsp of sugar, but I also use an eight-inch iron skillet. There’s just Me to feed.

Scratch would have been when you couldn’t buy mixes that already had ingredients like salt, baking powder, etc. Today we buy cornmeal mixes in a pkg. If you like your cornbread to have a crust, you turn it over immediately. That way the moisture in the bottom of the skillet doesn’t make the crust soft. It is just better that way..

@@babydoe42 No. Egg isn’t needed. Gives cornbread a more cakelike texture and it crumbles more. BTW, a tsp of sugar merely keeps the cornbread from having a buttermilk taste. You cannot taste the sugar at all. Don’t be fooled by the ideas of the sugar.
