Did parties of 600 apps with this once I froze it and when it was defrosted just enough I did it on a meat slicer. Did all the plates, 2 of us, in no time.

I can do squash for something seasonal. I can even do the chestnuts. Beef? good (when cooked). Mustard dressing? alright I guess... But all of that together? seems exceptionally disgusting. This is the most ridiculous thing I've seen. Trying to sear herbs into raw beef that is carpaccio, is like taking fish and chips, but taking away the batter, and instead of chips you make mash, and serving it as fish and chips. If you really want to get a herb crust on the outside I would suggest calf curing the meat instead of doing that. The plate was also a sincere mess. Carpaccio is supposed to be elegant, rustic defeats the purpose.

Nope, it's raw. It's only very lightly seared on the outside; that heat doesn't penetrate further than a few millimetres. The inside is 100% raw-and delicious!
that has nothing to do with the original carpaccio and frankly it looks repulsive.you just ruined a perfect Italian traditional dish. and yes it is supposed to be RAW 100% RAW not even seared like in this video... terrible
