As a kid when I went to the cattle auctions there was a place you could buy burgers. That was the burgers they made. Such amazing burgers and memories. So not just American style, but rural Canada as well.

Man this takes me back to my first job at a diner! I used that butter roller daily. We also used to put a press on the patties to give it that crust like a smash burger. Great video!
I used to eat lunch at a little country store in Johns, Ms. named Martins. This burger was made on request you had to ask for a Bob's burger. They grilled the onions and caramelize them a little more than you did. We also had our choice of condiments at the table, mine was ketchup and mustard most days.
I used to work at a burger joint in Oklahoma that had one of those butter things, it was like a little mini game that we would play at work (which we shouldn't have) see how fast we could flick the buns off that into the toaster. It's a neat toy for sure.

Great looking burger. I remember Bob's Big Boy as a child growing up in San Diego. There used to be one on University Street. Also, Oscar's drive created the first version of the Big Mac(Ray Kroc stole the idea) if I am not mistaken.

My kind of burger. At in n out I always get the whole grilled onion for my burger. If only they had bacon. Bet this burger 🍔 of yours is just as good if not better than said place. This one has the diner heft for sure.
Suggestion for you, Greg, and for anyone else reading this. Try replacing relish in your burger sauce with a good hot giardiniera pepper mix. You can buy the relish or just pulse it in a food processor for a few seconds to get it more relish like. Makes an awesome burger sauce.
That's what I think of when I want a burger! I like 'em simple. I want to be able to taste the beef. Toppings usually are lettuce, tomato, mayo/sauce. Sometimes onion and/or pickles.
Looking great Greg. When I was a very young (under 10) I would visit family in Iowa and would always take a trip to the local Maid Rite. Are you familiar with that chain? Way different then any of the San Diego burger joints I otherwise grew up on. They use ground beef, but don't make it into patties.
You should do a lasagna burger: beef, semi-dried tomato ketchup with fresh oregano, bechamel cheese sauce, mozzarella and a parmesan cheese crisp for that umami hit. Maybe a bed of basil leaves. Buns could be a lighter, fluffier version of foccacia.

My Sheriff wouldn't let us have any more facial hair than a mustache. A bunch of us had extremely short hair and we were told to grow it out more because we looked like an intimidating group. I got a cast iron griddle that fits perfectly on my gas grill and it makes the best smash burgers since I can't do burgers in the house on my cast iron skillet with out all of the smoke alarms going off. So good!
Can you go back to reviewing your beers that you wash down your meal with? I was amazed with the amount of craft beers in San Diego when I visited from Aus. Cheers.
