I should tell you I've probably made this cake at least 5 times and every time I do everyone loves it! Although I did tweaked it a bit and instead of using water I substitute it for room temp/ cool coffee. The chocolate flavor just pops and I love how it doesn't have frosting. If I did make it for a special occasion I always just made it with ganache which matches well with the chocolate chips! Such a simple and fun cake! Can't thank you enough for the recipe!!!!!!
Using coffee is a great idea, since you're the using water anyway, and it goes so well with chocolate! I wonder what using a ginger or peppermint tea would do?
Up the cocoa to 1/2 cup, reduce the sugar to 3/4 and use turbinado, don't forget the coffee. I've been play with the recipe and it is much richer and less sickly.

@irenenergy - What sugar are you talking about? There's sugar in the batter (it's listed in the ingredients) & powdered (aka icing) sugar dusted on top at the end. There's no amount for the powdered sugar b/c there's no need to measure it; just use as much as you want. :)

going to make this again today!! somehow i forgot/messed up the oil measurement but my mom still really liked it. said it was super fudgey and delicious and she enjoyed the fact that it didnt have eggs. thanks again emmy for a great recipe :D
@PinkSander - Umm, not sure. The original recipe is baked in a 9" round pan for 25-30 min. so a 9" x 13" would probably be less. Just start checking for doneness w/a tooth pick after 15 min. & give it more time if it needs it. Good luck!
when you put chocolate chunks or something in a cake , it usually goes straight to the bottom.. Quick Tip: take the chocolate chunks and put it in flour and then add it to the mix it will evenly distribute throughout the cake.
I had these tonight and they were excellent! I used 1/3 cup can sugar so wasn't too sweet and I omitted the chocolate chips in favor of a simple chocolate frosting. Wonderful! The coffee really brings out the chocolate

The absolute best thing I have EVER put in a cake/cupcake is MeltyKiss chocolate. I don't know if you have ever tried it but it is Japanese chocolate that just melts in your mouth, I cut up the little cubes and use them instead of chocolate chips. It is SO GOOD. One day I think I might be brave and use the green tea flavored MeltyKiss, just to see how it goes. . .

I made this recipe just last night for my non-vegan family and it turned out fantastic!!! it was really chocolatey however and i didn't even use chocolate chips, i just used cocoa powder and it was so delicious. Thanx for the recipe!! :)
Made this and it was great! But I did have a problem while baking it, I baked it for half an hour on 180 degrees celsius, a crust had formed but the inside was still liquid. So I put in the oven for another fifteen minutes I think on 190 degrees. Asides from that it was the best cake I've ever made, and m=was a success at the family dinner! :D

I wanted to ask if you have ever considered using applesause and cut the sugar amount in half OR using maple syrup or something else instead of the white processed sugar?

Just made this today with Hershey´s milk chocolate bars and coffee instead of water (I have friends send me stuff like American candy too since I now live in Norway) and the cupcakes turned out delicious! I do something similar to this, except I do mine in a teacup in the microwave. Also, being diabetic, I use a sugar substitute and sugar-free chocolate chips. It comes out really well. I've never used vinegar for it, though.

I use the same recipe and it's fail safe, never flops! I don't really like icing either. I occasionally use marshmallow icing (the egg white and sugar syrup kind) if it's for a birthday since it comes out so nice and shiny.
Is there a huge difference between the Meiji Black and the Milk chocolate once it's baked into the cake? Or does it taste the same. I love both kinds of chocolate so it's hard to decide. =]

This really is the best chocolate cake ever.. Bake it for 17 minutes so it turns out nice and moist :)
I've only tried water and coffee (with excellent results), not sure about milk but let me know how it turns out if you use it.

Probably not. :( Most hot cocoa mix has powdered milk & sugar along with cocoa, so my guess is your cake would turn out too sweet & less chocolatey.

Oh My Gosh! I just made this but had to replace oil with avocado oil and use almond extract and goodness did it ever come out sooo good!
