I've made this twice now from your video. The second time I increased sugar from 250g to 300g and cocao from 65g to 100g and added 100g of walnuts. This makes a dense but extremely nice cake. Next time I've going to add some ginger pieces and maybe some spices. Really grateful for this.
I made half of this recipe today to test if it was good being modified to be me-friendly and it's super good! I used whole wheat flour instead of white and maple syrup instead of sugar and it worked great! Going to be making it tomorrow for my birthday and fill it up coconut cream :)

Exactly! the vinegar! Some recipes, replace the eggs with a ripe banana, or flaxseed egg (flaxseed meal with warm water) and other alternatives too but for me other things than this ones are too complicated, the ones I mention are really easy to work with and tasteless in the final product :)

I'm making this right now. Just came back to check the quantities. I'm a little nervous because other similar eggless, dairy-free cake recipes I've found subsequently (after starting this one in the kitchen) call for about half the amount of flour as well as baking soda (bicarbonate of soda) to react with the vinegar for the rise. I also found several that call for double the baking powder but then no vinegar or baking soda, and again half the flour. I will follow your recipe and post after the fact if this works as you show. *UPDATE* This cake has a reasonable flavor, although not terribly chocolatey, just sweet and clean (no aftertaste or sourness from the vinegar). The batter did not pour but was easily spreadable, reminding me very much of a thick Nutella. The texture of the cake itself is very chewy, not gooey like a brownie nor airy like a standard cake. It's very dense and chews more like a soft, sticky bread. I will try this again, but next time instead of baking powder, I will see how it works with baking soda.

You can replace the cocoa powder with flour and add a tabespoon of vanilla extract and the zest and juice of a lemon, and it will be delicious!let me know how you get on! xx

I'd serve it with vegan chocolate ganache, All good chocolate cakes need ganache. Avocado, cocoa powder and sugar, blend it all up, add vanilla if you want. I hate avocados but trust me you don't taste it and it just gives the right creamy texture.

Robinson Crusoe Most cakes are made with butter, eggs and sometimes milk, and as these are animal products, the cake would not be suitable for vegans. Sweet pastry can be made using dairy free spreads, like sunflower spread, instead of butter, so that everyone can enjoy your delicious treats, whether they are vegan or not! Hope this helps! xx

Any vinegar would be fine, as you can't taste it in the end product. I haven't tried malt vinegar though, it seems a little too strong. Apple cider vinegar is a great choice theresuga

i made this and followed the directions to the letter, as well as a dozen other vegan cake recipes and for the life of me it always comes out with an odd flavor and really gluey and wet as if it refuses to bake. sometimes they rise, but they still come out almost the texture of a cakey play-dough. can anyone suggest what may be going wrong. my ingredients are fresh, i always measure very carefully and check my oven temp. before i became vegan, i could bake a winning cake with my eyes closed and i have yet to bake anything edible since :-( any suggestions?
@@jelatinosa This may be the problem, actually. Kerryann's recipe calls for BAKING POWDER not BAKING SODA. In other recipes I have found online, they use baking soda in combination with vinegar to get a chemical reaction and the rise. I don't think baking powder and vinegar interact the same way.
Try using cake flour if you can find it. I find my vegan cakes come out especially soft and fluffy if I use cake flour. But it usually comes out great with regular flour as well. Maybe it's your oven or the altitude flattening your cake.

All the baking powder needs to rise is acid, which you can add by using lemon juice instead of vinegar.

it sounds like your baking soda might be old or non reactive
unfortunately no, it was new. i wish it was tho, that would have been an easy fix. lol

@@jelatinosa This may be the problem, actually. Kerryann's recipe calls for BAKING POWDER not BAKING SODA. In other recipes I have found online, they use baking soda in combination with vinegar to get a chemical reaction and the rise. I don't think baking powder and vinegar interact the same way.
Try using cake flour if you can find it. I find my vegan cakes come out especially soft and fluffy if I use cake flour. But it usually comes out great with regular flour as well. Maybe it's your oven or the altitude flattening your cake.
