Vegan Meatballs

  • I made some super-hearty meatballs - with no meat!
    This is a great preparation of Seitan with all the rich flavor of beef, but only made from plants.
    Ingredients and Instructions
    1 onion
    5 cloves of garlic
    1 stalk of celery
    mushrooms
    Chop these all finely in a food processor
    then sauté with olive oil, add salt and pepper to taste
    plus fennel seeds, oregano, basil or other Italian flavor herbs that you prefer.
    Stir in 1 cup of vegetable broth,
    1 cup of red wine
    1 cup of firm tofu, crumbled up into small bits
    1 tbsp of miso paste (if it's thick and dry-ish mix with a tiny bit of water so you don't get clumps of sauce that are super salty and miso-y
    3 table spoons of tomato puree from a can
    Once that has cooked down a bit, take 3/14 cups of vital wheat gluten and put it in a mixing bowl, then mix in the ingredients you've just cooked on the stove top.
    Mix for ten minutes on medium, or mix and knead very thoroughly by hand, to make sure you're creating a meat-like texture
    after 10 minutes of kneading or mixing, form the dough into meatballs, each about the size of a golf ball or so, they'll grow as they cook.
    first place the balls in a hot pan of olive oil so you can nicely brown the outsides (rotate them a few times to create a nice carmelized outside.
    Then place the balls in a baking dish and prepare the following sauce to pour over them:
    1 1/2 cup red wine
    1 1/2 cup vegetable broth
    1 can of crushed tomatoes
    bay leaf
    rosemary
    any other italian spice blend you prefer
    Pour this liquid over the meatballs, cover the dish with aluminum foil, and place in the over for 90 minutes at 350 F
    After baking they should have grown a bit and the liquid sauce should have baked of a bit. now they're ready to serve with pasta!

    were u peeling the mushrooms? i never saw that b4. anyway, looks delicious. and ambitious for a vegan fast food guy like myself. i'll have to work my way up to this. thanks!
