I am also pleased you got your coffee and chocolate at the end - and you only time travelled to the 17th century for both of those foods :)

I love following you! I live in the US but my mother is from Vienna. You eat like my family over there. I think if people in the US adopted your eating style they would become so much healthier! I actually ordered salt, mustard and bread flour from France to bake bread and cook with. Keep the videos coming!

I wonder if that is the inspiration for the Dr. Seuss book, Green Eggs and Ham? After struggling with the long term effects of having every covid variant, and trying every diet on the internet, I decided to loosely follow what you are doing. Loosely because ingredients are difficult to source in a small town. I feel so much better, I have energy, my appetite has returned, my taste buds and sense of smell are returning and I am able to do some household chores. I still have a way to go, but I feel I am on the right track now. I am eating grass fed organic beef, just found a good cheese from raw milk, just began to like yogurt and I am trying to find a good recipe for the bread.There are no bakeries in my area and the store bought kind have too many chemicals. I love your channel. And today's video was really interesting.

I am from Morocco, and the dinner dish is very very similar to recipes of tajines where we mix sour and sweet / fermented produce like pickled lemons (here it was vinegar) and dried fruits like raisins and apricots (here you used dried figs), generally go very well with meat (lamb and beef). It is surprising to notice that our ancestors developed an undeniable wisdom for what works with what for taste but also for health (as an indicator good digestion and good transit). My mom explained that mixing meat with dried or fermented fruits is the ultimate combo for a meal of champions! I hope you will share more of this book! the sourdough bread looks delish!

Verjuice has been gaining in popularity, here in Australia, for the past 15-20 years. If I need it for a recipe and do not have it, I substitute it with a white wine.
