Hi there, yes, you are absolutely right. Different brands of cream cheese have different consistency. You can soften it with a fork and if you notice it is still really hard, then you can add a little mayo or creme fraiche to get the right piping consistency. I hope this helps and I hope they still tasted good😊
My experience from this recipe: Cut the cucumbers thinner, about 1/8 inch. Peel first, all of the peel. Drain well as cucumbers are watery. Use onion, onion salt and perhaps a Paula Deen type seasoning salt in the cream cheese mixture. DO NOT USE cilantro, coriander or parsley. It adds nothing but another expense with no taste. Season shrimp very, very well even after removing and before placing on the cream cheese mix. Double the amount of onions. Use more Shiracha than suggested. Otherwise, it is pretty bland.

Also, I use salad cucumbers, which are not that watery, so I suppose it really depends on what kind of cucumbers you can get or decide to use. But your tip is good, in case they are really watery 😊 I'm really sad you highly recommend omitting the greens; I absolutely love the flavor coriander/parsley/dill give to any dish you add them to. I always suggest adjusting seasoning to your own taste, but I would also like to say that everyone has very different tastes, and what can be bland for someone is not necessarily bland for another person, as well as what is enough seasoning for someone can be way too much for someone else. Therefore, I will say it again: please taste first and adjust to your own preferences.
