    White Beans with rice and spinach -
    Saute White beans, rice and lots of spinach in a pan (use a little veggie broth to saute, no oil). Once everything is soft and combined, sprinkle in nutritional yeast (I used about 3 TBSP) and low sodium soy sauce (1 - 2 TBSP), mix well and you're done!

      I feel the same way about zucchini spirals (zoodles) in place of pasta. I’d much rather just eat corn, lentil or even whole wheat pasta!

      Thankyou!! I have just started to try and eat vegan..it is a VERY hard transition because it is hard for me to find recipes that taste good and if they dont it is very hard to eat. I will try this and your other recipes. In dire need to lose weight! Alot!

    Hello, I am only 1 1/2 weeks into the plant based diet, I have read Chef AJ's book, Volumetrics and now I will be starting to read the Starch Solution that you recommended. This is making a lot of sense to me. I am EATING TONS of potatoes and beans. I was afraid to eat rice at first, lol, you know how we are all brought up to believe it's the enemy! NOW I base my meals around mainly these three starches and add 1 or 2 cups of veggies and 1 cup of fruit. I MUST say YOU ARE ALL right. I am feeling SO SATISFIED and healthy and this is only 1 1/2 weeks in! The weight is coming off slow, but the health benefits, I am losing so MUCH NASTY belly FAT!! Hurray for VEGGIES, FRUIT and STARCH! I so far, do not miss meat, which is funny because we use to all base our meals around it. So it's becoming easier it eat this way with THESE videos YOU and CHEF AJ post. Helping us make yummy food to be able to STICK to this WAY of eating is what will help the MOST.

    Omg!! Boil 1 1/2c water with a chopped up large potato with red lentils. Mash it all together when done - add white vinegar and dill and top it with pumpkin seeds 💕 (it’s based on a skordalia but I leave out the oil)

    LOL! I'm eating beans/lentils in my post-workout breakfast grain bowl as I watch this (topped with sweet potato "pudding"). Beans are also fabulous as a "binder" in flatbreads and sweet treats like simple oat "cookies" or fruit-sweetened "brownies!"

    You got me so excited for potatoes 😍 I habe been rice and pasta heavy since it was easier but now experimenting with oats and potato. By the way purple sweet potato tastes amazing by itself with just salt and cinnamon 😍 I struggle with orange sweet potatoes not being sweet enough without sugar but the purple ones need no sugar. I also used to not like beans and ate only since my husband likes them. Now I am in love n trying different types. There's a million ways to have beans and rice. By the way try cooking beans with some garlic, onion citantro paste called "sofrito", tomate paste, garlic salt, cumin, green olives and butternut squash. 😍😍🍲 It's pretty much the healthy version of puertorican "habichuelas guisadas" or stewed beans. I change up the bean and it's a different meal everytime. Also mix in fresh cilantro when your rice is cooked. Learned that from chipotle 😂 makes such a huge difference.

    I’m trying to transition to this lifestyle for my health and to lose 30 pounds. Just had my fourth child and I’m almost 40 so the weight doesn’t want to go easily. Thank you for your videos! I always look forward to them and appreciate the simple approach. I’m already horrible at meal planning in general so I’m trying to get better at it and do this for myself in the process.     I agree with your choices I also love making a lunch of oil free french fries with a sesame bun and a vegetable burger or a lean chicken breaded patty I add onions ketchup mustard onions and ketchup on the fries it fills me for many hours always a large green saled for finner

    Your recipes look so yummy! I am trying to do my research and collect some simple recipes before switching over to plant based.     I had hair similar to yours and I started washing it in cold water. Its not as coarse/dried out anymore. Thanks for sharing this video! I am changing up my diet and this was helpful.

This really works for you and you look like you feel amazing, Praying I will have a similar result. I have more to lose but I know it’s just going to be so much healthier for me to eat this way. I am healing my body not getting skinny!!! Did you have to do anything to help with gas or bloating when you first started?

      Thank you so much. Just stay focused on healing and you’ll get there. As far as the gas, gas is a good thing. It means your gut is working and doing it’s job 😀 it’ll even out eventually.

    This was a great video!! How do you usually cook the frozen broccoli? The same way you would do fresh broccoli? Does the frozen turn out mushy?

      Thank you so much. I usually cook it in my instant pot. It’s usually not mushy when I cook it for 2 minutes, 3 or more it is for sure. Sometimes I also put it in the microwave for 5 - 7 minutes. A pot too is always great if you’re making a rice dish

    I batch cook rice or quinoa in the pressure cooker and portion it out into baggies and throw it in the freezer. I think I could live on rice and beans. 😊

    Just a note about beans. For physical reasons I can no longer shop in a store. So I am at the mercy of the store and what I can order online and have delivered. I live in a big city and only one grocery store carries low sodium beans online. That is black beans at double the price of a regular can. So my solution is to rinse the beans very well after opening the can. I realize some sodium has been absorbed by the beans and cannot be rinsed off so I never add salt to any dishes I make with canned beans.

      I love to just bake in the over with lots of seasoning and adding my yummy low fat cheese sauce helps with the flavor so much. If you don’t want that, taco sauce on top is yummy, hummus, etc

    My favorite item ever is the happy farms chorizo crumbles.
    I add feta cheese,onions and cilantro and corn tortillas and it's pretty much my favorite meal ever lol.

      It’s chickpeas, rice, any veggies, nutritional yeast and soy sauce. Use some of the chickpea juice if it’s a no sodium can. If not use a little veggie broth

    Oooo i need lentils...got my chickpeas boiling...sweet potatoe baking...wild rice in the rice cooker...and i got my victorian vegan alfredo sauce roasting with garlic and cherry tomatoes...its really hard though because I have to watch my carbs and fats

      Puertorican here. I have survived this easily with rice and beans. Recently I have been adding chopped butternut squash into my beans 😍 love! So half my plate is white rice and stewed beans and the other half nonstarch veggie like broccoli and salad. I am getting stuffed!

    Have you read Dr Fuhrmans book ,he really bummed me out about rice .i do still eat some a few times a week trying to find a company that grows rice differently some say California rice but idk

      Yes I have and I totally respect his view. However, I don’t fully agree and I did his method about 10 years ago and it wasn’t sustainable for me at all. I find Dr McDougals beliefs much better for me. Both are fantastic ways to live though. Just depends on what works for you.

    My staples are:
    1. Garlic
    2. Frozen blueberries
    3. Oats (Haferflocken)
    4. Beans
    5. Chopped tomatoes
    6. Whole spelt noodles
    7. Potatoes (love the taste of sweet potatoes but they are expensive here because it needs being imported)
    8. Rice (trying to convert to brown but right now we eat lots of sushi rice and basmati rice)
    9. Soymilk, tofu, thempeh, edamame
    Reasons I still am 25 kg overweight....
    Too much nuts, oil, faux meats, takeout, sugary snacks, chocolate, sweets and Chips. I know it but it's SOOOOOOO hard to stop!

    Hi!!! Love your videos. Do you squeeze vegan chocolate into your diet at all? That’s my Achilles heel. I’ve been vegan for a long time and trying to lose weight now and doing a lot of what you are doing. But my problem is my sweet tooth.
