Why are you taking a bit of the coffee grounds out every time you dose the coffee?
✨ The coffee recipe requires 23gr dose of the coffee ground, and most of the time, the grinder is being inaccurate, either giving me too much or too little, so I have to scoop it out :)

How to find a Barista work in Australia if I’m from another country?
✨ You have to obtain a visa that allows you to come, stay & work in here first, then you can apply for a Barista job. Most people from other countries (I was too) use Work & Holiday Visa.

Yass!!! Finally, see new espresso machine dan puqpress. At my place, single origin = Aceh Gayo, only for black coffee and people like it. But for white im using full arabica blend Bali-malabar. and so many people enjoy Coffee filter V60 too in here, I think people have different taste for the coffee. Laura… learned so much about your process… I like your espresso machine with built in timer, the way you measure your beans for accuracy before putting it into the portafilter... how you can let the milk steam by itself so you can do other tasks... just amazing. Thanks so much - I will incorporate some of your ideas when I do espresso.

Can definitely understand when you have to turn a customer away first thing in the morning. I start work at 6.30 and we don’t ‘open’ until 7. So we’re given 30 minutes to take the furniture out, set up the till, stock the cabinet, flush the machine and get cutlery prepped. That’s shared for 2 people - 1 does the cabinet and till and I do the furniture.
It seems like you have a fair bit to do for your routine. It is disheartening to turn away a customer. We get it, they’re somewhat cranky bc it’s early in the morning and they want coffee. I didn’t feel comfortable when I first had to tell a customer that we’re not opened even though some of us are there working. So what, you lose a customer. You lose a sale. It doesn’t matter too much. Focus on what matters, which is setting up the cafe. That, to me, is more important

Omg, your story, I learnt my lesson too. I felt bad refusing customer. I made one coffee and it was like ppl from no where showing up 🤣 I got smashed, and hadnt finised the pre-opening. I now only take orders when I finished my pre-opening.
I saw another video you said you may prefer the ginder by weight. Maybe look at the Fiorenzato, they have some, but the build in scale is very sensitive. Our shop could use it because we 're open area and sometimes it gets very windy.

hey laura, I don’t know much about single origin or batch brew options. maybe set up a chalk sign at the front of the cafe promoting it? “ask us about our single origin options!” or something like that?
We have a giant display for our coffee info on the wall, I guess not many people are paying attention to it though :)
