If your kids like beans I always use them to extend the ‘full’ feeling after a meal.eg I would have puréed a cup of cannellini beans and disguised them in the sauce.It’s such a cheap and filling and healthy way of extending food but it only works if kids like beans.I would also possibly have mashed a cup of beans into the potatoes.
Fantastic food. You are so right about getting every bit of flavour in a meal to make it tastier and cheaper. I just used a large handful of leftover pork roast in a fridge dump soup and used the roast pan scrapings to make stock for it. It was so tasty. Fed 6 adults for a few dollars. Is pork cheap where you are ? Last few weeks lamb roasts were $9 kg , now pork is . We stretch it right out ,so we can enjoy a small amount almost daily. Tomorrow is meat free night though. Pork is this week but I'm doing a pantry challenge. I might make an exception to buy it for next week
