Black Daal - Dal Makhani Recipe - Dishoom Inspired

  • In this video, we make Black Daal, inspired from Dishoom’s cookbook recipe.
    *Ingredients: (Serves 3-4)*
    1. 300g Black Urad Daal
    2. Spices
    1. 2/3 tsp chilli powder
    2. 1/3 tsp garam masala
    3. 2 tsp salt
    3. 12g Ginger
    4. 12 g Garlic (5-6 cloves)
    5. 75g tomato puree
    6. 90g butter
    7. 90ml double cream
    Both cream and butter can be replaces with yogurt or skipped if want to keep the daal healthy or vegan.

    Did anyone make this??? Every Indian chef I’ve viewed refers to pressure cooker and amount of whistles. To those asking you can use split urad dal to lesson the cook time of the black gram. Pressure cooking isn’t necessary but whole urad dal can take hours to cook to tender. Although I’m use to browning my spices including the tomato purée I will try this simple recipe before commenting more. Thank you for sharing.

    Hi ! New Zealand here. I absolutely love all kinds of Daal. Unfortunately, I do not have a pressure cooker, so I presume it will take longer to cook. Is there another type of daal I canu use for this please?

      Hi Russ 👋 you can still cook Urad daal in a regular pot by boiling it, make sure to soak the dal for at least 1-2 hrs before you plan to cook it. This will allow it to become softer. To cook in a pot, use a ratio of 2:1 for water to dal. Once the water comes to a boil, lower the flame and allow it to simmer until it reaches the desired consistency. You will know it’s cooked if it’s easy to mash between fingers.😊
      I don’t recommend using another type of daal as it won’t taste like the traditional daal makhani
