    I am Sri Lankan and one way i looove dhal is by boiling dhal till the water evaporates and then stir-frying it with a blended mixture of coconut, onion, garlic, ginger, salt, pepper, turmeric, green chilli and chill powder. Finished off with a squeeze of lime. We call it Parippu mallum.

    I love dal makhni all variations. My childhood memory of Delhi is eating it with roomali roti and hot jeera rice or steamy veg pulav with lots of ghee ofcourse! :)

    Dal is one of my favorite things to make in the pressure cooker - such a timesaver. I usually make it with yellow or red lentils. And it isn’t complete without rice and naan or chapati.
    I've wanted to try Dishoom for so long, but it looks like travel is out of the question for a few years. At least their gorgeous cookbook will be the next best thing. Thanks so much for this wonderful series.

    My favorite meal when I eat out or travel to India is dal makhani!

    Dal Makhani is my older son's favorite Indian food. You make it look easy. No more excuses, I'm going to make him learn to cook it.
    We usually have rice with dal, but dipping bread into it is good too.

    Na'an. It is my favorite accompaniment to dal, though I must confess last night in a pinch I plated it with Late July quinoa and corn chips. They are so delicate due to the quinoa, and apparently light corn flavor compliments dal well.

    just wanted to say thanks for cooking this - I made it from the Dishoom cookbook today and remembered you saying you would increase the spices, which gave me the incentive to do so and it went from a bit "meh" to really really satisfying. i love watching you cook - it really helps me with cooking technique (heat control, stirring, etc).

    Hi chetna, I love black dal which I first discovered at Dishoom! I really want to make it but I have a question for you. How long is six whistles in minutes? My pressure cooker doesn't do whistles it just steams gently the whole time. My favourite things to eat with dal are spiced green beans and brown rice 😋.

    honestly, a spoon. I adore the flavor of the different dals. urad, moong, toor, masoor, chana, etc. I enjoy rice or roti with veggies instead.

    Can't wait to make this! I've never been a fan of black dal but this recipe is making me want to try it again. My husband loves black dal so I'm excited to make it for him. And of course, he loves dal chawal with dahi so always, always rice and curd. Thanks so much for this video, Chetna!!!

    I always prefer some sort of bread with dahl as the texture is more chewy. Had dahl for lunch with left over foccacia, home made from last night. Really good.

    Daal and a chapati and I'm in heaven. Just bought Dishoom as it was on sale on Amazon. Making this daal as we speak for Christmas in two days. I've already made ground chicken Korma meatballs and sauce, made Keema yesterday, and an eggplant dish I haven't decided upon yet for tomorrow. My daughter is flying in from Los Angeles with my grandson and they wanted an Indian feast. My mom was from Bombay and I have a lot of memories of this wonderful place. I don't care for the new name of Mumbai. At 72 y.o. I can only just manage cooking one entree per day for a dinner.

    After that thickened ... *wow* ... beautifully creamy! I never have bread/rice/etc in the house, but always top my lentils with some store bought fried onions to give crunch and flavour.

    Hi Chetna! I ordered my whole urid online and it just came - so excited to make this recipe! I also made an impulse purchase of Sanchar powder - I thought it was just a type of salt. But now I’m worried after reading about it - it smells like sulphur?! Would you please consider doing a video that explains the difference in spices? Thank you! :)

    I generally go for some flatbread / naan with this type of dish. For me the point is maybe a bit less carbs as this can be quite filling by itself. That's a perfect dinner for me during the week as I can just grab a portion from the freezer and heat it up.
    That's what I did with your chickpea / spinach curry stew from your recent video, which quite delicious indeed.
    I think the cooking time is here is a good bit of information. I had some black lentils a while ago and I couldn't manage to get them quite right. 3-4 hours seems to be the thing to try. In general, it's quite hard for me to tell all the different dals, their cooking times, and their uses apart as they seem to each have their own purpose. I found a pakistani supermarket near where I live with a decent selection of dals, spices and other essentials.
    Another thing I was wondering about is the wide variety of gara massala, which I think pretty much translates as "spice mix". It seems to be that they can be all over the place in terms of ingredients and I always wonder what to look for here. Also, I often see you and other indian chefs add powdered spices that are typically already in the gara massala. So, it seems that there are a few things assumed about what is in there and how much of it is there.

    Hi Chetna, I really want to cook this dal in a pressure cooker. However mine is quite new and it doesn't operate using the whistle system, it just hisses a little during the cooking time. You say this dal needs "six whistles", so can you please tell me how long that is? Thanks, Rafe

    Looks lovely! I'd definitely go for naan or some other bread to wipe round and mop up all the sauce.
    Question: I've frequently come across the whistle timing instructions on the Internet for Indian pressure cookers but unfortunately that doesn't carry over to modern Western pressure cookers. Would it be possible to give timings for how long the pressure cooker is at full pressure? (Having never seen an Indian pressure cooker in operation, I don't entirely understand how counting 'whistles' can be consistent between different pressure cookers, quantities of ingredients and heat sources either). A table of whistles to time would be even more useful. Thanks!

      You will find english subtitles there
      And the basic trick to cooking something in the pressure cooker is that after you have turned off the flame for the pressure cooker it should be given enough time to cool down and it should have no more pressure in it that is "the lid should fall on its own when you unlatch it"
      If you want a Traditional Pressure cooker either go with the Hawkins Aluminium classic or the futura ones.

      @@judimoss3250 It can take around 7-12 mins on high flame to get the first whistle in an Indian pressure cooker. next whistles after around 1 min time

    OMIGOSH! made this today (had to special order the black lentils and was heartbroken when I scorched the first attempt in the pressure cooker) and it was superb. I looked up how long is one 'whistle' and Google said about 10 mins. Do you think that's about right? I always use a pressure cooker (my mistake today is that I didn't put enough water). So enjoying you RUclips recipes.

    Hi Chetna, thanks for showing this recipe, it is easy for me to cook a large batch and freeze some for a quick meal. I did add some salt as well, it is real easy to adjust to your personal taste. A very nice dish indeed.

      @@juljos9343 It would change the taste totally. you can add thicken the milk and add it instead or even milk powder would be ok but dissolved in water first to form a thick paste (a hack that works for me)

    Omgggg Chetna!! That dal looks so tempting, I can literally hear my stomach crying for it! 😭 My favourite thing to eat with Dal Makhni is Jeera Rice hehe. Pretty basic, I know, but it accentuates the richness of the dal and is a perfect accompaniment. 😍 I'm craving it so much now, oof. 😭😍
    I've got one question, and it'd be great if you could help me. Do you think I can replace the urad with masoor? And how many whistles would masoor dal take, if I can use it, of course.

      Well you can replace with masoor but then it wont be the dal makhani or black dal and the flavour of that dal is totally different. Whole masoor cooks much quicker so maybe 3 whistles.

    That looks like one of those recipes you start in the morning if you want it for lunch. Which is a wonderful way to start your day with all those delicious smells coming from the kitchen. So now I have to go and get me some of those Black Lentils not to be confused with beluga lentils which are also black, I believe you call them URAD lentils (whole). If my butter has salt in it I could use less additional salt added to recipe, right ? What is the white liquid you added at the end? Is it cream ?

    One thing I’m curious about is
    Did you added raw ginger garlic and tomato purée directly to dal without pre cooking them (tadka)? and I prefer to eat rice with black lentils

    Answer to your question Chetna: I would very much like to have a special naan stuffed with Panir and caramelized nion with this dish. I think that would make it very regal dish.

My Mom never cooked with a pressure cooker, so I was intimidated by them, until I bought an Instant Pot. So....six whistles!?!? Any clue how many minutes would that be for an electric cooker?
