    Funny thing, I watched, cooked and ate some Japanese dishes, but for the first time I see burdock. Here in Europe it's considered to be a weed, mostly. Burdock oil is good for hair. Parts of plants are known as folk medicine and some wild herb books do mention you can eat the root or prepare young stalks like asparagus, but I never actually saw it here to be eaten and as I dug up a root and cooked it, well, I guess it was old, because it was woody and not that nice. 😅 And even young stalks were pretty stringy and tasted very grassy. Seeing it being used so casually makes me kinda happy. Maybe I'll give it a second try, look for young roots and cook them or will make the salad. 👀

    Can you please make a video about side dishes that also could count as a meal when paired with rice alone ? Like the third and fourth side dish in this video, they could easily be the main source of protein in a meal yet are so simple and you could make two of them and add them in a bento for variety

    Great video, I just found your channel and love it so far!
    I love Japanese food, but it seems like it takes so long to make everything! Maybe you could do some videos of '30 minute Japanese meals' or '15 minute Japanese breakfasts' etc to show us how it can be done in a short time? 😊

      By the way, especially in the side dish video here, most of the recipes take less than 15 minutes or 30 minutes I think! (Tofu salad one needs time to drain water though...)
      So, please try to make them some time😊

    Simple and fully well done side dishes.
    I tend to not like bacon, eggplant this time looks like cooked sweet potato.
    Knew first time spinach and corn together cause good blend. The reason I like yellow corn steamed, some friends called me eating way of grandma.

      Konjac is made from konjac yam. You grate it and harden it with some coagulant (e.g. sodium carbonate).

      @@JapaneseCookingChannel I have tasted Tofu Sallad - really good with Japanese rice cooking by myself of today. Next month I will visit my dauther´s family, all of them eat Vegan Food. So I will cook some of these recipes for them. My grandson likes Tofu and soy sauce. He sometimes can eat only cooked rice and Kikoman soysauce. He is 2 years and 7 months. I called him: Soy sauce boy :-)

      Here in Texas, our state wide grocery chain (HEB) has always sold fresh spinach bunches (currently $1.64 a bunch) along with pound bags of frozen whole leaf (currently $1.75). I'm Japanese-American and fondly remember my mom blanching fresh spinach from HEB, squeezing out the water and pouring soy sauce over it along with a pinch of red pepper flakes. It makes a quick and tasty side dish that I still make.

      Sake can be used to add sweetness and richness to dishes, but if you don't want to use alcohol, please just skip it. I think the taste will be fine even without sake. Or I would say adding just a pinch of sugar will be good substitute if it's fine for you!

    Can you also add if possible to keep in fridge, how many days, and how to reheat (or no need to)?

      You can keep all of them in fridge, and probably they should be eaten within 2-3 days.
      The burdock salad, cabbage salad, tofu salad, and egg&tomato one shouldn't be reheated. But you can do for others!

    how long does the side dish last in fridge? usually how many side dish do you eat at once, do you just eat the side dish with rice, or usually also with a main dish?

      It is best to eat up as much as possible within 2-3 days.
      If you want them to last longer, you can freeze them, but the texture of the vegetables will be much worse.
      Yes, we often eat the side dish with rice. Also, it becomes good snack with drink such as beer :) You don't have to make main dish, it's totally up to you!

      Once seasoned with sake, soy sauce and ginger, it can be baked immediately. (If you have a time, maybe it's better to wait for 5 minutes.)
      Once miso is added to the pan, stir-fry until miso is dissolved. When the ingredients are cooked and well mixed, it is okay to turn off the heat.

      【Ingredients for 2 servings】
      Cabbage 7oz (200g)
      Carrot 1oz (30g)
      Corn 1oz (30g)
      Japanese mayonnaise 3tbsp
      Rice vinegar 1tbsp
      Sugar 2tsp
      A pinch of Salt and pepper
      【Direction】
      Please shred cabbage and carrot. Soak them in salt water, then drain water and pat dry them with paper towel well. Finally, season them with mayonnaise, vinegar, and sugar. Add salt and pepper as needed.

    Are Japanese side dishes made in single meal format only, or can you make some of these in larger batches for weekly meal prep? I try to only do one or two big cooks a week, as I have chronic fatigue and don't have the energy to fix many dishes a day.

    It would be very helpful if you could say which dishes are eaten hot and which are eaten cold. I don't understand how Asian and Indian chefs can prepare so many dishes and have them on the table all at once. How do they keep them hot?

      I would say the side dish made with meat or sausage should be eaten after you warm them up. But, besides these, they can be eaten cold.
