Instant pot pressure cook - 8 minutes
Ingredients
Oil
1 Pound of ground beef
5 cups of water
1 EGG
2 Roma tomatoes
3 Medium potatoes
1 carrots2
Small zucchini
1/2 medium onion
Small bunch of Cilantro
1 Anaheim pepper
1 Garlic clove
1 Green onion
3 Tbsp AP flour or 2 Tbsp rice
4 Tbsp Natural Chicken bouillon
1 Tbsp Tomato Sauce
1 Tsp cumin
1 Tsp Black Pepper
1 Tsp salt

You can easily meal prep this recipe by preparing your ingredients the night before.
You can also freeze the meatballs- Defrost the night before in the fridge and prep ingredients the day of for an easy meal.

I was shopping around for a Instant Pot. In my search and research when reading the details of the material of the Instant Pots I noticed a warning sign stating these appliances can bleed lead and other possible harmful chemicals. I changed my mind and am shopping for crock pot/ pressure slow cooker instead. Speed and convenience come with a cost or price.
This is another one for the files and a "must try next"!

I haven't made this in a minute, I'm about to go get the ingredients now. I use half beef half chorizo in my meatballs then sear them in the pot and scrape up the good stuff on the bottom with the oil and veggies. So good.
