I have found this to be true the different ways of cooking a low glycemic food changes the glycemic response or ie the sugar spikes. Cabbage is a good example, if I boil it I have a very low response. If I fry it and it caramelizes I have a higher sugar Spike response. I've been practicing the keto diet or lifestyle for two years and have successfully reverse diabetes and lost over 116 lb and place myself in my BMI classification successfully without any adverse effects. Tracking your blood sugar and a food diary of everything you eat will help you mitigate those sugar spikes from the different foods through self experimentation of what will or will not cause a spike. Losing weight will make you healthier no matter what diet you eat but the ketogenic diet is not healthy. It has way too much fat. Your life will be shorter and less healthy than it otherwise could be if you continue eating that way. A low fat diet with lots of fruits and vegetables including "starchy" vegetables will give you the best chance to live a long and healthy life. Google "KETO MORTALITY".

We do have to acknowledge the marketing struggle of educating the masses in picking the right foods or diet. Not many are willing to go through understanding the delicate intricacies. Therefore I feel that a simplified explanation is justified as a starting point. To simplify things, we are educated to eat low GI foods, and practice eating in moderation. I guess, people often forget to practice the “moderation” part of it. 😂

This is also true of combining low GI food like making a Greek salad. Greek salad is made up of all low glycemic vegetables all around a GI of 7. Combine 6 low glycemic vegetables now you have a total GI of 42. So if one were sit down and eat the whole large salad they would raise the blood sugar substantially. As i found out. I intend to buy a continuous glucose monitor and try to figure out the optimum level of carbs and their glycemic response to try to keep my blood sugar level more of a long flatter curve than a spike or a big bell curve. It seems to me that would be optimum for digestion, metabolism and health in general. I do not think one can eat foods like rice, potatoes and most fruit, even when combined with a meal and not have a spike in blood sugar. I quit eating all sugar, starch, grains and fruit 2 months ago and want to figure out how different foods effect blood sugar and then structure my diet accordingly. I was recently told i am boarder line type 2 diabetic, high blood pressure and 30 lbs over weight so i am trying to get to an optimum weight that i can maintain as well as i have added an hour of exercise daily. I have went from 200 lbs down to 175 on a low glycemic type diet but when i reach my goal of around 170 i want to figure out how to maintain that weight by figuring out how to keep my blood sugar levels optimal.
No its not, because foods that are higher on GL but have fiber slows or prevents the digestion because soluable and insoluable fiber forms a gel that blocks those sugars from being absorbed in your intestines. So the actual glucose response index is more important, since that would indicate how much sugar actually entered the blood stream.
My respect for your mission to educate. I have humble suggestion - please speak slower and break up your delivery with punctuation. It may be my own problem finding it difficult to sustain a listening ear when the train of your delivery runs like a long long train that never ends. I can't listen anymore after a while no matter how interesting I think it is.
