    You've sold me on your adventures Lockwoods. Glad all of you enjoyed some of the provinces up North. I married into a Filipino family who's from Sta Cruz Mexico Pampanga. I know all about how awesome the food is up there. I've been to the PI four times so far and have enjoyed my visits there every time. Most of my wife's immediate family have already come to the states, but we still have lots of family in Pampanga. Can all of you say MANYAMAN!!! Well all of you can because it is justified with what you all had to try in San Fernando. Great video!

    Pampanga IS where sisig originated. The province protects the integrity of sisig. The original dish does not have fried egg, so all the Pampanga restaurants that serve it do not have fried egg on it.
    My late mom was from Pampanga, and she was a very good cook. ❤

      Good to know! We just had sisig in Makati and it had egg in it (and mayo on the side). Very different. We also just had oyster sisig this week 👍🏼

    I am a new subscriber, been binge watching your videos from the very beginning. I enjoy watching you.
    Sinigang is tangy and sour but we doesn't actually use vinegar in it. We use various ingredients that brings the sour taste, there is sinigang sa sampalok (tamarind which is the most common), sinigang sa bayabas (guava), sinigang sa pakwan (watermelon which is rare and uncommon), sinigang sa pinya (pineapple another variation that is rare and uncommon), sinigang sa miso,, sinigang sa kamias (bilimbi), and tomatoes also adds up to the sour flavor.

    Yeah, Sisig can vary. As a Filipino who lived in The Philippines and here in California. I never had the same sisig twice. Original Sisig was just Pork Face/Mask, but it can be found to be made with all parts of the pig or Chicken now. Personally I like tuna Sisig.

    Aling Lucing is the creator of Sisig from a burnt dish to a little bit of tweaking to not let the food go to waste to the creation of Sisig. It's like how to fail and succeed story.
    Also sinigang is mostly tamarind base, but others use kamias or tomato and other varieties of veg or fruit to make it sour like lemon, but not to vinegar its another dish called paksiw if you use vinegar.

    You know, you could very well make caldereta with beef! aside from the meat, you just need carrots, potatoes, plain tomato sauce, garlic, onions, and (very important) liver spread (liver paste seasoned for breadspread; you could try plain liver paste, but taste will differ). optionals include bell peppers and sausages. Sautee the garlic, then the onions, then carrots, then potatoes, then meat, then add tomato sauce, then liver spread. You might want to boil the beef off for three hours before cooking though just to get it soft.
    I've never liked sinigang, simply because my grandmother insists we eat the vegetables. But I'm glad you like the sisig!
    I hope I can run into you guys at BGC one day...

    I just bumped into one of your videos here on YT while browsing randomly. I didn't notice that I almost watched all of your uploaded videos. Love your videos guys. Oh btw, we don't put lime or Calamansi in Sinigang very often, instead, we use Tamarind to make a sour flavor. Welcome to Pampanga. My home town! You won't believe this, I haven't tried their authentic sisig, cause I grew up in Manila. But I will try it soon.
    PS: I can tell the crispy pata they served you are not fresh from the butcher. Looks like it has been frozen for a couple of days which is why it's no longer crispy than what you and we expected. :D

    Phil is actually right when it comes to Sisig there are different versions of it but the original one will always be pig face :D
    Sisig is yummier if eaten with Garlic rice...and you can make it crunchier by letting it cook a bit in the sizzling plate a little bit longer before you mix it..

    Sisig in its oldest form have pig's brains in it to have it have a creamy texture in it. When sisig got to manila the pig's brain git replaced by raw egg placed on it when served on a very hit plate and mayo is also added later on. Sisig is also liken to the ilocano "dinakdakan", though the later is an older dish.
