How to make a Japanese Style Kitchen Knife

  • In my free time I like to make knifes. This is the third one I made, so I'm still in my learning process. I gained a lot knowledge from youtube videos, so I'd like to give something back: This is my first attempt on a knifemaking tutorial, I hope you enjoy it.
    I used VG10 damascus steel for the blade and masur birch wood combined with a piece of wenge wood for the handle. Also i used a piece of brass for the frame between the blade and the handle.
    Following I will list all the tools I used: hacksaw; belt sander (You can alternatively file it by using a filing jig [ • How to make and use a ... ], but it takes way longer!); several files; several sandpapers

    I like your Birch wood handle. I regularly use all kinds of Japanese knives for my cooking and other knives. To do something like that have to knowledge of knife making and also gifted hands too.For kitchen knife it is better to use stabilized wood or sock with thin CA glue after rough turning to waterproof the wood. I don't know how you polish your knife handle(oil or else). Good job for a starter

    Nice way to recycle old candle cups! Blade came out epic as well, I'm thinking about making a knife of that style but I'm not sure that i will find a customer in my country for it.

    what i like to do is fill a small container with Danish oil and put the whole handle in the oil over night. it soaks it up and resists the water better than just on cote. Very nice knife though, you have some serious skill man.

    All I can say is Gorgeous knife!! And I can't believe you have only made 2 or 3 knives, I think you mentioned? You have a God given talent for this creative work and you should do this full time soon.     Next time use a jar or other small glass container large enough for the blade and put the ferric chloride (etching solution) in the jar and dip the knife in there. It helps get an even etch all along the knife. Great work though!

    Where did you buy the steal? I have only been able to find O1 oil hardening tool steel. But I love the damascus steel

    Nice job! There are two things that were done differently than I've seen before though. Did you consider burning the full tang into the handle? And why did you not dip etch? The knife still turned out quite beautiful.

    Great job! love the VG-10 damacus, can't really get that here in the US, but it would be neat to try some :) Beautiful wood choices too , and looks like you did a nice job fitting up the brass spacer slot to the tang as well. Thanks for sharing! Oh btw, how does it cut? ;)

      It cuts awsome ! The first sharpening was a pain , but it remains its sharpness for a very long time .
      I use it every day and there was no resharpening necessery till now :D
      In that video i forgot to make a cutting test, sorry for that :/

      the handle is comportable even though its a bit big ,
      it was the 3. knive i have made so now a days i would make some things a bit different , including the handle ;)

    That is an incredible looking knife. I'm interested in making knives using the stock removal method. What advice would you give to a newbie and what are the minimum tools required and also what tools would you recommend as a bonus to help out. Thanks.

      Ok the minimum tools you need are : a good file ( bastart file double cut )
      some clamps, a drill, a hacksaw , lots of sandpaper , epoxy-glue. these are the tools you will definetly need , something that makes you work much eaysier is a vice and a beltsander.

    How do you make sure that the whole you drilled for the tang is snug enough? Does the glue fill in a lot of the gap, if it's too wide?

      Man kam mir beim Stahl sehr entgegen, normalerweise muss man für
      10 cm um die 50€ einplanen natürlich ist der Preis noch abhängig von der Stärke des Stahls ;)

    How did you get interested in this? Are an engineer or something? How did you learn all that? Excellent. I found an old Japanese knife I wanted to restore it. Your video really gives me the heart to try. Great

      I got interested in knife making by watching videos on RUclips.
      After I watched about everithing I could find searched for Steel and get started.
      The first knife was ok for the first, but shortly afterwards I wanted to make a better one and so on ;)
      Thats how I got addicted to knife making ;)
      I'm not an engineer, I study chemistry.
      Its really happy that my Videos inspire other people to simply try their selfs in knife making :D
      It would be great if you post a picture or a video of your restored knive :D

      Jan Bane We're two ! I've started watching Walter Sorrels, Cough Costum and the like and I kinda got addicted ... I'm on my second knife. Maybe I should start making videos !
      Tip i've seen in a vid : some people say you have to nutralise the acid with a little bit of base to insure that the acids stops etching. But I'm sure that as a chemist, you know that better than I (I'm an archaeologist ^^)

    I love the look of this knife!
    I'm gonna try to make simple kitchen knife using a filing jig, what thickness did you use for the steel of this knife?
    It looks to be about 2.5 mm but it's a bit hard to tell.

      Comparing this with kitchen knives at home it seemes a bit thick. Did you grind down the spine a bit or is it still approx 3mm at the top? Does it feel heavy or is it just fine?

      Its a bit thinner at the spine, but not extremly thin.
      because of the hight of the blade 3 mm is ok and it feels very light. the balancepoint is exactly at the brasselement so it feels fether light in your hand, realy !

      I got my steel from a friend but there are a lot of different websites where you can buy stuff for knifemaking, also different steels and a bunch of handlematerials. Check out www.schanz-shop.de/?go=artikel&ps=5&subid=6447 they have the same steel in stock. ;)

      I got my steel from a local company, but you can buy the same stuff online
      its VG-10 laminated steel

      Jan Bane Then you wasted money. VG-10 is a very expensive and very high carbon steel. If you are only taking it to 58 rockwell there is no point. You want a rockwell of at least 60-61 on a finer edged knife, along with the fact that VG-10 has a very fine grain structure, you dont have to worry about excess carbide build up.

      fertig sind die messer schon aber es gab ein Problem beim schnitt deshalb dauert es diesmal so lang mit dem Video :/

      Ah okay, ich muss zugeben ich habe auch Messer gemacht aber per Hitze und dem Hammer. Und wenn du etwas Geld spren willst kannst du die Klingen auch relativ einfach selber härten. Dazu brauchst du nur einen Stahlbehälter ein Stahlrohr Holzkohle oder normale und noch einen Föhn eig. recht einfach.

      +MARkoe93 hat das Schmieden kommt bei mir bestimmt auch noch irgendwann aber vorerst reicht mir das schleifen ;) Das mit dem selber härten ist so eine sache ... ich weiß dass man den Großteil der stähle gut selber härten kann. aber es gibt ein paar bei denen wird es schon echt schwierig z.b. 1.4034 der braucht zum beispiel eine haltezeit bei 1050 Grad das traue ich mir mit einem Feuer einfach nicht zu ;)

      Ja, dass stimmt es gibt kompliziertere Stähle zum härten. Doch habe ich immer die Stähle zu einer härte bekommen bei der die schneide lange scharf geblieben ist. Daher gebe ich dir nur den Rat nimm dir einfach mal Holzkohle und nen föhn nen Rohr halte nen Stahl rein und warte bis dieser nicht mehr Magnetisch ist dann paar sekunden warten und dann gemächlich in Öl eintauchen, dabei muss es kein spezielles Öl sein. Und ein kleiner Tipp beim ersten mal geht es öft schief wenn man die hitze verteilung nicht hinbekommt. Also das erst mal lieber irgendein Stück Schrott nehmen, denn den Fehler habe ich beim ersten Messer gemacht. 10h Arbeit ... geschmolzen ... will man nicht

      The company wich does all my heat treatment work for me is: " C & E Rauh Inh. Lillian Walz e.K." in Solingen.

      They do blanking, stamping and heat treatment mostly in large quantity ;)

    Je to hezké ale je to falešná damašková ocel .Design udělá pouze kyselina a ne překládání vrstev. Takže to vlastně pro toho kdo chce pravý japonský nůž,nemá hodnotu.

      wenn du die Werkzeuge schon hast, ist das teuerste eigentlich der Stahl.
      Grade der bei dem verwendete Stahl ist etwas teurer, ich meine ich hätte ihn irgendwo mal für 2€ pro cm gesehen. Dann kommt noch das Griffmaterial dazu:
      das Holz startet bei 7€ man kann jedoch auch sehr exotisch werden , bis hin zu Mamutbackenzahn was dann deutlich mehr kostet ;)

      That is industrial grade damascus.. Usually knife makers make their own but yeah.

    Japanese knife's tang wasnt suppose to be that long it shiuld be about 2 inches to ease changung handle if needed

      I build it a litle longer so the epoxy has more surface to bond with.
