How to make a Japanese Style Kitchen Knife

- In my free time I like to make knifes. This is the third one I made, so I'm still in my learning process. I gained a lot knowledge from youtube videos, so I'd like to give something back: This is my first attempt on a knifemaking tutorial, I hope you enjoy it.
I used VG10 damascus steel for the blade and masur birch wood combined with a piece of wenge wood for the handle. Also i used a piece of brass for the frame between the blade and the handle.
Following I will list all the tools I used: hacksaw; belt sander (You can alternatively file it by using a filing jig [ • How to make and use a ... ], but it takes way longer!); several files; several sandpapers
Thanks for watching!
Jan Bane
Dang he makes this in his spare time! I just sleep and watch RUclips in my spare time. 😁
it's pure joy watching you making this knife.. thanks for sharing Jan
Very impressive, I love that most everything is done by hand with inexpensive hand tools. Hard work and it shows in your quality.
I love that you used a laminated steel for this, it just makes for such a pretty final product.
Nice job! The knife turned out really great!
Deine Vorrichtung ist so einfach wie genial! Tolle Arbeit!
Keep them coming! Your videos are great and knife making skills are awesome!!! Thank you
Great video. In trying to get started as a hobby and wasn't sure if that type of bench grinders would work and now I'm gonna go out and get one of those. Thanks
Absolutely awesome video! Great quality recording, great music and more importantly great knife! You have a finer finish on the blade than most pros! Keep up the awesome videos and the awesome knives.
Very, very nice video about knife making. I learnt a lot. ( I just aswered to your inquiry about spacer materials. Then I checked your channel). Very good educational stuff. Thank you
your Skill is awesome mate. Inspirational stuff with the basic of tools. Love your work!!!
Good craftsmanship!! Bravo!
I like your Birch wood handle. I regularly use all kinds of Japanese knives for my cooking and other knives. To do something like that have to knowledge of knife making and also gifted hands too.For kitchen knife it is better to use stabilized wood or sock with thin CA glue after rough turning to waterproof the wood. I don't know how you polish your knife handle(oil or else). Good job for a starter
Nice job, in the finish the knife and Noguchi table are best.
Beautiful knife. Thanks.
Thanks ;)
Great looking knife :)
Nice way to recycle old candle cups! Blade came out epic as well, I'm thinking about making a knife of that style but I'm not sure that i will find a customer in my country for it.
Roadzery just make it for your self ;)
Jan Bane Might as well do that, the curve of the blade matches my cutting style. :)
2 thumbs up, Excellent
Nice work :)
WOW sieht richtig gut aus!
frohes neues:)
+Martin Waschber Danke ebenfalls ;)
COOL GREAT KNIVE!!!
what i like to do is fill a small container with Danish oil and put the whole handle in the oil over night. it soaks it up and resists the water better than just on cote. Very nice knife though, you have some serious skill man.
Thanks i will try this next time ;)
Danke :D
VERY NICE!
+Schlammmixer Danke ;)
All I can say is Gorgeous knife!! And I can't believe you have only made 2 or 3 knives, I think you mentioned? You have a God given talent for this creative work and you should do this full time soon. Get enough followers like with your first video and U-Tube and the sponsor's will be paying you enough to quit your day job. When is the next video coming out? ;>) ~Dolly
Next time use a jar or other small glass container large enough for the blade and put the ferric chloride (etching solution) in the jar and dip the knife in there. It helps get an even etch all along the knife. Great work though!
very nice, I like the blade. The handle is nice too but a bit too thick for my taste. Well done.
Awesome!
Where did you buy the steal? I have only been able to find O1 oil hardening tool steel. But I love the damascus steel
You need to open knife shop!
Its cool! Like
( internet shop )
Definitely, I would buy knives of this quality (if I could afford them; I have a feeling his craftsmanship would quickly outpace my wallet).
GOOD JOB
Cool I've made something like that too
Nice job! There are two things that were done differently than I've seen before though. Did you consider burning the full tang into the handle? And why did you not dip etch? The knife still turned out quite beautiful.
Great job! love the VG-10 damacus, can't really get that here in the US, but it would be neat to try some :) Beautiful wood choices too , and looks like you did a nice job fitting up the brass spacer slot to the tang as well. Thanks for sharing! Oh btw, how does it cut? ;)
Thanks for the compliments :D
It cuts awsome ! The first sharpening was a pain , but it remains its sharpness for a very long time .
I use it every day and there was no resharpening necessery till now :D
In that video i forgot to make a cutting test, sorry for that :/
Great job and nice explained! Is the handle comfortable, it looks big on the video!?
Thanks ;)
the handle is comportable even though its a bit big ,
it was the 3. knive i have made so now a days i would make some things a bit different , including the handle ;)
That is an incredible looking knife. I'm interested in making knives using the stock removal method. What advice would you give to a newbie and what are the minimum tools required and also what tools would you recommend as a bonus to help out. Thanks.
+Peterkr10 Thanks !
Ok the minimum tools you need are : a good file ( bastart file double cut )
some clamps, a drill, a hacksaw , lots of sandpaper , epoxy-glue. these are the tools you will definetly need , something that makes you work much eaysier is a vice and a beltsander.
by the way check out walter sorrells Channel here on youtube he made some realy good videos for knifmaking beginners ;) for example the tools you need : ruclips.net/video/s5bdWsVSZbA/видео.html
+Jan Bane thanks a lot for the reply. I need to heat treat my blade and make the handle still so I still have a lot of work to do.
How do you make sure that the whole you drilled for the tang is snug enough? Does the glue fill in a lot of the gap, if it's too wide?
How did you get interested in this? Are an engineer or something? How did you learn all that? Excellent. I found an old Japanese knife I wanted to restore it. Your video really gives me the heart to try. Great
Simeon Banner
I got interested in knife making by watching videos on RUclips.
After I watched about everithing I could find searched for Steel and get started.
The first knife was ok for the first, but shortly afterwards I wanted to make a better one and so on ;)
Thats how I got addicted to knife making ;)
I'm not an engineer, I study chemistry.
Its really happy that my Videos inspire other people to simply try their selfs in knife making :D
It would be great if you post a picture or a video of your restored knive :D
Simple answer.!
Jan Bane We're two ! I've started watching Walter Sorrels, Cough Costum and the like and I kinda got addicted ... I'm on my second knife. Maybe I should start making videos !
Tip i've seen in a vid : some people say you have to nutralise the acid with a little bit of base to insure that the acids stops etching. But I'm sure that as a chemist, you know that better than I (I'm an archaeologist ^^)
Jan Bane was Osmo at Thetopicala on youtube your mentor ? If you have not seen this incredible craftsman , you need to go check him out. I'm sure he will gladly help you or answer any questions. Osmo is one great stand up man !! His work is nothing short of amazing. He has quite a lot of videos of puukko knives from Finland 👍👍
Looks great! Cant belive this is just the third one of yours. Where can i find steel like this?:)
Josefs Tiselius just google Damascus Steel stock and you should be able to find more than a few distributors.
tolles video..bravo
I love the look of this knife!
I'm gonna try to make simple kitchen knife using a filing jig, what thickness did you use for the steel of this knife?
It looks to be about 2.5 mm but it's a bit hard to tell.
nice to heare that you start you own project ;)
the steel is 3mm thick ;)
Thanks!
Comparing this with kitchen knives at home it seemes a bit thick. Did you grind down the spine a bit or is it still approx 3mm at the top? Does it feel heavy or is it just fine?
Its a bit thinner at the spine, but not extremly thin.
because of the hight of the blade 3 mm is ok and it feels very light. the balancepoint is exactly at the brasselement so it feels fether light in your hand, realy !
Good to know!
Vielen Dank
Nice Knife. Where did you get the VG-10 ingot?
I got my steel from a friend but there are a lot of different websites where you can buy stuff for knifemaking, also different steels and a bunch of handlematerials. Check out www.schanz-shop.de/?go=artikel&ps=5&subid=6447 they have the same steel in stock. ;)
I hope I could help you ;)
Very nice. Where did you purchase your steel?
I got my steel from a local company, but you can buy the same stuff online
its VG-10 laminated steel
Jan Bane Then you wasted money. VG-10 is a very expensive and very high carbon steel. If you are only taking it to 58 rockwell there is no point. You want a rockwell of at least 60-61 on a finer edged knife, along with the fact that VG-10 has a very fine grain structure, you dont have to worry about excess carbide build up.
10h Arbeit ... geschmolzen ... will man nicht
Why it isnt sparking,is it becouse the grinder isnt powerfull enough or becouse the belt is made for wood not for metals?
what type of metal did you use?>
Where I can fin the pice of metal that it's attached to the handle and how it's called. Srry my English is weak
wo hast du den Stahl her?
Uch hab schon überall gesucht
I know this is probably a dumb question but is there any way i can buy a custom one from you and i can pay you thru paypal
Seems to me that you are in Europe! Can I ask what company did the hardening?
+Lamba Kari You are right ;) I'm from Germany.
The company wich does all my heat treatment work for me is: " C & E Rauh Inh. Lillian Walz e.K." in Solingen.
here is a link : www.rauh-solingen.de/
They do blanking, stamping and heat treatment mostly in large quantity ;)
The video was dark when you showed the chemical you used for the etching and could not make it out. What is it called??
whats the music? lovely tune
Industrial damascus steel?
+Mátyás Ludvig Yes , sadly i cant make my own due to a lack of tools and a suitable workshop.
hopfully this will change in the futur ;)
+Jan Bane No this is awesome!
Amazing . Your very talented . More videos please . . P's . Change the music ;-)
Nicola Gregson Nothing wrong with the music
+Nicola Gregson Modern Jazz is very cool. If you don't enjoy it, just mute the volume since he doesn't speak during them any ways.
I wouldn't say modern jazz or jazz in general is cool, I detest it, but each to their own
Je to hezké ale je to falešná damašková ocel .Design udělá pouze kyselina a ne překládání vrstev. Takže to vlastně pro toho kdo chce pravý japonský nůž,nemá hodnotu.
would you consider selling them?
I didn't make that much knives untill now, this is just the third one i made, so I'm still in my learning process. But in the future, when I'm more experienced, I would like to sell them ;)
welches Metal hast du genommen
Awesome job! Das ist ousgesiegnit! Miene Deutsch is schlect. Sorry
good enough to understand ;)
thx for the compliment ;)
the 2. video is nearly ready upload , i think it will be online in one or two weeks ;)
Strange how the blade looks like wood with the acid you applied
That is industrial grade damascus.. Usually knife makers make their own but yeah.
Japanese knife's tang wasnt suppose to be that long it shiuld be about 2 inches to ease changung handle if needed
+Teddy Bear Thanks for the tip! Didn't know that.
I build it a litle longer so the epoxy has more surface to bond with.
Gives a bit more stability ;)
what is the name of the song in the background?
+hey_watch_this! I have no idea its a freewear song that I found somewhere on youtube sry :/
+hey_watch_this! Hamasaki's Funky Background Music for
How fin is the blade?
i couln't say exactly but its around 1/6 of a millimeter
do you sell knifes
how sharp is it?
+Jawad Ibrahim you can shave you arm if you want ;)
+Jan Bane good! now you can say it is a true razor. ;)
I bought instructions from WoodPrix and I builded it very very cheap.
I made it with WoodPrix handbooks !
6:33 XD
Anything other than this music would've been better for the video.
u cannot make a Japanese knife
Why not?
