excellent recipe, delicious I tried gluten free , replaced flour with garbanzo flour and for bread crumbs used dried flat rice roasted flakes, I seen other recipes and they grate zucchini and then loose all the liquid

Adding more flavoring like minced garlic, cumin powder, finely chopped chillies, fresh oregano/cilantro/basil, etc. will make this even better. For a more crispy texture add rice or corn flour.
T B, oh yes. I agree. More seasoning needed for sure. Simply, lightly saute the onions with some fresh minced garlic... Would probably make a big difference. But, to each his own!

Some of the nonne write in and ask to be on the show now. Others I just meet and know they will be perfect and some are referred to me by other people!

I thought the same thing myself. I would also add onion & garlic powders & shred the zukes. Normally though, when I am making something I've never made before, I tend to follow the original recipe, then try them & adjust it to the way I/we like it for the next time. That's the great thing about Italian food & all recipes really, you can substitute what you like for a certain ingredient. Ciao!

I make these too. I find that grating the zucchini gives a better texture.
I was thinking, "why didn't she just grate them?", but wouldn't that make it watery? Grated veggies tend to "cry", as my mom used to say...
Only a side by side test can tell, I prefer crunchy, to soggy. I make mine with cooked and well drain spinach.
