Easy Teriyaki Bowl

    Teriyaki Bowl
    By: The Jaroudi Family
    Serves 2
    Ingredients:
    1 cup cooked edamame, tempeh, or tofu (or bean/legume of choice!)
    1 cup cooked bulgur wheat (or favorite whole grain)
    1 cup chopped broccoli
    1 cup cooked baby Boy Choy
    1⁄2 cup shredded carrots
    1⁄2 cup chopped bell peppers or cucumber
    1 red onion diced, or 2 scallions chopped
    2 tbsp raw sesame seeds (optional)
    Teriyaki Sauce:
    1⁄2 cup vegetable broth
    1-2 tbsp rice vinegar (Start with 1 tbsp and see if you want to double)
    1 pitted date
    1 tsp white miso
    2 tsp tapioca starch or arrowroot powder or cornstarch
    1 large garlic clove
    1/4 tsp ground ginger
    Directions:
    Cook whole grains and beans/legumes. Water sauté vegetables.
    In a large bowl add in all ingredients - leave out sesame seeds.
    In a high-speed blender, blend all of the teriyaki sauce ingredients until smooth.
    Pour the teriyaki sauce ingredients into a saucepan and whisk on medium-high heat.
    Bring mixture to a simmer and turn off the heat.
    The sauce should be thick.
    Pour desired amount over easy teriyaki bowl.
    Top with raw sesame seeds.
    If you have extra Teriyaki Sauce keep refrigerated until ready to use.
    Sauce will keep for 5 days.

    Was in the mood for this type of meal, had some leftover fresh matchstick carrots, onions, snow peas, and some red bell pepper strips and I added some fresh mushrooms and broccoli. I made fresh brown rice today so that came in handy. I can do all of the stir frys etc but it is the sauces that I didn’t know how to do without relying on the traditional way SAD. I loved learning how to do the sauce!! I didn’t try to thicken it in the Vita Mix, I just blended as you said and thickened it on the stove. This is a good quick dish and so versatile. TY!!

    That looks very good 👍. You just gave me an idea! I am gonna try to add some apple sauce and finely chopped pineapple to the sauce pan after blending the ingredients you use in your recipe and see if it tastes like store bought "Island Teriyaki" sauce. That used to be my favorite kind of Teriyaki sauce 😊😋. Thanks Brittany 🤗

    I like to put pineapple in my stir fry, so I sub the juice from the can for part of the veg broth.

    That is the same induction cooktop that I have. I love it. I love the tofu packages that are already portioned out too. Britt, this is dinner at least one night a week at our house also. It gives me a reason to use stuff that might not get used at the end of the week. Great video. Loved it.

    Enjoyed the video Brittany and a excellent and tasty recipe. Have already had a Teriyaki bowl but not with this recipe and the sauce wasn't homemade so I will have to try it because I would prefer a homemade sauce.

    Looking forward to trying this. A teriyaki sauce with no soy sauce is definitely different. I am guessing your sauce doesn’t heat enough in your blender because you have such a small amount. Have you tried just pouring it over your hot pan of veggies? Most sauces like this will thicken quickly as you pour it in. But of course then the veggies are drenched in the sauce instead of it being poured over. Anyhow thank you Britt. Looks delicious

    I made this with bulgar and edamame. It was delicious. I made the sauce but did not like it so I used bottled teriyaki sauce. This will be a regular for me.

    Looks yummy. Will try this, will be my first time making teriyaki sauce from scratch. Would fresh ginger work in place of ginger powder?

    This looks fantastic. I’m making it this week. I was rummaging through the freezer yesterday and found a bag of soy curls, I think they will be perfect for this. BTW are those plates you used in your Amazon store? I like those a lot.

    We are trying to really cut back on sodium when I realized how much we were eating. ( We are using Miso much more) It was/is pretty hard at first so we are doing it incrementally. How long did the sodium change over take before you feel like you got used to it?

    How do you get the garlic smell/taste out of your blender? I never use garlic or onion in my blender since I also use it for dessert lol

      I put soap and water in my blender and set it to the wash setting (mine is a Vitamix) then rinse it out very, VERY well.

      I have separate containers and blades for my nutribullet. Nutribullet is $60-$90. You could get another container for the vitamix as well, but it’s pricey. Honestly just washing it out well works. I’d go the separate container route if the taste/smell really bothers you. I only use my vitamix for large amounts anyways. This smaller amount I’d use my nutribullet.

      adds a little bit of flavor - you could double the garlic or add a bit of black pepper. (Or red pepper flakes)

      I follow Dr. Greger’s daily dozen - I spilt my grains over the day with 1/2 cup for each meal.

      A frozen bag of pre-chopped veggies would make it a lot faster. Along with some canned beans or tempeh.
