I saw your post tonight, had my husband go get some ingredients and made the tacos for dinner. I wasn't a fan of the sweet potato in my taco, but I LOVED the cauliflower taco mix. I will definitely put this on my favorite list. Whoot whoot!!!!

I made the recipe for Taco Tuesday. The cauliflower taste was still detectable. So next time I'll use more of the spices. Also to get all the florets broken up in the food processor I ended up with much more muchy texture just to get the last big floret broken up and incorporated into the mixture. Next time I'll breakup the florets to smaller bits. That way I may only pulse the food processor instead of having it on for too long. I think starting with smaller cauliflower florets will need only five to seven pulses - but just guessing.
This cauliflower is amazing! You could change the spice and use this for any cauliflower rice dish that blends with it's tomato kick.
Made this taco filling. Sooo good! I can see many ways to use this! I think I’ll add some corn and black beans and stuff some in sweet potato “boats!”

If you have a nut allergy, you can use sunflower seeds instead of the nuts.
You can use sunflower seeds for cheese and cheese sauces too.

They look really good. But would have to leave the nuts out for me. And the heat.
