Happy belated birthday to Brittany! Thanks so much for posting this. It was timely because I wanted to celebrate my special friend's 40th birthday. My friend, not a WFPB eater, was blown away by how tasty both the birthday "cake" and the Nice cream tasted. I was too as I never made or had either before and they came out far exceeding my expectation. My notes: 1. I followed the instructions, and the cake/cookie is not very sweet. We liked it that way. If you want to wow someone who is very used to the typical store bought cakes, you may want to consider to sweeten it up more (e.g. use 4 instead of 3 dates). 2. The cake texture is moist. The closest texture I can think of is a dense cheese cake if I have to describe it. 3. I made in advance, kept it in the fridge, and put it in the oven "Keep Warm" setting before serving. It's soft enough that I could insert the candle without any problem. 4. The Nice cream was not very sweet either although my bananas were not extremely ripe when I froze the cut up chunks. I used home made cashew milk (1 cup cashew to 3 cups of water), which might be creamier than soy milk . 5. I made the Nice cream in advance and kept it in the freezer. It's hard like a rock. When we had our meal, I left the tub in room temperature. By the time, it was served (with the cake), it was the perfect ice cream consistency. 6. I don't have a spring form pan, but I have an 8" non-stick baking pan. I cut the parchment paper the exact round shape to cover the bottom. Didn't even need the butter knife to loosen the side as the cake, once thoroughly cooled (in the fridge), came out without ANY resistence. 7. I sprinkled chocolate chips at the bottom before pouring the batter. Then I decorated the top using chocolate chips. This way, you still get some chips with every bite and can still easily customize the cake for your occasion.
That looks SO delicious! I love chickpeas and have them in my fridge 24/7. I make them twice a week in my crockpot, so I was so impressed when you gave the amount of aquafaba for those who don't use canned - so thoughtful and helpful!! Gonna make this ASAP!!

I made brownies awhile back using chickpeas so I don’t doubt this will be delicious. I’m hoping the substitute with apple sauce will work since I am out of dates. It’s baking right now! I can’t wait! I just made it too. I took out of the oven 5 minutes early bc it was getting very brown. It’s very creamy, but good. Did you store in refrigerator?
