我用的是德國品牌的廚師機。原則上,只要是具備攪拌功能的攪拌機或麵包機皆可 😊
您好 請問若不製作發酵種 是不是把所有材料加總即可呢?
不建議這麼做。我們這個配方最重要的特色就是用發酵種,如果要用直接法,可在網路上另搜尋直接法的木材麵包配方來參考。不過,直接法做出來的木材麵包較乾口也較沒彈性,要有心理準備。😊

看個人手勁,這種水份少的麵糰很不好揉出膜,有機器代勞會提高成功機率,麵包還會有溫度的問題需要考慮 😊

@@Cooking23s 剛試做了發酵團 可能液體類太多麵團超黏的 於是又加了麵粉
妳說的液體量太多是自己有再多加液體嗎?請務必再次確認材料份量。做麵包切忌多加麵粉,加了太多配方就不對了,會影響成品口感。所有麵包開始製作時一開始黏手是正常,但後來就會慢慢起水合作用,達到平衡。如果手揉麵糰,建議一開始先用刮刀拌合,成糰後再用手揉。另外,木材麵包算是水份少的硬質麵包,不太可能水份太多。木材麵包用手揉真的不太好做,加油 💪

很類似,都是硬質類麵包,菲律賓麵包大多是單獨做成小圓麵包,木材麵包則大多捲乾餡切片食用 😊
