- Pandan lotus paste is one of my favorite mooncake fillings. I love the sweet aroma as well as its green of jade. The green color is extracted from a plant, known as pandan. It's used wisely in South East Asia in both savory and sweet dishes.
I used frozen leaves in this video because it's rather difficult for me to buy the fresh pandan leaves. The frozen leaves are imported from Thailand and Vietnam. I prefer to to use the leaves from Thailand because the pandan liquid extracted is more green

斑斓莲蓉是我很爱的月饼馅之一,很喜欢它的香气和翠绿的颜色。其实自己炒月饼馅不难。量不多的话,只要莲蓉泥的水分不大,这个食谱在30分钟左右就可以炒好。
视频里用的斑斓叶是冷冻的。我在国外,不容易买到新鲜的斑斓叶,所以只能用冷冻的。这里冷冻的斑斓叶是从泰国和越南进口。越南的很香,但斑斓汁的颜色很淡,可以说几乎没有,所以要做斑斓类的甜点用泰国斑斓叶会比较适合。

1)Dried Lotus Seeds - 200g
2)Sugar - 120g
3)Cooking Oil - 100g
4)Maltose - 60g
5)Pandan Leaves - 15
6)Water - 100g
7)Wheat Starch - 10g

I’m living at Aus,lotus seed is expensive, also don’t have fresh pandan, I use frozen Pandan or Pandan paste that comes in tiny bottle, I just wondering can we try using chick pea? It’s cheap & expand a lot😳

你先揉一揉看馅的状态。如果还是比较干就加点水从炒。
嚐過朋友做的斑斕蓮蓉月餅,說實話可惜了蓮子若用綠豆仁較適合
If i don't want to be too sweet, can i skip the maltose? Would it be different for the result?
Maltose will give the lotus paste sticky texture, like the store bought paste.
If you want to further reduce the sweetness, cut down the sugar instead

Thanks for sharing , to me is a waste as Lotus seeds is expensive to make it into Pandan paste, May be use sweet potato or white beans to make the base then add in Pandan juice.

可以用保鮮膜包好,冷凍保存。解凍後,如果出油或變軟,放入鍋中再炒一炒就可以。

视你月饼模的大小。50g月饼,皮馅3:7的话可以做大概17个月饼。
