Yield: 10 buns
Crust Topping
55g (¼ cup) unsalted butter, softened
2g (1 tsp.) earl grey tea
60g (½ cup) icing sugar
1 large egg yolk
5g (1 tsp.) vanilla
100g (¾ cup + 1 tsp.) all purpose flour
¼ tsp. baking powder
¼ tsp. baking soda
Earl Grey Custard
270g (1 cup + 2 tbsp.) milk
6g (1 tbsp.) earl grey tea
1 large egg
60g (¼ cup + 2½ tsp.) white sugar
10g (1⅓ tbsp.) cornstarch
10g (3½ tsp.) all purpose flour
14g (1 tbsp.) unsalted butter
5g (1 tsp.) vanilla
Dough
100g (⅓ cup + 1⅓ tbsp.) water
20g (2⅔ tbsp.) bread flour
340g (2¾ cup + 1⅓ tbsp.) bread flour
3g (½ tsp.) salt
5g (1¾ tsp.) yeast
40g (3 tbsp. + ½ tsp.) white sugar
1 large egg
80g (⅓ cup) warm milk
40g (2⅔ tbsp. + ½ tsp.) unsalted butter, softened
9g (2 tsp.) vegetable oil
2 yolks, for brushing
Bake 350F 20-25 minutes, or until the tops are golden brown.
Oooohhh these look yummy 🤤 will definitely try for Easter! They remind me of Mexican Conchas bread but I think the custard filling on theses gives them an extra yummy touch! Thank you for sharing ☺️
