Fluffy Crunchy Chinese Pineapple Buns (Bolo Bao 菠蘿包)

- Have you ever had Pineapple Buns (Bolo Bao 菠蘿包) at a Chinese bakery or restaurant? These are a classic: fluffy, milk bread-based buns topped with a crackly, crunchy cookie topping (like a concha or craquelin). They get their name from their pineapple-like appearance rather than flavor; they are buttery and creamy with a hint of vanilla. Our own Tatiana Bautista, who developed the recipe, shows how to shape these small rounded buns, create the cookie topping, and then bake them to golden perfection. The optional custard filling comes together easily and can be piped into the center of each bun. Try making them for yourself and tell us how you like them!

I find my spoons and cups actually measure different amounts. The scale has saved me. It was a little weird at first but now I honestly wouldn’t want to bake without it. There’s much fewer things to wash after baking because I pour everything into one bowl on the scale.
Crunchy top and custard adding something ✨extra✨. Also love the shout out to sustainability in reusing the egg whites.

I have never heard of pineapple buns, but I've been making King Arthur's milk bread recipe for years now and know it by heart! Happy to see more recipes using the tangzhong method, and hope to see more in the future. This technique is absolutely amazing and has really changed how I feel about making bread at home. There's just two of us in the household, and my bread always was stale within a day or two - no longer, and the rolls are great for just about anything. Thanks so very much for these new recipes!! Is there a reason to use so much yeast for that amount of flour? 1 tablespoon is almost 9 g of yeast.
