After spending two weeks in the United States I've returned to the Philippines! In this episode we make the Filipino dish called Kare Kare in Bohol, Philippines. This is one of my favorite Filipino dishes after spending over a year in the Philippines. Thank you for watching!

Kare-kare is typically cooked using oxtail. The collagen in oxtail makes it sticky even without cornstarch. You are missing the shrimp paste sauce. You eat it on top of kare-kare and rice as a salty spice. Really elevates the kare-kare to a whole different level.
My asawa makes this for me all the time. It's one of my favs!

The bisaya word ,lata, is used to refer to fruits and veggies that are overripe and no longer good for consumption . When you use lata in reference to cooking it means one or some of the ingredients are over cooked . So when Anne said lata-lata she meant the veggies were overcooked. Anyways , I agree with you , more peanut butter is the best in karekare, oxtail is the best version for Kare2 paired with bagoong or fermented shrimp paste . Aya is sooo cute , I’m not surprised she’s good in English . In my family we spoke English first then bisaya then tagalog. Even until now when we gather for reunions and family get togethers English is always the medium so our conversation is mainly Bislish . I’ve been traveling as well haven’t seen your vids in a while . Glad to know you’re back in the Philippines. Have a blessed 2024 Jonathan . Btw I think Anne is gorgeous , she calls you opaw, that means you’re special to her .

Atsuete or annatto oil is usually flavorless used for coloring dishes. In our hometown in Antique, its used to color the Adobo dish.

Pechay or Bok Choy is "Snow Cabbage" in English, a green leafy vegetable grown in Asia.

@@dada-gx9ii I googled a lot the same for Bok Choi and Pak Choi, a bit short. Pechay is a bit taller than those two.

Kara Kara is my favourite Filipino dish that I had out there. Will be moving there in a few months can't wait to have it again

Ann is so good in cooking and feeding hungry tummy like you. "Kare-kare" is one of filipino dish that is so especial that usually served only during fiesta, birthdays, December holidays and special events. It goes great with "baggong" Jonathan.
"HAY NAKU' is a kind of pinoy phrase of saying something is going to be hard to do, going to happen or just like whinning.
Atsuete or Annato is an orange-red food coloring or condiment made from the seeds of the achiote tree (Bixa orellana), which grows in tropical regions

Actually, you can add coarsely to finely chopped peanuts or as a topping it gives a different texture to the dish... kare-kare goes well with sauteed shrimp paste...

Sweety paste is usually Tamarind paste it grows on the Tamarind tree. It is natures Sweet Tart candy. It is super sweet and very tart. Great to make sauce. I love them when ripe. However, eating then can remove a little enamel from your teeth.
Your channel is my favorite. The Philippines are also my favorite. My old town is Cebu but it is now so big.
