Me, too! I just got one for my bday (a few days before Christmas), and I love it! I got so nervous when she said she got rid of it, but if she gave it to someone else to use, then I know it is still safe! Whew!
I love my stovetop Presto canner. I use it on a glass top stove and find that it’s not hard at all to stabilize the heat, but I use it indoors so I’m sure that makes a huge different than using it outside with the fluctuations and on a propane burner. I also bought a 3 piece weight so I don’t have to watch the dial gauge. I also have a Nesco Smart canner and love it! I’ve used it outside on the patio in the summer. Perfect for small batch canning. Thank you and Jim for your videos!
We do not use our 23 QT Presto canner on our glass top because is an induction range and will work on our aluminum Presto, so we use it outside. We are going to get the 3-piece weights as soon as we can. Thank us for letting know about your canning successes. Jim
@@RoseRedHomestead I just bought the 23 qt. Presto Induction canner. I currently dont have an Induction cook top but will have one again so that is why I bought the Induction ready Presto canner. I love Induction cook tops. Very efficient and responsive.

I ran canners outside and inside both this fall when it cooled down In temperature. Your videos are the best out there on the internet! I know there are many camp stoves/grills you can’t use to can as they will melt most canners unless you use an All American Canner. I’m quite interested in your outdoor setup. Thank you ❤️😊

Thank you for continuing to check the safety of the electric canners. Oh boy the number of channels and people who say these canners are not safe is daunting. I have a Carey electric canner and a presto stove top canner. I use both frequently. I recently got a three piece weight for my Presto so that I could use the 10 psi weight for my nearly sea level elevation. It has made it so much easier to find the sweet spot on the Presto. Before with the standard canner weigh/gauge I had to stand next to my canner almost constantly. Now I can periodically check it and it is fine.

I just got a replacement regulator for my 23 quart Presto pressure cooker. It has sections to use according to your elevation. I put it on after the 10 min. steam up and it took it to my 10# pressure and stayed. I set a timer and the canner stayed on perfect pressure.

I purchased an Instant Pot Max after watching your canning videos, and have found it to be very convenient for canning pints for myself and my husband. I have had an All American 921 for years, and haven't used it until lately, after you explained what finger tight is! I canned my freezer contents, bought meat on sale and canned that, and pintos, grapes, apples, and have just had a blast. I never knew how easy dinners could be. After watching your presentation on canners, I bought a Nesco Canner. I have a smooth top stovetop and didn't want to have to worry about the temperature. It is so easy to just plug it in and do the water bath or pressure canning methods. I didn't want to be bothered checking once it starts to process. For two people, it is the perfect size. I did 25 lbs. of beets. It took a while but it was so easy to use.
I would suggest you buy a Presto Pressure Regulator that comes with 5, 10, and 15 pound weights that make it much easier to regulate your pressure. For your elevations it would automatically regulate your pressure for you. You still have to watch your canner but you can hear it regulating the temperature instead of having to watch it. It jiggles allowing steam to escape when it reaches the pressure needed.
I have 2 All Americans. I dropped the lid years ago and broke my pitcock. They no longer made that. I replaced it with a rocker guage. I LOVE this setup. I can watch the pressure and hear the rocker guage. Does not need the babysitting it did without the rockerguage. When I inherited the smaller All Amercian(it will hold 18 pts,the larger 16 qts) I took the pitcock off and my oldest daughter gave me the 2 parts I needed for the rocker guage. I also had a pressure canner with a rubber seal I bough from a friend many decades ago when I 1st started pressure canning. It worked wonderfully until that seal dry rotted beyond repair while in use. It scared me to death when steam started spewing out after a LOUD pop. This was before home computers and I had no idea where to get a new seal. The canner turned into a nice water dish for my dog
Yes, we are going to do that in an upcoming MicroMoment. I rely more on the 15psi weight that came with the canner than I do the dial, but we show how to can using the dial in our videos.
I bought the weighted regulator as well. I don't really have to check the canner after the first few minutes, just stay in the house where I can hear the jiggle.
When i pressure can with my presto canner i use it as office or recreation time... i sit in a chair i bring in the kitchen where i can see and hear the canner with unobstructed path to it . I will work on household accounts, pay bills, menu and grocery plan, look up new recipes or I'll watch a movie or reada book on my kindle. Its also a good time to make family phone calls. Lots can be accomplished while you babysit your canner. Including meal prep, or freezer meals.
I have the presto and instant pot max canner as well as a carey. when I have small portions to can I use the smaller ones. the presto is a don't leave the room canner. I have electric stove and I am constantly monitoring the pressure. thank you for your video and so happy to hear I'm not the only one that watches constantly pressure readings. thanks Jim. and Ms Pam.

The knowledge I have gotten from your videos have been so valuable as I re-enter the world of canning. My husband and I are both retired (age 68) and decided to start canning again. It has helped us out economically as we are trying to be very careful with our spending. It has also been helpful for us to be able to control the ingredients going into our food consumption. Thank you for doing this video, it is very helpful. I am sorry today you have a few problems in video quality you might not be aware of it. I thought you might like to know and fix. You have 3 points in the video where you scroll added information just note they scroll very fast and hard to read at their current speed. Love the yellow and bold simple text. Problem times are at approximately at 10 min 10 sec, 16 min 40 sec and 17 min 00 sec. Also please note that you lose your voice at the pros and con sections. I cannot hear what you are saying there is no audio at these two times at approximately 16min 40 sec and 17 min 00 sec. Please note I am watching on Apple iPad on Safari. I hope this information helps, so you might correct the video. Keep making very informative videos. I appreciate you factual and detail presentations. You both do an awesome job. I have now 2 Nescos. It isn't a con to me that it only holds 4 qts. It fits my budget for snagging sale meats and canning meals. And my garden has small yeilds at a time. My con with the Nesco is with pints. 5 wide mouth go in very easily. You can't get the first one out without at least an ovglove. I love this canner. But, if I can ever afford the max...😁

Do not feel bad. You caught the misread. That happens to me all of the time. I read something and it makes no sense and I have to go back and re-read it and come down off the ceiling. For me this is especially true for highly charged terms. If you look at both words, they have many of the same letters and can easily be mistaken. I have the Nesco canner. I have a glass top stove so I wanted an electric canner. I really like it. The con of having to move the weight from exhaust to airtight is not a problem, and quite easy to monitor. You do have to unplug the canner when it is done, but no big deal. I am happy with it.
Suggestion: Read the canner instructions and download a copy of the USDA Compete Guide for Canning, 2015, Revised. We have over 400 videos canning and gardening. Jim
I had high hopes for my instant pot max. I purchased it earlier this year after seeing your tests. Mine however was dead on arrival for canning. It was never able to get above 97°. This reinforced the importance of not relying on electricity for this. Electric appliances are amazing when they work, but a headache when they don’t. I purchased a presto 16qt canner instead. I now have a $100 paperweight with the max, but it was a valuable lesson learned.
We are sorry to hear about that. Why did you not contact Instant Pot Max and return it? Or get an exchange for a new one that works and not one that had the service tag removed, so you do not know whether it is used or refurbished? (If you get a "new one" that has the service tag removed, do not plug it in or turn it on. Contact the company. Or get a refund? And make sure that you post a review on the company Website about what happened. No axe grinding, just the facts. If a company representative contacts and says something to the effect, "we are a small company" as a justification for changing your review to something positive, do not fall for it. If your questions about the item that is sent to you in exchange for your original are ignored, write that up as part of your review. Ultimately, if you decide to exchange new/replaced item, send it back (tell them you want them to pay for shipping) and tell them you want a complete refund and that you are going to look for that product at another company. We had massive problems with our first power station and we got a complete refund and bought another brand, with which we are happy. It took about 30 days to go through the process and get our refund. (If you can talk with someone on the phone about your problem, do so.) Jim

Wonderful video. Still awaiting the launch of the IP Max in the UK :( Apparently, they are not going to now release the version you have but release the next generation :( In the meantime, I purchased a Swiss pressure cooker with a pressure monitor... Not ideal but it did pass the USDA recommended criteria and I'm on the coast, so sea level. I did consider moving to the US but it seemed extreme, just to have access to the best canners 😃

However, there is a work around with Google docs which are free. I've used their spread sheet software to keep my family budget and other small projects for years.
I just watched your video on canning the chicken soup and was inspired into looking at the Nesco canner. So, I am going to get one and try it out. I have not pressure canned before and I purchased one of the Presto canners that Jim was using outside and at this point in time it is too heavy for me to use so I'm excited to get the Nesco. I had my husband get the Presto canner for me fir Christmas. I am excited to use it. I have canned in the standard stove top canner fir years but I'm afraid tovuse UT on my glass top stove. It popped and went on the last time I canned.

Last time I bought it, it was $59-69 for a 5 seat family license.
I was already in love with my IP and purchased the Max based on your testing (yes, I have 2 now, lol). Absolutely wonderful for canning pints. I fell in love with canning and bought myself the Presto for Christmas 😂. There are some things just better in quarts. 😉
Thanks for a great comparison. I have another comparison question that I don’t think you have ever addressed. For those items that can be canned in either a water bath canner or a stovetop pressure canner at low pressure (5#), I.e. tomatoes, jam, relish etc. what are the pros and cons of one over another. The pressure canner is less time for a single run but could you keep a water bath canner boiling and just take out one set of jars and put in the next with a large amount of jars? Does the pressure canner at 5# over cook the food compared to the water bath canner? Does one take significantly more fuel than another? I started with a pressure canner and have never actually tried water bath canning. I have also seen that there is a steam canner for water bath canning using steam and no pressure instead of submerging the jars the idea is that you use less water.

Hi Jim A while ago I asked you on how to control the temperature when pressure canning on a glass stovetop. Not realizing you cook on outside burner stove I have a 16 quart Presto pressure canner and cook on electric glass top stove. Found out very difficult controlling temperature during canning process. Finally found someone who explained exactly how to slowly decrease temp and works great for me. Check The Mudbrooker beginner's guide to pressure canning. He even shows the stove buttons for us newbies to understand what numbers to refer to I appreciate ALL your videos and like to see You in more videos. Thanks again J
Your comment on excel, have you tried open office? Their suite includes a spread sheet, writing tool, a database manager, a presentation tool and a drawing tool. And by the way it is free!!!
If I'm canning something that's thick and I'm concerned about the internal contents of the jar getting to the right temperature, does it cause any problems to process the jars for an extra 5 or 10 minutes for safety? I don't have a data widget. 🧐🤔🙂

I've pointed this out once before but that rubber button on the top of the Presto canner is a safety feature and should a problem arise this plug is going to go flying. In your configuration you have this plug facing you, not a good idea! The remedy is to rotate the pressure gauge 180 degrees. This will put the rubber plug on the back facing away from the operator.
I have purchased two Carey Canners from Amazon. Both were defective. So I feel like the Carey Company needs to test their products better. 🙃 I still want an Electric Canner. But not sure about the Carey Canner.
Now I finally understand why you are the woman with a gadget... I was wondering on occasions what that gadget actually is. 🙂 Different topic: I see you use frozen veggies. I do that, too, and get lots of criticism for it. However, my results with frozen veggies are very good AND, I believe that (unless you have a garden) they are superior to veggies that have been sitting on the produce shelves for days. Thoughts or opinions on that? Anyone?
I think frozen is just fine-as it allows you to harvest your garden, get it in the freezer and then can on cold winter days. No rush to do it all during a hot harvest time and be all jammed up. Enjoy canning your way!
I am going to be canning vegetable soup mix this week and for 50 years I have canned it,(soup mixture) in half gallon jars like my Kerr canning book said. I recently found out that the USDA says to can in quarts and pints not half gallons but I did not know why. When you talked about the kill zone I realized that must be it. I have always used an All American Canner which I love but half gallon jars must not stay hot enough to be safe. I am disappointed that I can no longer use half gallon jars but I want my food to be absolutely safe. So quarts it is. My recipe is like yours except I use green beans instead of limas. The reason is the first time my then youngest grandson when eating my soup looked at me and said "why would anyone want to ruin a perfectly good soup by putting Lima beans in it." I laughed and switched to green beans in the next batch. Now that he's older he likes limas but I just never switch back. Thank you for your videos. I enjoy them so much and they are always a learning experience.
Thank you! I love my old presto canner. I have the instant pot max. I've only used it twice. The keep warm button stayed on for my first canning. After 2hrs I got the courage to turn that off. It had steamed out. The food was fine. Then I tried canning potatoes. As soon as I heard the steam come out, I turned the keep warm off. I was shocked to see that all the liquid was gone from the jars. Every jar had no water in it. That worried me. Thank goodness it was just 4-pint jars. I've been nervous to try it again. I keep going back to my old presto canner.
Make sure when you start the canning session on MAX you turn off the keep warm button in the beginning. It usually doesn’t take 2 hours to come down so if you waited that long you are safe.

Question - this soup looks like it has more solids and less liquid; I thought the rule is half & half. Is the appearance misleading or is there an exception allowing more solids? Great video; I always appreciate your insights
We were not following the "canning your own soup recipe" where the USDA stipulates 50/50. Rather, we were using an older tested recipe that we then tested with my data logger to see if it was safe, which it was.
I am so thankful for you and your previous videos on the smart canners. It started me on canning almost a year ago and I am quite thankful and proud of my work. Question though. I have both the Carey and Instant Pot Max. Should the exhaust valve cover (I can't remember what you call it - the regulator?) Should it be replaced and or checked after a period of time to ensure its ongoing accuracy?
Question from a newbie here: my sweet husband bought me a canner for Christmas and I want to can some syrup. The recipe from my Ball cookbook calls for light corn syrup but I really would hate to add it to my home cooked goodness. Can I substitute something like sugar water, honey or agave nectar without wrecking the recipe and making it unsafe? Thanks so much!

I'm curious...why do some people use a generic 15 lb canner weight and not purchase a weight specific to their lower altitude? It seems like that would allow less constant supervision.
Precise psi is not necessary given that canner weights come in 10psi or 15psi or a dial, so apparently a range of psi is adequate. Our Presto has both a dial and a 15psi weight. If using the dial, we are supposed to hold it at 13psi, an impossibility on our setup, so we keep the dial between 13-15psi and watch the weight. When it jiggles we know we are at 15psi as well, so we have two 15psi indicators on our canner. It is best to think about pressure in terms of the lowest safe psi number. For instance if you live below 1000 ft elevation you must keep your pressure at least 10psi, but going higher is OK. For us at 5000 ft elevation, we must keep our pressure at least at 13psi but can go up to 15psi.
Hahaha I think any of us who use a propane cooker had almost burnt our eyebrows off. Glad Jim was find. The soup looks delish. As much as an electric canner would be handy,,..our power goes off so much, I just could t trust it. I have two. Stove top ones I use in our boot room on a similar type stove, great video as usual. Now to find frozen Lima beans ❄️🇨🇦❄️
I was going to say in the video for people to make sure they turn the propane on a just a little bit and and ignite and adjust the flame to medium high depending to your needs. The other option was to turn the propane on low and ignite at the same time and adjust from there. Oh, the other caution, stay away from the burner when lighting. I got the frozen baby lima beans at a local grocery store. Thanks for watching our videos. Jim
I know right? Just a second too late and you get a big vhoom. Our burner ignites with a handheld lighter, so I always have my lighter flame ready and close to the outlet before slowly opening the gas, thus ignitingbit ss soon as it peaks out. Afterwards I close the main source before turning the burner off to empty excess gas in the pipe as an extra safety precaution.

I own a Cary/Nesco electric canner and an All American 921. I live alone, and with my arthritis, these two canners suit me beautifully. I find myself using the Cary all the time for both water bath and pressure canning. Sometimes I have both going at once! That way, the Cary keeps me busy, so I don’t get tempted to leave the All American unattended 😉 I love your channel, and your serious testing convinced me to purchase the Cary. Thank you! ❤️

I use it on a glass top stove and find that it’s not hard at all to stabilize the heat, but I use it indoors so I’m sure that makes a huge different than using it outside with the fluctuations and on a propane burner. I also bought a 3 piece weight so I don’t have to watch the dial gauge.
I also have a Nesco Smart canner and love it! I’ve used it outside on the patio in the summer. Perfect for small batch canning.

We do not use our 23 QT Presto canner on our glass top because is an induction range and will work on our aluminum Presto, so we use it outside. We are going to get the 3-piece weights as soon as we can. Thank us for letting know about your canning successes. Jim

Thank you for a wonderful video. Would love to see a video on canning tomatoes. Specifically, water bath vs. pressure canned. I've never been able to understand why there isn't a tested recipe for pressure canning tomatoes without lemon juice or citric acid (we dislike the taste).

Thank you for continuing to check the safety of the electric canners. Oh boy the number of channels and people who say these canners are not safe is daunting. I have a Carey electric canner and a presto stove top canner. I use both frequently. I recently got a three piece weight for my Presto so that I could use the 10 psi weight for my nearly sea level elevation. It has made it so much easier to find the sweet spot on the Presto. Before with the standard canner weigh/gauge I had to stand next to my canner almost constantly. Now I can periodically check it and it is fine.
LOVE, LOVE, LOVE my Carey (Nesco) electric canner. It has allowed me to put up many healthy veggies, soups, stews and even just meats!!

I just got a replacement regulator for my 23 quart Presto pressure cooker. It has sections to use according to your elevation. I put it on after the 10 min. steam up and it took it to my 10# pressure and stayed. I set a timer and the canner stayed on perfect pressure.

I have had an All American 921 for years, and haven't used it until lately, after you explained what finger tight is! After watching your presentation on canners, I bought a Nesco Canner. I have a smooth top stovetop and didn't want to have to worry about the temperature. It is so easy to just plug it in and do the water bath or pressure canning methods. I didn't want to be bothered checking once it starts to process. For two people, it is the perfect size. I did 25 lbs. of beets. It took a while but it was so easy to use.
I would suggest you buy a Presto Pressure Regulator that comes with 5, 10, and 15 pound weights that make it much easier to regulate your pressure. For your elevations it would automatically regulate your pressure for you. You still have to watch your canner but you can hear it regulating the temperature instead of having to watch it. It jiggles allowing steam to escape when it reaches the pressure needed.
I have 2 All Americans. I dropped the lid years ago and broke my pitcock. They no longer made that. I replaced it with a rocker guage. I LOVE this setup. I can watch the pressure and hear the rocker guage. Does not need the babysitting it did without the rockerguage. When I inherited the smaller All Amercian(it will hold 18 pts,the larger 16 qts) I took the pitcock off and my oldest daughter gave me the 2 parts I needed for the rocker guage. I also had a pressure canner with a rubber seal I bough from a friend many decades ago when I 1st started pressure canning. It worked wonderfully until that seal dry rotted beyond repair while in use. It scared me to death when steam started spewing out after a LOUD pop. This was before home computers and I had no idea where to get a new seal. The canner turned into a nice water dish for my dog
Yes, we are going to do that in an upcoming MicroMoment. I rely more on the 15psi weight that came with the canner than I do the dial, but we show how to can using the dial in our videos.
I bought the weighted regulator as well. I don't really have to check the canner after the first few minutes, just stay in the house where I can hear the jiggle.

When i pressure can with my presto canner i use it as office or recreation time... i sit in a chair i bring in the kitchen where i can see and hear the canner with unobstructed path to it . I will work on household accounts, pay bills, menu and grocery plan, look up new recipes or I'll watch a movie or reada book on my kindle. Its also a good time to make family phone calls. Lots can be accomplished while you babysit your canner. Including meal prep, or freezer meals.
I have the presto and instant pot max canner as well as a carey. when I have small portions to can I use the smaller ones. the presto is a don't leave the room canner. I have electric stove and I am constantly monitoring the pressure. thank you for your video and so happy to hear I'm not the only one that watches constantly pressure readings. thanks Jim. and Ms Pam.

I have now 2 Nescos. It isn't a con to me that it only holds 4 qts. It fits my budget for snagging sale meats and canning meals. And my garden has small yeilds at a time. My con with the Nesco is with pints. 5 wide mouth go in very easily. You can't get the first one out without at least an ovglove. I love this canner. But, if I can ever afford the max...😁

Do not feel bad. You caught the misread. That happens to me all of the time. I read something and it makes no sense and I have to go back and re-read it and come down off the ceiling. I have the Nesco canner. I have a glass top stove so I wanted an electric canner. I really like it. The con of having to move the weight from exhaust to airtight is not a problem, and quite easy to monitor. You do have to unplug the canner when it is done, but no big deal. I am happy with it.

I had high hopes for my instant pot max. I purchased it earlier this year after seeing your tests. Mine however was dead on arrival for canning. It was never able to get above 97°. This reinforced the importance of not relying on electricity for this.
Electric appliances are amazing when they work, but a headache when they don’t. I purchased a presto 16qt canner instead. I now have a $100 paperweight with the max, but it was a valuable lesson learned.

We are sorry to hear about that. Why did you not contact Instant Pot Max and return it? Or get an exchange for a new one that works and not one that had the service tag removed, so you do not know whether it is used or refurbished? (If you get a "new one" that has the service tag removed, do not plug it in or turn it on. Contact the company. Or get a refund? And make sure that you post a review on the company Website about what happened. No axe grinding, just the facts. If a company representative contacts and says something to the effect, "we are a small company" as a justification for changing your review to something positive, do not fall for it. If your questions about the item that is sent to you in exchange for your original are ignored, write that up as part of your review. Ultimately, if you decide to exchange new/replaced item, send it back (tell them you want them to pay for shipping) and tell them you want a complete refund and that you are going to look for that product at another company. We had massive problems with our first power station and we got a complete refund and bought another brand, with which we are happy. It took about 30 days to go through the process and get our refund. (If you can talk with someone on the phone about your problem, do so.) Jim

Wonderful video. Still awaiting the launch of the IP Max in the UK :( Apparently, they are not going to now release the version you have but release the next generation :( In the meantime, I purchased a Swiss pressure cooker with a pressure monitor... Not ideal but it did pass the USDA recommended criteria and I'm on the coast, so sea level. I did consider moving to the US but it seemed extreme, just to have access to the best canners 😃

I had my husband get the Presto canner for me fir Christmas. I am excited to use it. I have canned in the standard stove top canner fir years but I'm afraid tovuse UT on my glass top stove. It popped and went on the last time I canned.

Last time I bought it, it was $59-69 for a 5 seat family license.

Thanks for a great comparison. I have another comparison question that I don’t think you have ever addressed. For those items that can be canned in either a water bath canner or a stovetop pressure canner at low pressure (5#), I.e. tomatoes, jam, relish etc. what are the pros and cons of one over another. The pressure canner is less time for a single run but could you keep a water bath canner boiling and just take out one set of jars and put in the next with a large amount of jars? Does the pressure canner at 5# over cook the food compared to the water bath canner? Does one take significantly more fuel than another? I started with a pressure canner and have never actually tried water bath canning. I have also seen that there is a steam canner for water bath canning using steam and no pressure instead of submerging the jars the idea is that you use less water.
You might Try Open office it has a spreadsheet and I do believe it can open excell spread sheets.

I've pointed this out once before but that rubber button on the top of the Presto canner is a safety feature and should a problem arise this plug is going to go flying. In your configuration you have this plug facing you, not a good idea! The remedy is to rotate the pressure gauge 180 degrees. This will put the rubber plug on the back facing away from the operator.
I have purchased two Carey Canners from Amazon. Both were defective. So I feel like the Carey Company needs to test their products better. 🙃 I still want an Electric Canner. But not sure about the Carey Canner.

Different topic: I see you use frozen veggies. I do that, too, and get lots of criticism for it. However, my results with frozen veggies are very good AND, I believe that (unless you have a garden) they are superior to veggies that have been sitting on the produce shelves for days. Thoughts or opinions on that? Anyone?
I think frozen is just fine-as it allows you to harvest your garden, get it in the freezer and then can on cold winter days. No rush to do it all during a hot harvest time and be all jammed up. Enjoy canning your way!

I am going to be canning vegetable soup mix this week and for 50 years I have canned it,(soup mixture) in half gallon jars like my Kerr canning book said. I recently found out that the USDA says to can in quarts and pints not half gallons but I did not know why. When you talked about the kill zone I realized that must be it. I have always used an All American Canner which I love but half gallon jars must not stay hot enough to be safe. I am disappointed that I can no longer use half gallon jars but I want my food to be absolutely safe. So quarts it is. My recipe is like yours except I use green beans instead of limas. The reason is the first time my then youngest grandson when eating my soup looked at me and said "why would anyone want to ruin a perfectly good soup by putting Lima beans in it." I laughed and switched to green beans in the next batch. Now that he's older he likes limas but I just never switch back. Thank you for your videos. I enjoy them so much and they are always a learning experience.

Thank you! I love my old presto canner. I have the instant pot max. I've only used it twice. The keep warm button stayed on for my first canning. After 2hrs I got the courage to turn that off. It had steamed out. The food was fine. Then I tried canning potatoes. As soon as I heard the steam come out, I turned the keep warm off. I was shocked to see that all the liquid was gone from the jars. Every jar had no water in it. That worried me. Thank goodness it was just 4-pint jars. I've been nervous to try it again. I keep going back to my old presto canner.
Make sure when you start the canning session on MAX you turn off the keep warm button in the beginning. It usually doesn’t take 2 hours to come down so if you waited that long you are safe.

We were not following the "canning your own soup recipe" where the USDA stipulates 50/50. Rather, we were using an older tested recipe that we then tested with my data logger to see if it was safe, which it was.

I am so thankful for you and your previous videos on the smart canners. It started me on canning almost a year ago and I am quite thankful and proud of my work. Question though. I have both the Carey and Instant Pot Max. Should the exhaust valve cover (I can't remember what you call it - the regulator?) Should it be replaced and or checked after a period of time to ensure its ongoing accuracy?
Question from a newbie here: my sweet husband bought me a canner for Christmas and I want to can some syrup. The recipe from my Ball cookbook calls for light corn syrup but I really would hate to add it to my home cooked goodness. Can I substitute something like sugar water, honey or agave nectar without wrecking the recipe and making it unsafe? Thanks so much!

I'm curious...why do some people use a generic 15 lb canner weight and not purchase a weight specific to their lower altitude? It seems like that would allow less constant supervision.
Precise psi is not necessary given that canner weights come in 10psi or 15psi or a dial, so apparently a range of psi is adequate. Our Presto has both a dial and a 15psi weight. If using the dial, we are supposed to hold it at 13psi, an impossibility on our setup, so we keep the dial between 13-15psi and watch the weight. When it jiggles we know we are at 15psi as well, so we have two 15psi indicators on our canner. It is best to think about pressure in terms of the lowest safe psi number. For instance if you live below 1000 ft elevation you must keep your pressure at least 10psi, but going higher is OK. For us at 5000 ft elevation, we must keep our pressure at least at 13psi but can go up to 15psi.

As much as an electric canner would be handy,,..our power goes off so much, I just could t trust it. I have two. Stove top ones I use in our boot room on a similar type stove, great video as usual. Now to find frozen Lima beans ❄️🇨🇦❄️
I was going to say in the video for people to make sure they turn the propane on a just a little bit and and ignite and adjust the flame to medium high depending to your needs. The other option was to turn the propane on low and ignite at the same time and adjust from there. Oh, the other caution, stay away from the burner when lighting. I got the frozen baby lima beans at a local grocery store. Thanks for watching our videos. Jim
I know right? Just a second too late and you get a big vhoom. Our burner ignites with a handheld lighter, so I always have my lighter flame ready and close to the outlet before slowly opening the gas, thus ignitingbit ss soon as it peaks out. Afterwards I close the main source before turning the burner off to empty excess gas in the pipe as an extra safety precaution.

Cherie C barley is a grain and not recommended to be canned. I’d add quick barley when opening the jar to heat & eat

After watching the video, I am still of the conclusion (a personal preference only) that I love my 23 qt. Presto and will stick with it instead of buying an electric. Thank you for such detailed learning. I love when you pull out your "gadget"! 🙂

I own a Cary/Nesco electric canner and an All American 921. I live alone, and with my arthritis, these two canners suit me beautifully. I find myself using the Cary all the time for both water bath and pressure canning. Sometimes I have both going at once! That way, the Cary keeps me busy, so I don’t get tempted to leave the All American unattended 😉 I love your channel, and your serious testing convinced me to purchase the Cary. Thank you! ❤️
