    A brilliant video on this is by a phd professor from RoseRed Homestead who tested the nesco to can meat sauce among other things. It did get into the kill zone, but only when she canned pints for 70 mins and quarts for 90 min. She determined that when doing thicker things, it must be processed longer than the recommended 70 mins like beef stew. I’m at 978 elevation, but I will definitely extend my time with low acid foods. There’s no reason not to to be safe.

      A pressure CANNER is not the same as an Instant Pot or other pressure COOKER. I love Rose Red's "gadget" that measures temperatures inside the jars throughout the process. Data is very important and weighs more than feelings.

      I too watch Pam and Jim on RoseRed Homestead. She does everything by the book and uses the "gadget" in the jar. I trust her enough that I did buy the Nesco canner and have used it half a dozen times already and am very happy with it. Thank you for all your research and for putting out this video.

    Great video! I love my Nesco pressure canner. Before I knew better, I used my Power Pressure Cooker XL to can small batches. However, nobody died and I live well below 2000 feet (Florida) so that's probably why I never had a problem using the PPC XL. I use my Nesco canner without hesitation. Rose Red Homestead did extensive testing of this unit and bottom line is it passed and she feels confident using it for her family. That's good enough for me!

      Susan, you certainly have an advantage since you are in a lower elevation. But I would feel comfortable with the Nesco even in a high elevation, using the green pressure valve. I LOVE RedRose Homestead! I was so happy to see the results of her tests of the Nesco canner!

    I'm part of a canning group on FB and MANY do not share your opinion so I always forward this video. We all know by now that just because something doesn't hv the seal of approval from the government...the GOVERNMENT, doesn't mean it's a fail. Hello?! I'm going to rely on a government entity to tell me what's good for me🤣

      Thank you, Jessica for your comment and for sharing my video with others. A big issue with the testing on the Carey/Nesco is that they don't indicate which valve they used. I found the email addresses for 3 of the people listed on the study and emailed them, asking which valve they used. I also asked them to send me a link to more detailed information on the study. Unfortunately, they didn't respond to me, so I still don't know.

    I love my Nesco. It's so much lighter and easy to handle. I'm crippled in my back and just can't manage the traditional canner anymore. I get better results with the Nesco, less evacuation of the jars and I believe they are kept at a more constant temperature while processing. And husband and I are still here! Thank you for your thoughtful research and presenting it in an orderly fashion.

    Wow, the Utah study was so poor! They should rename it "What MIGHT Happen If You Don't Read and Follow the Instruction Manual"

      Yes, and unfortunately, people quote it all the time. Now it's possible that they used the correct valve on the Carey. I reached out to three of the people listed on the study to ask about which valve they used. I also asked them to send me a link to a more detailed study. None of them got back to me. So I still can't say one way or another if they followed the manufacturer's instructions on the Carey.

      That 'study' was fatally flawed from the beginning. Peer review of a hypothesis occurs at the beginning of a study, and the flaws mentioned by other reviewers here are spot on.

    We been canning dry beans, potato's, green beans and many-many other food (s) in our Carey and Nesco electric canner for 3 years now and I'm still around at least until my wife figures out how to make it look like an accident.

    RoseRed Homestead has done proper testing on the Nesco, Instant Pot Max and the Presto Digital Electric Canner. She is a scientist (PhD) and did use a data logger for her testing. She has a number of videos so please watch all of them as she updated her information. She lives at a level of 5000 ft. I am looking for a decent price so I can buy the Nesco. Thank you for making this video.

    Thank you so much for taking the time to do the research and stating the facts. I know this was not an easy task and I appreciate your effort. This will be a great video for people to watch when they are deciding if they should purchase an electric canner, specifically a Carey/Nesco. I purchased my Nesco smart canner after watching your videos on this canner. After I purchased it, I started seeing some negative comments about electric canners and I decided that I just had to try it for myself. I had never canned before and I have always been very intimidated by the canning process. After your videos, I really felt that I could do this! I have been very delighted with the results I’ve obtained using my Nesco. All my jars have sealed and I’ve tried very hard to follow the directions to a “t”. It’s just my husband and me in our household, so the smaller batches are perfect for us. I’ve been able to can 5 pint jars or 4 quart jars at a time. I anxiously await all your canning videos and I do have confidence in my canner. Thanks again!

      Thanks so for all your support, Jeri! This was a tough one, but I felt like I needed to make it because there is so much fear mongering about this. I'm so glad you got the canner and have been canning up a storm! These canners make canning accessible for everyone. Like you, I prefer small batch canning, so the 4 quarts or 5 pints is perfect for me.

      It's probably because you have to know the science behind Canning. Like the pressure it should be at and altitude of where you live . It all matters

    In my opinion, there are many in our world that wants the population to be reliant on the Government and associated agencies and not have the ability to be self sustaining. If poor or impartial information is circulated to cause doubt in the population this can allow the continued control (brain washing) over a majority of the people looking to purchase these products or similar devices. Great video, I really enjoyed how you rolled this up nice and neat and poked it into the nay-sayers eyes!!! 👏🏻

At first, when I started getting these types of comments, I almost stopped publishing videos on this topic, but I decided that I wasn't going to allow myself to be bullied. I think some people don't like change, and for whatever reason feel compelled to "make" everyone agree with them. I felt that the misinformation was in a sense, hurting people, and that's why I decided to go ahead and make this video. Appreciate your support!

      I agree with you. But there is a place for testing too. I’m glad for the Center for Home Food Preservation. But I am so disappointed in this Utah study. The way it was done seems more like a political scheme instead of legitimate scientific research for the purpose of increasing safety. Although I am not LDS, usually the food preservation info they have is spot on. Since Utah has such a high percentage of LDS people, I expected more careful, legitimate research to come from there.

I totally agree with you about there being a place for testing. Testing is extremely important. The key is to conduct tests carefully, and to be open to outcomes different than you prefer. :)

    Great video! I am just about to purchase the Carey canner and also watched RoseRed Homestead's video on these canners. That you so much for your patience and grace in this video. I won't be recommending any one attend Utah State. In my opinion they were fraudulent and irresponsible with this test. And who lives above 7,000 feet?

    Girl you really nailed this and totally broke this down in plain and sensible language. I am new to canning and recently learned that it’s not wise to use a pressure canner on a glass top stove. I opted to get this countertop version for my own peace of mind. I am at sea level. After watching this video, I feel totally comfortable that this will be exactly what I need. Thank you!     I am so in love with your "Is the Nesco Pressure Canner Safe?" video! I had seen other presenters discuss a variety of electric canners; and I had decided that the All-American was not right for these two seniors living rurally (6 ft elevation) with propane as our source of cooking. This is stellar research...the logic is outstanding. Lucky for me, elevation will not be a problem with the Nesco/Carey canner. Keep up the good work!

    I love my Carey. I've been using it for 3 years now. You did an awesome job with all that information. I've been canning so long that I remember when the steam canner came out and everyone said it was unsafe, dangerous and not recommended and now they are used a lot and were found safe.

I am new to canning and recently watched a short video series in which the instructor repeatedly stated that electric pressure canners should not be used for canning based on research studies, but did not specify the studies. I greatly appreciate your attention to detail and willingness to share this knowledge with us.

      In support of the owner of this channel, I would like to offer this information on the Nesco Pressure Canner. The study that is cited is entirely flawed. Pressure Cookers are not the same as Pressure Canners. Many Pressure Canners also pressure cook food items, but pressure cookers are NOT to be used as Pressure Canners ever. So I wondered what the results mentioned in the Utah Study were referring to.
      Rose Red Homestead had the answers that I agree with for my family in regards to the Nesco Pressure Canner. Pam actually purchased a data logger, at considerable expense, which she placed inside several jars of processing food and presented her findings. Verify your own information, but in the end, Pam found the Nesco Canner rated the best of 3 various brands of Pressure Canners.
      In short, she found that lengthening the processing time to 90 mins for quarts and 75 minutes for pints brought the internal temp up to the sufficient heat and pressure to the " kill zone" in eliminating botulism spores or salmonella.
      Curiously, it should be mentioned that Rose Red Homestead comes to the RUclips community from a high plateau in Arizona of over 5000 ft above sea level. She used the correct "green" weight for proper psi, not the "black" one that is to be used for elevations under 1000 ft above sea level.
      On the results of her studies, I purchased this amazing gadget and bought one for my sister as well, over and above any other Pressure Canner out there.
      I was very afraid of Pressure canning, let alone an electric Canner. But here I am along with this channel's owner defending my purchase.
      Good day, ladies and gentleman, happy electric pressure canning. I sure am.

    I recently purchased a Nesco electric canner after seeing a video by Rosered Homestead channel . She tested the Nesco canner with an instrument ( a data logger) which I assume is the same instrument that the agency that run the tests uses. Her data came back showing that the Nesco was safe to can with given that the temperature achieved was very much so in the “kill zone” for the time needed and more. That may me feel confident enough to purchase one. Then I found this video and I am very impressed how you interpreted their reports and the way you explained it to us . I am more confident now. Thank you for taking your time to make such a wonderful video.
    Is funny how they tell you don’t do it since we don’t know. 😊 That is so typical of the government agencies. But they are very quick to approve medications to later say they cause this or that. 😮

    Thank you for this. I'm surprised that when the tested the Instant Pot for pressure canning that they didn't use the Instant Pot MAX that actually has the Pressure Canning function on it.

      I thought the sam thing myself. They were testing pressure COOKERS not canners. No wonder they failed 🤦‍♀️

      RUclipsR....Rose Red tested, with the correct data device, the Presto Electric canner and the Instant Pot Max.
      Her findings were interesting, but I would love to see all Electric pressure "cookers" testec as well.

    Thank you for sharing your research and experience information on the Nesco canner. I watched Pam from Rose Red Homestead test the Nesco canner too and she thinks it’s a great pressure canner. I felt comfortable with her research and testing, but now with yours I know this is the pressure canner for me. I am in a lower altitude area, so I should be fine to pressure can in it. I had to go by what I consider to be common sense since I don't have her background nor her handy gadget. It's great that her tests verified what I already thought was the case.

    Have mine waiting in a cart but was researching before I finalized the buy and came across your video. Appreciate all the info. I believe, but don't quote me lol, that USDA only approves of commercial canning, not home canning and especially not home canning of meat. The XL canner actually showed a video of a woman canning one single quart jar laying on it's side. Probably where the study got that idea. I do have the XL but quit using it several years ago. I do have 3 Instant Pots but no way would I use them for canning as they are not made for canning. The Nesco looks like the best bet for me. Pricewise the 9.5 qt is most economical for me to buy and use since it is almost 200 dollars less than most of the other electric canners (Ball being one of them and Presto the other). I thank you. Now I will go finalize my buy.

    Thank you, hun, for the update. I've discussed this topic with you not long ago. I still have and love my Instant Pot Max which has the canning feature but only for pint jars or smaller. I have no issue what-so-ever with the Nesco canner. I have not purchased one, yet. They are readily available and I watch the sales on them all the time. I have been watching for the Presto to come back in stock. I do know one thing and that is I will be purchasing one or the other of these electric canners or maybe both! I've been canning for over thirty years so the opinions everyone has are always interesting to me. Don't let them rain on your parade. Also, one thing to point out too is that the USDA is very underfunded and can't recommend canning products that have been proven by the average person to be safely canned. Keep posting your canning videos because I enjoy them and so do others!

      Janice, thanks so much for your thoughtful comment! The Instant Pot Max is one canner that I looked at. It looks interesting! I do want to be able to do quarts, even though I do pints quite a bit. So that is one reason I chose the Nesco over the Instant Pot Max. I have also been watching the Presto. That is definitely the top of the line from what I know and I'd love to get one someday. I will indeed keep posting my videos, thanks to the support of people like you! :)

    Thank you so much for taking the time to explain about the Nesco/Carey canner! my brother & S-I-L use there's all of the time & I bought one last year passed on their recommendation. The only info I could find on the safety are the 2 that you mentioned. I'm 800' above sea level, so I discounted the Utah study & I had trouble making out the NCHFP article. I'm nervous already about canning, but you have done SO MUCH to help ease my mind!

    Thank you for this interesting, well-thought out and researched video. After seeing Pam Cantrell (Rose Red Homestead) testing this canner and knowing how much she researches everything, I decided to buy this canner. Your video was icing on the cake for me. It is almost unbelievable and very irresponsible for the Utah Extension to have put out such an illogical, inflammatory “study” devoid of scientific facts! It is truly sad for Nesco/Carey, as well as the other two manufacturers.

I do agree that the way the test was conducted was really bad. The thing that motivated me to make this video is that I saw so many people referencing that study, and then even people who had already purchased the canner were afraid to use it. I don't know if you are aware but the channel Rose Red Homestead has been doing it's own independent testing with a data logger and her results support your conclusions about the Nesco. She is also testing at a higher elevation. What is interesting is that she has been testing meat spaghetti sauce and found that the NCFS recommedations barely meet the guidelines for killing botulism with the stovetop canner. She is increasing her times with this specific food to ensure an appropriate kill time for both the stovetop and Nesco canners. She will have her final conlusions on the Nesco in the near future, but I expect that they will be positive with qualifiers about certain food processing times. These experiments and evaluations of research points out that while a respected and fabulous resource, the NCFS has it's own issues and everyone should take steps to make good safety decisions instead of just relying entities to tell them what to do.

I was pleased to know that the Nesco passed with the longer processing time. I already was processing anything with meat for the longer time. I tend to look at the processing time for each ingredient in something, and choose whatever is longest.
      I do look forward to the rest of her tests on the Nesco and if needed will adapt what I do based on what she discovers and recommends. I don't have one of those fancy data loggers, and so I was really happy to see her buy a Nesco since that means she can do the tests for me. :)
      I was surprised by the results of both of the Prestos - that the electric one didn't pass at all and the stove top only passed with the long time.

    thank you so very much for the in-depth report on the Nesco electric canner. I have been seriously thinking about getting one. I thought it would be nice to be able to can just a few jars at a time once in a while instead of a lifetime supply. I have also been put off by the negative reports by other seasoned youtube canners. But as I always do I viewed several videos on the subject to get all the different opinions and so forth and think you have pretty much laid my mind at rest as far as the Nesco goes.     I've been using my Carey canners for about 3 years, and I have never had a problem with anything I have canned. I did buy a second one too, and they are always set up in my kitchen. Thank you for your well researched report. My health dictates that I stay away from salt and all other preservatives, and I don't know what I'd do without the Careys.

    So thankful for your deep coverage of this canner. I bought one in 2020 and had trouble with the electrical cord--twice. The company was quick to respond with a new cord, but it too failed. When I contacted them again they replaced the entire canner with a brand new one. The only challenge I have had with canning some foods is I get liquid lost from some of the jars during canning. Not the cool down, during canning. Frankly the results for my thin beef stew tasted like dish water. I am hoping that the fault was mine in poor bubble popping before closing the jar--or something else. All the other foods came out great. Thanks again.

      I've had issues with that as well. I recently realized that in the manual, the instructions for pressure canning state to add 8 cups of water seemed a little wrong to me. I had until now been filling it only with 3 jars instead of 4, but once I tried 4 I found that the water level was sitting ABOVE the tops of the jars! Their recipes for pressure canning (at the end of the manual) however state to fill the water level until 1/3 of the height of the jars are submerged, which makes much more sense. I'm at this very moment in the process of trying this to see if it will make a difference. I'm just wondering if perhaps you had the same issue.

I am pleased with all the other meats--chicken, pork, lamb, etc. We are not on the road in summers (from Phoenix) anymore so the need to preserve everything is decreased. Please let me know what you discover. I would very much like to get a solid recipe and technique for tasty results.

    Thank you for your intelligent and thorough explanation. In this day and age we're learning that our government agencies are mostly against we the people. Rose red homestead had an amazing test with the temp gadget. I recommend all watch it if considering buying this canner. I just got it and canning venison today. Love it so far!

    As I have never canned before I did extensive research on different types of canners. Included was the research done by Pam of Rose Red Homestead. I have to admit yours was one I also read. As of last even I bought and am awaiting arrival of a Nesco Electric Canner. I want to thank you for helping me out on this decision -- and even though I am slightly overly cautious to try any type of canning I feel it will all turn out well as long as I follow directions to a T.

      Thanks so much for your comment, Janie! I have also learned a few things since making this video, that make me even more confident in the safety. As an example, the Utah study based the failure of the canner on 250 degrees Fahrenheit for the kill zone, which is the temp required in commercial canning. The temperature required in home canners is 240 degrees Fahrenheit, and even in the Utah study, the Carey canner reached and maintained that temperature. I personally think there was just bias in the way the study was conducted, which skewed the results. I was so happy when Pam did her tests!! I love her videos.

    Wow...Thank you so much for sharing this video and your research! I bought a Nesco canner and was considering returning because of the comments about safety but wasn’t sure because the concerns seemed unsubstantiated. We are at just below 1000 ft so the Utah study is even more of a non-issue. Think I will be keeping mine. Thanks for answering a lot of the questions I had with actual facts.

    That was very informative and you did your homework. I can using a Presto old traditional canner I got from my grandma on a gas stove, it's lots of fun, but I sit there the whole 90 mins watching the gauge and adjusting the heat. So someone said the Instant Pot Max was the way to go, research showed me that doesn't get up to temp so I was bummed. I did a Google search on All Electric Canner's and saw the Nesco NPC-9 and liked that it was larger for one, and couldn't find anything negative about it, then found your video. Even the food I have processed and have stored with my old Presto, there's nothing saying the Tri Tip I stored 2 year's ago is contaminated, I just have to go on sight and smell, just like store bought canned food. So great video! 😎👋🥰

    its ironic i just pulled my new nesco from its box and i just found this video. 23 yrs ago i watched an epic pressure canner explosion(1 person hospitalized) and i vowed never to presssure can. waterbath recipes are a little harder to find and sometimes its hard to try to convert processing techniques from pressure canning for what im doing so i looked for a canner that was automatic so i could not be in the same room. i got lucky when i bought the nesco and you got rid of a lot of fear in me with this vid. im still not gonna be in the same room nor will any of my family members. safety first. thanks again. im canning water today(testing it out)

    Thank you for this very interesting video. I just purchased one for by birthday and am looking forward to canning. Now, I too have a stove top Presto 16qt. canner. Dr. Cantrell, the red headed lady from Rose Read Homestead, tested three different electric pots with Nesco being one of them. She canned hamburger in the Nesco. The results indicated that the hamburger reached the necessary temperature within the time frame suggested in the Nesco Manual to kill the spores. After researching this canner, I decided to purchase one.

    This is a great video. I stumbled upon your channel because I am trying to research electric pressure canners. They are not cheap and I have to consider carefully if the purchase can be justified. I'm getting older and I cannot lift my stove top canner like I used to. If I could just sit the canner on my countertop and let it cool down naturally, it would make things easier. There's another channel, I believe it's called Rosered Homestead (?) She has a great review of the Presto electric canner and she is a scientist and did her own testing. She recommended that canner BTW. I don't know if she tested a Nesco or not. But I found your video informative and interesting. Thank you.

      Hi ML, thanks for your comment. Rose Red Homestead did indeed buy and test the canner after I did this video. It passed with flying colors! I think the Nesco is great for older people because like you said, it is easier to move. I also like that it's small batch canning, so it's not as much work as canning a large amount at a time. Plus, you may not eat as much without as many mouths to feed. So all around I think it's a great option for those of us who are getting older.

    I bought mine a while back but haven't used it. I wasn't aware there was an issue. I just loved the idea of an electric because my horrible (new expensive) stove is untrustworthy in the temperature regulation department. I really want to do small batches only.     My question is do you have to have a certain amount of jars in the canner during processing time for it to process correctly!?? Example, I only have 2 quarts of food to pc? Or 3 pints or 4 half pints!!!??

    Thank you for your excellent and clear presentation on the Nesco/Carey. This is just one example of the subtle ways test results can be skewed towards chosen outcomes whether it’s canners, medication, dairy products, or whatever! I was doing research on a pressure cooker canner for small batches that hardly warrant getting out all the heavy equipment. Rose Red’s testing was what decided me along with choosing the brand: Nesco/Carey. Not only the easiest, most reliable, but also the least expensive! What’s not to love about all that?

    Absolutely loved this video. I'm about to purchase one of these because it seems to me to be a lot more hands-off than a stove top canner, and definitely less risky. One of my biggest fears has always been I get distracted not paying attention to the heat build up on my stove top canner and I reach a dangerous pressure and create a bomb. This system appears to eliminate that possibility. Anyway, I really appreciate all your research, and living in Utah, I find myself a bit of shamed that the University of Utah submitted such a faulty study. Anyway, thank you again.

      Gene, thank you so much for your kind words! Your comment just made my day! I do agree that the safety features built in to the canner really help! When I used stove top canners, I'd always kind of wonder, "is the weight rocking enough? Is it rocking too much? Should I turn the heat up a bit? Or maybe I need to turn it down a little!?!" You simply don't have to worry about that type of thing with this canner.
      I do recommend that you stay somewhat nearby so you can keep an eye on it, but nothing like what you need to do with a stovetop canner. For instance, I check periodically to see if it's reached the "E10" stage because then I know that in 10 minutes, I need to switch the valve to airtight. (This will all make more sense when you use the canner.) Once I switch it to airtight, I then feel like I can go outside and water my garden, take a shower, etc. In other words, I don't have to watch it like a hawk like I do with a stovetop canner, which is nice!

      @@StockingMyPantry not to mention that USDA recommends that the stove top models have the pressure gauges re-certified for correct calibration periodically. I have never met ANYONE who does this.

      @@antlion71 true! My particular stove top canner has a weighted gauge, so I don't have anything to calibrate. This is one reason I went with the one I have. But it's true that if I had to take my canner to be recalibrated, I would probably "forget" to do it.

    I have a Carey canner. I canned turkey stock, turkey meat, beef stew, and some soups since November 2021. Made turkey-rice soup earlier today, which were the first canned items I’ve used. No botulism, illness, etc. I live at a 92 ft elevation, and so far so good. I’m going to be reviewing my canner, and will link to your video when I do. Thanks for your research on this!

And so I looked up more information and came across a video that said you can't trust electric canners and with some of the reasons you stated here . I love that the basic process used with the Nesco follows the same steps as a stovetop canner - e.g. venting for 10 minutes before switching the valve to airtight. I did find it a bit confusing when I first used it, just because it was a new device. So, I recommend having the instruction book out and going step-by-step the first few times you use it until it becomes second nature to you.

Right now that's the Nesco at $113 (amzn.to/3YNxmr9) compared to the Carey that is currently $157 (amzn.to/3LM9Gvs). The only difference between the two is the logo on the front.

    Super informative. I've been eyeing an electric canner for a long time. I have a 23-qt canner and sometimes I just want to do a small batch, especially when funds are limited and I see a good sale on meat. Now I won't have to drain my bank account buying 20 lbs. to run a full canner. This will allow me to still get food on the shelf as I can afford it. THANK YOU for this vid!

      I own the 23 qt Presto, too. *The minimum size canner load is 2 quarts or 4 pints* . You can easily do small batch canning in it. BTW, the Presto 23 qt weighs 12 lbs, the Nesco 9.5 weighs 22.2 lbs. So in terms of handling these units, your 23 qt is easier. That's important to me as I'm over 75 years old and have issues with lifting heavy objects.
      If you want something smaller (10.5 lbs), the Presto 16 qt is another, far less expensive, option for small batches. It's currently $78 at our local Walmart. I have one of those, too. Bought it for small batch processing of pint jars. Plus I can use both of them, when doing big batch processing during harvest season or taking advantage of good sale prices.

      @@oldtimerlee8820 Thanks so much for sharing your thoughts and experience. You are right about the weight of the Nesco. However, the removable inner pot weighs next to nothing, so unless someone just likes to cart around heavy things, I don't know why anyone would walk around with the whole unit. Since you only need to carry the inner pot, it's a lot lighter than a Presto (which I also have). You also use less water in it, and since water is heavy, that's something to consider as well.
      A couple of other advantages is that you can plug it in right next to the sink, and at least for me, my stove is not right next to the sink. So I find it easier to fill and then dump the water, again, only moving the inner pot to do so.
      It's also much easier to stick the Nesco in a standard size kitchen cabinet, where a Presto (even the 16-quart) won't fit. I also don't have to worry about the type of stove I have - glass top, induction, whatever - it simply doesn't matter since I don't use the stove.
      Finally, since the inner pot is so small (similar size as the inner pot in an Instant Pot), it's easy to submerge in water in the sink, or stick it in the dishwasher.
      Having said all of that, I held on to my Presto but after getting the Nesco, I stuck it in the shed, because it's simply easier to use the Nesco. I look at my Presto as "in case of emergency." I'm glad to have it, but hope I never have to use it.
      I think the bottom line is to use whatever works for you. I do think that as you age even more, you might find it easier to handle the Nesco, since you can work with it right next to the sink, and since the inner pot is so light. If desired, it's small enough to leave it on your kitchen counter, and never have to move anything but the inner pot.
      Regardless, the main thing is that we are preserving food, and stocking our pantries in whatever way works best for us! Congratulations to you for continuing to preserve food at the age of 75+!

      @@StockingMyPantry Thank you for your kind words. And, I agree - What works for you may not work for me and vice versa. As to the Nesco I can't keep it near my sink. The space between my sink and my stove is my primary work counter space when canning. Only enough space on the other side of the sink for a dish drain & not within reach of an outlet. The Nesco wouldn't have a permanent home on my kitchen counter top, thus I would have to walk around with it.
      Plus, both my 23 and 16 quart Presto canners fit into a lower kitchen cabinet nicely. They are completely out of the way, until I need them. And, a lighter load to move either one.
      Carrying water isn't an issue, since I have a pitcher with quart markings, purchased especially for caning. (Comes in handy for other uses, as well.) I just fill the canner, after it's in place. Same pitcher, same approach, if I had a Nesco.
      Glad that you kept your Presto. Another disadvantage that I don't see mentioned about the Nesco is that it must have electric power to function. All heat producing electric appliances, require considerable power. This is especially important for folks who plan to can what's in their freezers if they don't have sufficient power to maintain them in a grid down. I can use my Presto on several different heat sources, in a grid down.
      A few years ago, I bought a SilverFire Survivor rocket stove (wood burning) after seeing several demonstrations of pressure canning on one, if the need arises.
      A side note, FWIW... My first Presto was purchased in 1972, when I first learned how to pressure can. It is still operational. I put a new gasket and an adjustable pressure regulator on it this past summer.
      In thinking about this discussion, I wonder how many useful years of service would an electronic pressure canner with modern plastics provide? The list is long of food prep electric/electronic items that have bit the dust after a few years. One of the reasons I use a manual can opener. Got tired of buying electric ones. :-)

    I have a power xl that I have been successfully canning with for years. I recently bought a Carey and am unfortunately so spoiled by my power xl that I'm sending this one back until I can get the bigger power xl. I just want to pressure can quarts. Lol Thank you for this information. I cannot believe the didn't test these below 2000 ft. 🤦🏼‍♀️

      Thanks for your comment, Katie. Are you in a lower elevation? From what I've heard, the Power XL does work well in lower elevations. I totally get you sending the Carey back, because it's definitely easier to stick with what you know. I've considered getting an Instant Pot Max, but since it's so different from the Nesco, if I buy a new device, it will probably be another Nesco. I am in higher elevations, though, so really need one made for that.

    Love your channel I am so glad you did this I just got a Nesco have not used it yet but I will know some of these videos had me thinking I made the wrong decision I chose the Nesco for one it was what I could afford and I am older and it would be easier for me to use so please keep it coming you are helping a lot of people feel better about there decision

      Penny, I'm so happy to have met you. I appreciate all of your kind words! The way you feel is the exact reason I decided to make this video. When I saw some people make videos against it, and then saw in the comments that some people had the canner but were afraid to use it, I felt I needed to say something about it. I think this canner works well for a lot of people - people living in a small space and want to do small batch canning, people with glass top stoves, or people who don't want to (or can't) lug around a big canner, etc. I think I've only used my stove top canner a time or two since getting my Nesco.

      @@StockingMyPantry You're very welcome, I came across your video whilst learning about canning and was really pleased to see someone else who is brave enough to point out that the current thinking about electric canners is out of date and not based on robust research.
      I'm retired now but when I was working, I undertook a lot of research. I also looked at the USU research and came to exactly the same conclusions as you - I would never have put my name to such biased and poorly documented research. It seems that all the negative 'press' and opinions concerning electric pressure cookers with a canning function are based on a view that was stated back in the 1980's by the USDA (I think it was them???).
      I'm in the UK where canning isn't as commonplace as it is in the US and even the UK Government information refers back to the US websites.
      I'm actually very new to pressure canning - in fact, I'm still at the research stage although I've just bought an Instant Pot Pro Plus which is virtually identical to the IP Max - both with a canning function.
      My only reservation is that it only takes 4x 1 pint/500ml jars rather than the 'recommended' 4x 2 quart/1L jars. However, *RoseRed Homestead/Pam Cantrell did a very good YT video which tested the IP Max using a datalogger to monitor the internal temperatures of the jars whilst canning. (If you're not familiar with her, she is a retired US university science professor and does a lot of YT videos on 'self sufficiency' etc.) Her results showed that the IP Max met all of the safe canning requirements even though it only takes 4x 1 pint/500ml jars.
      The only differences between the Max & the Pro + are that the Max has the ability to enter your elevation (which adjusts the processing time) and the Pro+ can connect to Wi-Fi but you can't enter elevation. That said, inhabited places in the UK are all below 2,000 feet and I almost at sea level, I feel confident that the 15psi will be more than adequate for canning meat etc.
      (*Pam Cantrell lives at 5,000 feet elevation.)

    Thank you so much for this. This has re-convinced me to start using my Nesco. I started to get a little concerned about using it and bought a Presto stove top canner. you brought up such good points about approval, safety and other issues. So today, I will start to use my Nesco to pressure can my ground pork. Beside, I do like my Presto canner, but it is a pain in the neck to keep adjusting the temp on the stove. I have to watch it Constantly and adjust. I’m new at canning , but I’m having a lot of fun learning. I am new to your channel as well and have subscribed. Thank you for this timely information!

    This is a great video! I have the Nesco canner. Canning rhubarb today using the water bath method in this unit, because my house steams up so bad when I use my enamel water bath canner. I did my research as well, but you did a great job! I feel that the unit is safe, regardless it’s important to follow recipes. I would never use my instant pot for canning as it’s labeled and marketed as a pressure “cooker” not a pressure “canner”. From what I’ve read the pressure cooker cannot reach the high temperatures that the electric pressure canner can. I appreciate your research and thanks again!!

    From what I gather you have to let the pressure canner come to cooling temperature after cooking before opening lid. The studies I’ve seen doing pressure in jars all suggest this cool down on its own as Food continues to cook even while it’s off. They used the temperature gauge like USDA uses. I bought the Nesco and plan to can safety stock meals. ❤ thanks for sharing

      Yes! Accordiung to the instructions in the manual, you have to let it sit for at least 60 minutes before opening the lid. I find that especially when canning quarts, it takes 90 minutes before I can open the lid. And that is definitely an important part of the process. Thanks for your comment!

    I have listened to a ton of videos on the Nesco/Carey. I think you did a very logical study yourself and I appreciate the time it took to do that. Thank you for your details. Between your videos and Rose Red who actually did test better than the study you have sited, I feel more than confident in using my new Carey. There were concerns about viscosity of different foods like meat sauce. But since then, I believe it passed the test to extend the time. Great job! I will be listening more!

    You are oh so correct on so many levels here. Testing things for things they were never designed for isn't really a study at all. I run into this in other areas, guns. People complaining that things don't work out their way using something it was never designed to be capable of. Peace Friend.

      Glad it was helpful! You, and others like you are the reason I decided to make this video. I've known people who bought the canner are afraid to use it due to what I feel is misinformation. I think that even at high elevations, it is safe to use. Since you are borderline with the elevation, you might want to use the green valve to be on the safe side. I'm at about 1500 - 1600 feet and am using it.

I have had mine for a couple years (when it was still owned by Carey) and have only used it a few times, once for canning chicken stock. But, was also afraid to eat it after it sat on shelf *sigh. Now, would like to pull it out and give it another go.
      My elevation is 957 feet. I think I will go with the 15 lb weight based on both yours and Michelle's comments. But have another question: when using the 15 lb weight, do I need to change canning times? I am new to pressure canning and don't know if weights effect canning times.
      I have learned also that I should use 8 cups of water for pressure canning, and just use the "High" button and then time setting when using it for pressure canning. Also, set to exhaust until E10 is done, then move to airtight when it beeps to let me know it has built up pressure and the canning countdown begins. Anything else I should know? Planning to can either beef and bean chilli or beef and veggie soup in the next day or so.

      @@heidie2081 great questions! Using the 15 lb weight makes sense since you are right at the limit for the black valve. Regarding the time, you don't need to add additional time. when pressure canning. However, if you do water bath canning, you do need to add time. I don't have a chart with the increased time amounts in front of me, but I do know for the low end of high altitude, you add 5 minutes. So if you use your canner to water bath can, and the recipe calls for 20 minutes, you would set the time for 25 minutes. Hope that helps!

      I'm in a similar situation. My husband and I live with and care for my 92-year-old mom, but she has a pretty small appetite. Also, we don't have a ton of room to store things, so I don't have the space to can dozens of jars of the same food. At some point in the future, it will likely be just my husband and me, so small batches are great for us. Also, I like not having the work of massive canning projects, so all around, small batches work great for us!

    Thank you for this video! I am new to canning and have only been doing foods I can water bath process, but I would like to try low acid food canning. Since I have a glass top stove, I am looking into an electric canner. Your video has been very well thought out and researched. Lucky for me I am under 2,000 ft so your video has relieved some of my fears of pressure canning.

I think even at a high altitude, it is safe to use, and it will definitely work great at under 2,000 feet. If you are over 1000 feet, be sure to use the green pressure valve, and you'll be in good shape!

    Great video. I have the Presto Digital Electric Canner and love it…..
    I recently also bought the Nesco Electric Canner and used last week and also equally love it ….. between the two canners I can do 9 Qts (Presto 5 / Nesco 4).
    I have a regular Presto stovetop type canner….. but have a smooth top type range and on MY RANGE I struggle incredibly with my burner getting it to stay at a temp for my jiggler to be at the sweet spot to can…it is either too HIGH or it fluctuates and drops too low…..I gave up on using my Stovetop type canner to Pressure Can on MY CURRENT stove and now just use for Water Bath canning currently.
    I see many people with their smooth top ranges have success..however I finally gave up trying in my case.
    I’m at 1200 ft elevation so on the Nesco I use the Green weighted dial.
    I have watched RoseRed channel and she also has done her own personal testing and opinion on Electric Canner’s that is good.
    Your opinion is spot on, I just came upon your channel as I’ve been watching videos on users of the Nesco….. I personally ❤️ it

      Thanks so much for your great comment. I'm glad to hear you love the Presto, also. I recently bought a second Nesco. It was on sale for around $104, and I couldn't resist! It's nice to run two at a time when I have a bigger batch, or simply want to can two things at once.
      I also have the Presto stovetop canner. I haven't used it for a long time, because the Nesco is just so much easier. And yet, I hold onto the Presto, "just in case." My husband and I currently live with my 92-year-old mom in her home, and she has a gas stove. We own a condo in Colorado that we are current renting out. We needed to buy new appliances for it, and I bought the only electric stove that has the coil burners (General Electric). I like the way that glasstop stoves look, but wanted to be able to can, use cast iron, etc. so went for the coil burners while that option is still available.
      You are doing the right thing by using the green dial.
      I love RoseRed Homestead! She does such a great job. Interestingly enough, at the time that I made this video, she was still opposed to electric canners, due to that Utah study. I'm glad she came around and decided to do her own testing, and approves of this new method. I think it can be hard for people to change, so good for her for being willing to try a new way of doing things.

    I'm in the UK and there's nothing over here like the State Extensions but I would hazard a guess that the Utah State Extension is primarily focused of residents of Utah rather than the rest of the USA.
    As Utah I believe, has an elevation higher than 2000 then their concern would be the use of equipment at and above this altitude and have not concerns below that as it would not affect it's residents.
    I suspect that it might have been the case that the products tested were being used by Utah residents for canning (even the ones which stated they weren't suitable in their own documentation) and, with reference to your comment about being in a litigious society, the State Extensions decided to test them to (A) Warn/Inform residents that they weren't suitable for pressure canning in Utah and (B) Cover themselves in case someone decided to sue them because they hadn't said that people couldn't use them.

      Great comment, and that's a good possibility. But that didn't appear to be the focus of the study. It would have made a lot of sense if the premise of the study was to show that it's unsafe to use devices intended for low altitudes in high altitudes. Or that it's unsafe to use pressure cookers that are not made for canning. (The latter would be true in any altitude.)
      A big challenge here is that people all over the U.S. look at the material the state extensions publish and then make decisions based on that.
      I did email them and ask if they had a link to more detailed information on the study than what I found and also asked if they used the green valve on the Carey (for high altitudes) or if they used the black valve that is on the canner when you open the box. Unfortunately, they didn't respond to the email, so my information on details regarding the testing is limited to the study that I came across.

    I’m pleased to report that I’ve been using my Carey to can pickles, pickled beets, apricot jam, preserves, and filling. It’s so convenient to use to sterilize my jars and keep them hot while I prepare the product. It’s difficult to fit 5 WM pints inside, however. Well, it’s hard to get them OUT. I have my system down for water bath canning, now to use the pressure canning mode on some chicken. Your video is extremely helpful so I watched it again 😃

    I was doing some research on this Canner, I also watched a video by RoseRed Homestead that covers her own research with the same device they used on this study…..it also passed all her test. I also want to say the way you handled the “concerned comments” is amazing. I don’t have patience with people like that. Lol thank you. I do feel I have enough info to make an informed purchase of this canner.

      I wanted to let you know that I saw another comment of yours on my Burrito in a Jar video. I'm having issues with comments and while I can see it in my notifications, I can't pull it up. (This comment of yours that I'm responding to ended up in my spam folder, who knows why.) Anyway, I couldn't read your whole comment, but I saw you asking if I like the canner. I do! It is so easy to use, and it's a nice size. I like being able to do quart size jars, even though I often just do pints. It's nice having the option. I don't tend to can large batches at a time anyway, and so this type of canner is perfect for me.

    I worked as an ASME certified quality manager, pressure testing high-pressure devices, for years. You simply _cannot_ avoid following manufacturer directions and specifications, and approved testing methods to declare _anything._ It is unsound, unsafe, and ignorant, and that is exactly what the Utah school did.
    Now, I find I myself must follow your advice and not assume they are not evil, but rather, incompetent. Grossly incompetent. Great video, thank you for your work debunking this sham test.

      Thank you so much for sharing your experience. It is so important to follow manufacturer instructions, especially when evaluating a product. I have also learned things since I made this video. For instance, the criteria they used for testing the canner was based on maintaining a temperature of 250 degrees Fahrenheit which is the temperature required for commercial canning. The temperature required for home canning is 240 degrees Fahrenheit - which the Carey canner maintained. So not only were the manufacturer instructions not followed, the criteria they used to fail the Carey was more stringent than it should have been.
      If you're interested, RoseRed Homestead has done some independent testing of this canner, and it passed her tests. She is just a "normal" person with a science background, with a lifetime of canning experience. So, it wasn't an official laboratory test, but she is very conscientious, and I think you'd find her videos helpful.
