Finally found a video that explains how to use the Nesco digital canner. I only have water in jars as I am breaking mine in. I unplugged it but move to exhaust. I am sure glad I didn't have my shredded chicken in there, but I will wait when I get it in there later this evening. Thank you for explaining this all better than many video's I have watched the last few days.

The best explanation for this canner; I bought it in August, just now trying it; I made a mistake and closed to airtight when the canner said E10, then the timer appeared; I panicked, and shut the whole thing off; I waited until I knew the pressure was gone before opening; two hours later, I started the process again; when E0 displayed, I turned the knob to airtight; I was beginning to panic again, as it took 2.5 minutes until I heard the beep, and the timer appeared, skipping over the rolling display; I guess all is well; I will know in 44 minutes. A very stressful first time experience, but I know it will be worth it.
I love my carey canner, been using it going on 7 years. I have an All America stovetop canner but frankly it scares the hell out of me and I've never used it.

I use my Carey for small batches, but appreciate my All American 921 when I’m canning things like beans, because I can double stack pint jars. I have to confess, that it sat in my garage for about 5 years before I had the courage to use it 😂
Wow! 5 years is a long time. But I totally get it! I got my first pressure canner from an older woman I met in the grocery store. How in the world we got started talking about canning, I can't tell you. But she was old enough that she had given up canning, and so gave her canner to me. And it sat in the basement for years, before I got rid of it. But maybe that planted to "canning seed" in my mind. I later bought a Presto stovetop, and actually started using it right away. I guess I was just ready. And then I found out about Nesco, and have never looked back. Having said that, I have considered getting the larger Presto digital (not currently available), to be able to can more when I want, but am not totally convinced. I do like the ease of small batch canning, but can see the value of canning more at a time.

I'm so glad to hear that! And I agree that the Nesco manual leaves something to be desired. I think part of the issue is that it's not very visual, and it's not always easy to understand something from text.

it is rather strange, isn't it?! You should notice that when you first switch the valve to airtight, that the steam coming out stops. It will be making some racket, and then go quiet when you move it to airtight. That is how you know for sure that you went from exhaust to airtight. Then, as the pressure builds, the steaming will start again, to keep it from becoming overly pressuredized. I just wanted to mention the change when you first change it to airtight because that is ineed a good way to know you've done it right. After that, it can steam away, lol.
I agree 100% that it would be nice to live closer! I also agree about the review. Actually, one reason I don't want both a Nesco and a Presto is because I get confused easily, so I don't really want to switch from one canner type to another. I'm sure it's no big deal to a lot of people, but I need the repitition and consistency.

I never got the E10.. it went straight to the time. I did it twice same thing so I switched to airtight. It still releasing a little. I did pints with pinto beans.. partially cooked beans prior to start canning. I am used to the 10 minute middle step.
Thanks for sharing. The manual says that it can skip E10, though I haven't ahd that happen myself. When you move to E10, does the valve "drop down" a bit? I ask because the pressure valve is raised up when on Exhaust and drops down when you move it to airtight. The valvle doesn't always light up the way it should. If you're unsure, try fiddling with it a bit when you're not canning, until you get comfortable feeling the difference between airtight and exhaust. I hope that makes sense. If not, please feel free to ask for clarification and I'll do my best to make it clearer.
It's an grounded extension cord. I use it because since I'm using the canner on my table instead of on a counter, the cord isn't long enough to reach the outlet. :)
After you are finished canning, how do you store your Nesco ? There is water around the rim and does the lid need to be left open to dry out ? I cannot find any instructions. Do we just rinse out the removable part that the cans sit in ? Does it hurt the gasket to store it with the lid down ? Thank you.
Some great questions! I don't think I've seen any instructions for that either. I take out the inner pot and rack and hand wash and dry them. I do leave the lid open for a few hours or so to give it a chance to air dry. Also, there is a little container in the back that catches drips of water that I remove, rinse out, dry, and put back into place. And it doesn't hurt the gasket to store the canner with the lid down. I just make sure everything is dry before I do that.
Sure! Low pressure can be used in place of water bath canning. This is mainly used in place of water bath canning quart size jars, since they are too tall to be water bath canned. The way it works is that you use the exact same process as pressure canning, meaning the amount of water, starting with the valve in the exhaust position, counting down from E10-E0 then switching the valve to airtight, etc. The only difference is you choose low instead of high. This is only suitable for high acid food such as fruit, pie filling, etc. So basically, if there is a water bath canning recipe that calls for quarts, you can can that in the Nesco, using the low setting instead of the WB setting.
Do you know if you can leave the jars in the Nesco pressure canner overnight and then take them out in the morning? I canned meat really late last night so I didn't want to stay up for the extra hour to take them out,so when it was done canning and said off, I unplugged it and went to bed. But I took them out this morning only one sealed out of 4 quarts. Another one sealed a few minutes after I took it out but I don't know if that would be good to put on the shelf since it didn't seal all night.?? I'm guessing because the Nesco stayed pretty warm/hot all night. My stove top canner would have been completely cooled when I got up. Do you know if it's recommended to not do something like that??
That's a great question, Michele. I've never left mine overnight, so I can't speak from experience. Some people say they do it all the time, with no problem. Others say that "flat sour" can be a problem - which you wouldn't know until you open the jar. From what I understand, that won't hurt you, but tastes bad. I think the one that sealed should be fine, except the flat sour possibility. I would reprocess the ones that didn't seal, since it's been less than 24 hours since they were process. You can also use within the next couple of days or freeze. In the future, I wouldn't leave them overnight. If you really need to go to bed, set an alarm so you can get up and take them out sooner. Expect 90 minutes cool down time after unplugging the canner.
Tried again today. My Nesco goes straight to count down after 25 minutes. I turned immediately to air tight. It never beeped. Never saw the E count down. Do I stop the canning of my sausage and can in my I-pot Max??
I would definitely call support because perhaps you got a dud. It's very strange to have it always skip the countdown. So I'm thinking that something is wrong. I definitely wouldn't give up on it without talking to support. If you don't get a satisfactory response the first time you call, call back and keep your fingers crossed that you get a different person. :) I'm sorry you're having this problem.
@@CarolDobson-s9s are you using the canning rack? If so, the water shouldn't be covering the jars when you put 8 cups of water in. (I'm sorry that I didn't notice that you originally stated that the water is over the jars.) Be sure to use the canning rack and not the steaming rack.

My only wuestion of confusion is once the canner is processing for the time set, & the regulator us turned to airtight, is the regulator still suppose to be letting steam out?

@@marylovecountryliving No, there shouldn't be a problem with loss of water. Originally, the Carey canner (same as Nesco) said to put in 4 cups of water. There is a chance of running out of water with long processing times with only 4 cups of water, so they revised the instructions to be 8 cups of water. I've never had a problem with even coming close to running out of water. The longest processing time I've done is 90 minutes, and it's been fine.

a grounded retractable extension cord. The outlet in the wall is too far away for the cord to reach, thus the extension cord. If you do something similar, be sure it is grounded. That will be in the description of the item.
It's been a few years since I bought it, so I'm not 100% sure. But it was very similar to this one: amzn.to/4eBzp6U. Note that the only problem I've had is that I even though there are four outlets, I can't run two canners at once. I think it's a safety thing, so it shuts down if I try to use two things at once. There are exceptions. For instance, I use the same type of extension cord with our TV and a few other things plugged into it, and that works fine. I think the canner just uses too much power, and for safety reasons, it won't let me have two going at once. Other than that, I've been happy with it.
Great question! When you first move the valve to airtight, you should notice a definite difference. For instance, when you have it on exhaust and it's venting from E-10 - E0, then you move it to airtight, it should go quiet and stop venting. However, as the pressure builds, it can vent throughout the canning process. As long as you notice that it stops the racket/venting when you FIRST move it to the airtight position, you'll know you have it in the right position. I hope that makes sense. I know it seems strange to have it keep venting, but that is just regulating the pressure throughout the process.
I'm not sure what version of the manual you have. I have an older one, so I don't want to use the page number from that. The High Pressure Canning instructions are on page 8 (as the page numbers are written on the pages. It's page 10 of the PDF.) My original Nesco lid gasket was impossible to remove and replace before it was used the first time. I even had neighbor' try it. I called Nesco and they told me to soak the new gasket in warm water and try once again. I still couldn't get that gasket in. I then ordered a replacement Nesco canner and returned my other new canner. Guess what!! The replacemen6 Nesco arrived and I removed the gasket, washed it, and I was able to fit it back in. I realized that the wire around the lid, inside the lid, was defective on my 1st new Nesco. I purchased at Walmart and returned the 1st Nesco without any problem. So glad it seals now!

Great question! I think this harkens back to the older version of the canner when there was a fire hazard. It seems that when the plug was something you could remove (not unplug, but actually remove), that at least some people had issues with the plug melting. So you were always told to unplug it after it stopped processing. I think the new version of the manual also says to unplug. I think that's just a general "best practice" in terms of safety. I'll double check the latest version of the manual and let you know!

I want to pressure can some meat in pint jars. Do I still put in 8 cups of water even if the water is over the top of the jars?
Great question! Yes, the water is the same for pressure canning, regardless of the size of jar.

My only wuestion of confusion is once the canner is processing for the time set, & the regulator us turned to airtight, is the regulator still suppose to be letting steam out?
Yes! I know that seems strange, but it is mentioned in the manual. It is regulating the pressure to keep it at the right level.
@@StockingMyPantryBy venting the whole time is there a problem with loss of water? I just got mine toad and as the other lady it vented steam the whole time and I find that to be very odd.
@@marylovecountryliving No, there shouldn't be a problem with loss of water. Originally, the Carey canner (same as Nesco) said to put in 4 cups of water. There is a chance of running out of water with long processing times with only 4 cups of water, so they revised the instructions to be 8 cups of water. I've never had a problem with even coming close to running out of water. The longest processing time I've done is 90 minutes, and it's been fine.
@@StockingMyPantry after it was done and I could open the lid there was about half of the water that I started with still in it. I'm uploading my video now and I will post it when it's done but it made me very Leary with it venting steam the way it did. Thank you for your response I Appreciate it. God Bless

What are you plugging the machine into?
a grounded retractable extension cord. The outlet in the wall is too far away for the cord to reach, thus the extension cord. If you do something similar, be sure it is grounded. That will be in the description of the item.

It's been a few years since I bought it, so I'm not 100% sure. But it was very similar to this one: amzn.to/4eBzp6U. Note that the only problem I've had is that I even though there are four outlets, I can't run two canners at once. I think it's a safety thing, so it shuts down if I try to use two things at once. There are exceptions. For instance, I use the same type of extension cord with our TV and a few other things plugged into it, and that works fine. I think the canner just uses too much power, and for safety reasons, it won't let me have two going at once. Other than that, I've been happy with it.

My canner vents the entire cook time, is this normal?
Great question! When you first move the valve to airtight, you should notice a definite difference. For instance, when you have it on exhaust and it's venting from E-10 - E0, then you move it to airtight, it should go quiet and stop venting. However, as the pressure builds, it can vent throughout the canning process. As long as you notice that it stops the racket/venting when you FIRST move it to the airtight position, you'll know you have it in the right position. I hope that makes sense. I know it seems strange to have it keep venting, but that is just regulating the pressure throughout the process.

I'm not sure what version of the manual you have. I have an older one, so I don't want to use the page number from that. The High Pressure Canning instructions are on page 8 (as the page numbers are written on the pages. It's page 10 of the PDF.)
On that page you can see that step 4 says, "Select the "HIGH" button from the control panel."

Show us how to change lid gasket...manual not very readable
My original Nesco lid gasket was impossible to remove and replace before it was used the first time. I even had neighbor' try it. I called Nesco and they told me to soak the new gasket in warm water and try once again. I still couldn't get that gasket in. I then ordered a replacement Nesco canner and returned my other new canner. Guess what!! The replacemen6 Nesco arrived and I removed the gasket, washed it, and I was able to fit it back in. I realized that the wire around the lid, inside the lid, was defective on my 1st new Nesco. I purchased at Walmart and returned the 1st Nesco without any problem. So glad it seals now!

Why do you have to unplug it?
Great question! I think this harkens back to the older version of the canner when there was a fire hazard. It seems that when the plug was something you could remove (not unplug, but actually remove), that at least some people had issues with the plug melting. So you were always told to unplug it after it stopped processing. I think the new version of the manual also says to unplug. I think that's just a general "best practice" in terms of safety. I'll double check the latest version of the manual and let you know!
Okay, I just checked the latest version of the manual, and it still says to unplug. It doesn't give the reason why, but since it says to do it in the manual, I say to go ahead and do it.
