Dutch Apple Pie

- Ingredients crust
- 150g flour
- 2 tbsp sugar
- 2g salt
- 120g cold butter (unsalted)
- 4 tbsp ice-cold water
Ingredients topping
- 100g brown sugar
- 100g flour
- pinch ground nutmeg
- pinch salt
- 90g melted butter (unsalted)
- 1 tsp vanilla extract
Ingredients filling
- 10 granny smith apples, peeled and sliced
- 20g melted butter (unsalted)
- juice of a lemon
- 100g sugar
- 1/2 teaspoon ground cinnamon
Method
1. For the crust, add the flour, sugar, salt and ice-cold cubed butter to the food processor
2. Pulse the blade until you have reached a sandy consistency, then slowly add 1 tbsp of ice-cold water at a time until the dough comes together.
3. Remove and cover with cling film and rest in the fridge for at least 1 hour.
4. Take a 20cm springform cake tin and grease it lightly, remove the dough from the fridge and roll it out big enough to fill the tin.
5. Once you have lined your tin, place baking paper and pie weights into the pastry-lined tin and then into the freezer for 15 minutes before you bake at 190°c for 15 minutes.
6. Remove from the oven and take out the pie weights then turn the oven down to 180°c and bake for another 15 minutes, then let the pie crust cool completely.
7. For the topping, simply add all your dry ingredients to a stand mixer on medium speed. Slowly pour the melted butter in, when it starts to clump into small pebbles it's ready.
8. Take the sliced apples and mix them with the butter, lemon juice, sugar and cinnamon.
9. Add the mixed apples to the baked pie crust, you want the apples to come all the way to the top, maybe slightly more.
10. Sprinkle over the topping and bake at 180°c for 45 minutes.
11. Let it cool for at least an hour before you try and slice. - Хобби

This would technically be a "appel kruimel taart", or apple crumble pie. The classic Dutch apple pie has a grid on top.
And it’s not blind baked first. Neither do you use Granny Smith apples…it’s a nice pie but it’s not a Dutch apple pie

This is absolutely a dutch style pie. But there are many styles.
@@ZZubZZero Yep that’s what I missed too. The crumble on top is more of a German thing.
Next to Dutch Pea soup, this is my favourite dish to make, but I do miss the speculaas spices in the cake dough though. The spices will make your cake go from 10 to 12!

It’s not a standard Dutch top. Most of the time you see dough stripes weaved over the apples. But this looks very nice, and way more convenient!

Oh PLEASE could we have a longer video with the exact directions? That is my Dad's favorite pie and my last attempt *sniff* was runny.
You could do what I do and partially cook down the apples and thickener before making the pie.
I got tired of either too tight/dry apple pie or too loose/runny filling.
A friend who is a baker told me to pre-cook the filling just lightly (apples still a bit crisp) so you know the filling will set properly.
She also recommended more than one type of apple. But we live in the US in Michigan apple growing area. I have apple tree and so do most of my neighbors.
I like to mix a few hard crisp slice type apples along with some soft cooking apples(think the ones for apple sauce like Rome or gravenstein )
I like gala for cooking as it remains in good chunks. Detest granny smith apples. Least appley apple ever. 😢
But since I premake the filling, my pies normally set perfect. Oh and if you line a pine tin with plastic, you can freeze extra filling in the bag/shape of your tin. Then you only need to make the crust-pop out frozen pie filling disk pop top crust on and bake. Or add Dutch crumble on top.

Just a small tip; if you use a small sponge cake ring on the bottom then you prevent the crust from becomming soggy in the middle. It'll soak up all the juices from the apples.
