6 Ingredient Cucumber Salad | Japanese Cucumber Salad

Ingredients:
2-3 Japanese or Persian cucumbers
salt
Dressing:
3 Tbs rice vinegar
1 Tbs sugar
1/4 tsp salt
1/4 tsp soy sauce
sesame seeds
Directions:
Thinly slice your cucumbers, a mandolin would work well here, and place them in a bowl. Salt the cucumbers with 1/3 tsp salt and toss to coat. Set aside for 5-10 min to draw out excess moisture.
Combine all remaining ingredients except sesame seeds in a bowl and whisk until dissolved.
Once cucumbers have sat rinse well and squeeze out excess water before placing them in a new bowl. Toss with dressing and sprinkle with sesame seeds before serving.

We would usually make three to four marinated cucumbers ends cut off, peeled and sliced about 1/4" with 1 cup of white vinegar and 1 1/2 cups of sugar with 1 1/2 teaspoons of dill. Marinated at least a few hours. If it was to sour, then add another tbsp. or two of sugar. Here's a video of how you can use vinegar in your garden.
One clever thing to keep animals away is use items soaked in vinegar to keep them at bay. Some pest will stay out of the garden if applied to the correct places.
