What's the point of bringing out the cucumber's flavour if you then completely overpower it with all those strong seasonings / dressing?
Just eating it now for breakfast, delicious
@Rimadim dim this is the best comment
Just a quick note to say that I made this today using the first recipe that Google suggested for smashed cucumber salad, which had you toss everything in a bowl. When the resulting salad was watery, I was like, 'hey, this would be much better if you salted the cucumber *before* adding the dressing' and sure enough, I found your recipe which does exactly that. I should have checked you first. 😄
There is no time for slumber, when I am watching Chef John prepare smashed cucumber.
Aww, this one hits me right in the feels. A lovely lady I used to work with who was Philippine used to always bring her 'famous' cucumbers to every potluck and they were devoured every time unless you got in line really early. This recipe looks so much like hers (except, possibly less fiery). Sadly, she contracted Guillain-Barré and is now in skilled nursing care so her wonderful cucumbers are just a memory. I will try this one of yours and think of her. Thank you, Chef John!
I am a simple man
I have exams in 7 hours and I have had 0 sleep
I'm procrastinating watching food wishes videos
I see chef John upload another
I like the video I watch the video and then cry
Emit Benit 😂😂😂😂 I have 2 exams tomorrow one after the other so yeah I'm fucked have been on yt the whole day and my slides are open in front me
I'll cry with ya 😢😢😢😢😢😭😭😭😭😭😭😭
Emit Benit And good luck on your paper
Thanks man, physics and English rip me 😂😂
Emit Benit i know how that feels :(
it gets better though
You're fucked
Cucumbers are not boring and they're only bitter because everyone ignores them at parties
... do people think cucumbers are bitter?
cucumbers are the best...and yes, I could eat the whole cucumber salad by my self...
I spent some quality time with my mum making this salad! We went to the store together to get two cucumbers and then made the salad! It's such an easy recipe and we're definitely making this salad again!😍😋🥒
I will make this now! Thanks Chef John! My wife loves me more, but really she should be loving you more because without you my dinner table would be..... empty.
😂😂😂😂 thanks for the laugh!
MIgarfener helps me grow my vegetable garden and Chef John helps me with my dinner plates. I'm harvesting suyo long cucumbers and other types at the moment. Thanks y'all
"And then one optional step: I like to grab a spoon and spend about 15 minutes moving around individual pieces of cucumber....." Oh, I did laugh out loud on that line, John! Thanks for the video!
Same 😉
This is almost the same recipe my grandpa made for me in my kindergarten days (We're Chinese btw)! I learned from him and I must say, sesame oil is the most essential ingredient in this dish. Oh and normally I just eat this for dinner with a bit of rice and bok choy egg drop soup
Margaret S. Lol for my family Sichuan peppercorn oil is the essential, it’s interesting how different families can customize such a simple and delicious dish
thank you sounds like the real deal 👌I'll give it yours a try😋
[ umm, ni hao! Umm that's bout it when it comes to my chinese-skills. I also know: wo ai ni. But I donot know you well enough to claim this by now. Is your chinese-zodiac sign dog or horse? ]
Alina Pan [ perhaps the yang of the sesame oil complements better with the yin-cucumber than the also yin-peppercorn-oil for the energy-balance.]
:givccomojo. : it’s Wu Ai Ni
You are the lightning and thunder of your smashed cucumber! Am I doing this right?
Ruby Owl Indeed!
That's up to you!!! After all, you are the Hamburglar of your smashed salad with Cucumber.
You are the Ruby Owl of drying your Cucumber with a Towel.
I am dying...you should consult chef John to see if he approves though lol
Chef J should hire me to write all his "you are the _________ of your __________ " rhyming jokes.
P
Chef John, you never cease to amaze me! Your recipes, quick wit and humor! Always fun to watch and love your food.
Italiano, this is, unfortunately, not Chef John's receipt, but China's non-patented salad dish invented x0000s yrs ago, called "smashed cucumber cold salad dish (拍黄瓜凉菜碟子)".
"I'm looking at you, every beer company in America." HAHAHAHAHAHA. That is fantastic Chef John! I hope they listen!
Chef John I need to tell you about a thing I did, but I know you don't typically check comments on old videos, so I'll post it here.
I live in an apartment and it's raining today. The double-whammy of not being able to grill things. I knew this was the perfect time to try your broiled chicken recipe. I also wanted mashed potatoes, but didn't really feel like boiling and mashing them, myself. Cue instant potatoes recipe. Here's where it gets crazy. When I plated up my food (next to some mediocre fried okra, but that's another story) and started cutting into the chicken, tons of juice leaked out and promptly started soaking into the potatoes. The resulting flavor was honestly incredible. In fact, it reminded me of your million dollar chicken video, with the chicken juice-soaked bread. It's not often that I get to try your recipes, but when I do I'm always blown away. Thank you for making amazing videos. I've really learned a lot from them.
I've made this salad a few times and decided that it was a great last minute dish to bring to a BBQ today. I doubled the recipe and brought home a clean bowl! Rave reviews were heard. I get a ridiculous amount of satisfaction from compliments on food that I've prepared.
It's cruncy and amazing Korean side dish. It's also good appetizer for beer or wine..
Chef John chose less hot chili pepper but there are so many degree in hotness
I made this tonight and it was so good! Cold, crunchy, and spicy!
Chef John, one of my favorite people on this planet.
me too....could listen to him all day..
I like to add finely chopped green onions (on a bias) and a touch of gochugang to mine...but all in all, this is a must have for Korean bonchon, IMO.
I love this! It's one of my favorite cucumber recipes. I tend to serve it with my Nigerian beef stew. The contrasting flavors and textures work great together. Also, always with anything BBQ. You're a national treasure, Chef John. And life changing/enhancing!
Oh I could easily eat the whole bowl- that looks and sounds amazing! Thanks for sharing.
Tried and tested - man these are just perfect for summer! So light, tasty and the best kind of an attack of flavours! Thank you for this, this is be a daily thing for me now.
the "and as always eeenjoyyyy" in this video has been the most satisfying one yet
"Thin, tender and not too bitter" so this cucumbrr basically my polar opposite
Nice! 😂
This was my favourite thing when I was in Japan last year. Goes really well with beer and fried food 👌🏻
I haven't had this in years! Time to give it a try again
I love this recipe!! So great for the summer with a bowl of noodles. I chop up some umeboshi into a sort of paste and mix that into the dressing. Then toss it all together. Love umeboshi and cucumber.
This is a very popular salad in Taiwan, China, that served in all bistro.. my favorite too.,
Hey man. I made this salad. Served it with your Paella recipe. My wife loved it. Thanks for helping me get a night of serious action.
Only a crazy person would sit and eat an entire cucumber salad by itself? I've made three dishes in two days. Oh, so yummy!!! I did indeed enjoy!
I made this today (with regular straight eights cucumbers) and it was delicious. Thank you, Chef!
Fabulous Dish. i think you're one of the best chefs around!
Tried out this recipe a few days ago and it was a big success. A great summer salad. I let it sit in the fridge for about 30 min before serving. We ate leftover salad 2 days later and it was still crunchy and even tastier!
I learned to love this salad when I went to China in 2011! It is sooooo good! Thanks for the tutorial. I am going to make it soon.
Saw this on BBC radio 4 some years ago....less refined.... Basically sesame oil, garlic and soy sauce...I tried it... V refreshing... I'm interested in in trying your version !! All the best from UK .....J
Hi Chef John, I love your recipes, this is the one I am most familiar with. It is probably one of the most popular dishes in China, so called 拍黄瓜... we use our heave knife to smash the cucumber, yeah, it is simple and incredible delicious. If you substitute the chilli flakes with some homemade chilli oil( chilli powder, chilli flakes, peanut chucks ), it will come out more flavoured
yay!
I just recently purchased a Chinese "home cooking" cookbook, and this is the very first recipe in it - you and I must be reading the same cookbooks! It does sound as if it'll be very refreshing on a hot summer night.
I can't wait to try this. I just know it is wonderful. Also I enjoyed the breezy style of the delivery.
Boasts about chopsticks skills. Stabs food on the first try. 😂 Love this guy.
This is same as 오이겉절이 “oh-ee gut-juh-ri” a korean side dish popular during summer.
But we use more chili powder than shown here.
And we don’t smash it like this. We just roll it a few times with our hands on a flat surface, applying gentle pressure like rolling out pastry dough, and then cut them into bite size cubes. 😁🥒🥒🥒🌶🌶🌶
Smashed cucumber salad dish is a typical China one, invented 0000s yrs ago, b4 BC. However not patented. 🤓
Love to add some gochujang to mine. Like to do the same more or less to bean sprouts too. I could bowls of both
I made this the other day and had a little each day for the past 3 days. It’s a perfect recipe. The flavor changes each day and each day it’s wonderful. Gonna make this fairly often until the day I die.
Thanks Chef! Love your humor and zest for all kinds of food. Chers and good health!
This is a super common cold dish in China, which is called "Pai Huang Gua" 😄
There's a dish fried cucumber with wood mushroom, can you please tell me what it's called?🌸
@@oiamani8116 Deep fry or stir fry? Where did you have it?
It was stir fry, at a Chinese restaurant
@@oiamani8116 very likely it’s a American Chinese dish but search “黄瓜炒木耳”,you might find something similar
Chef John...you SMASHED that one out of the park!
Thanks!
Tried this tonight , & it's just simply BLOODY DELICIOUS , fantastic recipe 👍🏻👍🏻👍🏻👍🏻👍🏻👍🏻👍🏻👍🏻
I literally am so addicted to your videos lol!
I could listen to chef John all day 😊
He's like...singing :D
I'm gonna get smashed and then try making this recipe. XD
Johnny Coull
Soooooo excited to see this recipe, grew up from a Chinese family, this is definitely one of the must haves in summer. Now I miss home....
I truly love your channel. I'm a cook and at times my super adds items to the menu that I have no idea how to create. Example, salmon cakes. I watched your video and went to work and did exactly what you instructed everyone loved them thank you.
Maangchi makes this recipe (Korean Cucumber Salad) and I love the fact that Chef John does too! My two favorite channels!!
videowatcher inthearts how is this even Korean?
It is called "oi-muchim" and she adds scallions, thinly sliced onions, along with the cucumbers, garlic, soy sauce, sesame oil and gochu-garu (Korean hot pepper flakes) and toasted sesame seeds. It is good as a side dish with grilled pork belly wraps! But I want to try Chef John's Ribs with it.
videowatcher inthearts this is a dish widely enjoyed among many Asian countries. Just because a Korean woman made it and put it on RUclips doesn't mean this dish is automatically a Korean dish. I grew up eating this and I'm not even Korean. Maybe let's just call it a cucumber salad instead of a "Korean" cucumber salad.
Vermillion 303 do you use sesame oil and Korean chili flake and sesame seeds in your recipe as well. Those are heavily Korean. It's called Korean cucumber salad for a reason.
Are you saying sesame oil and chili flake are exclusively Korean? Yes, Where I grew up, people use sesame oil and chili flakes all the time. And, no, none of us is Korean or have anything to do with being Koreans at all. I hope one day you open up your narrow mind and travel to other Asian countries. There are so many more countries in Asia other than Korea.Your ignorance is truly shocking.
I like to put more garlic. The taste will be better. This video is fantastic.
The mention on Gallagher was GREAT!
I do love your videos!! And the humor, and the food. All of it!
Fun! I've been making this since childhood except I use Japanese cucumbers and hot peppers. My family enjoys this with freshly made Japanese white rice and Japanese green tea . (I'm Japanese-American, could you guess?) :)
Yummo, sounds good!
lets see if tasty steals this recipe too
iToxicMuffin13 they seriously stole one of Chef John's recipes?
Many of these recipes can be found by an easy google search. There is nothing to 'steal' when it's widely available.
Rusty Shackleford!
you would fail a plagiarism test
And that flavor is cayenne.
Looks and sounds like a delicious salad! I will definitely try it out! Thanks for sharing the recipe! Have a pleasant weekend!
I LOVE your channel. I just binge on your videos since I found it. Clear explanations and demonstration. And I think you are hilarious. I've introduced you to my kids. Please keep it up!!!
"Out of all the culinary techniques, smashing is probably the easiest to learn." Hahaha!!!
Chef John, for my preferred smashing tool can I run it over with my truck? Thank you for your time and this wonderful recipe!
Living in China and loving the myriad amazing ways they have for preparing cucumbers and eggplant, this recipe is indeed delicious and most welcome! Now to learn the other methods (while modifying them to eliminate the unhealthy animal and oil!)! Thank you!
Thank you Chef John!!!! Your the best! 😊
Chef John.... NOT putting in.... cayenne???
Who are you, what have you done with our chef?
There is an explanation for it in the video.
Subtle would be favourable me thinks🤔
His explanation is adequate
Looks pretty authentic. The only thing I would add is a little green onion.
Wow I love cucumber refreshing and yummy.....thank you
So happy to see a recipe for cucumbers. I love them, but except for slicing, pickling and the occasional gazpacho, I've never seen a truly unique recipe for them like this. Thanks, Chef John, for this jewel...and all your other shows.
10k in an hour? Rockstar status, Chef John!
never heard of an addictive salad of any kind but okay, imma give it a try.
THAT is an amazingly beautiful and delicious-looking dish!
This looks absolutely smashing. Gotta give this a try.
chef john, I used a Sledge-O-Matic©™ and twenty cuc's I have 1 cup of salad. I might be doing something wrong, but it sure is fun. Also my wife wont enter the kitchen without wearing a black hefty bag. :)
OMG Sledge-O-Matic! You know what I will be watching tonight! LMFAO1
This is a Korean staple side dish. Especially in summer, so it’s like a cold cucumber salad. Quick and easy and definitely addictive. Low in calorie as well!
Saw the recipe this morning and had to make it. It is simply wonderfully delicious…and I can’t wait for supper. Did as you suggested and having ribs for supper! Thank you for all the wonderful recipes!
I had this exact Salad at a Very Authentic Chinese Restaurant in Chicago! So good! Thanks for reminding me about it!
Would this work with pumpkins?
frosborg I see what you're doing there
This is authentic Chinese. For the dressing, I usually add some sugar to make it sweet and sour.
He also added it, in the very beginning.
He added it to the cucumbers before refrigerating.. #PayAttentionMuch
I’m making this tonight. Thank you, Chef John.
Made this today.. enthusiastically oversmashed the cucumber, but the result was freaking delicious..thx
So... Basically... It's Korean o-i muchim (오이무침).
I wonder where it originated? Japan has the same recipe--I've seen it called pirikara kyuri ピリ辛キュウリ.
@@Tzadeck china also has a similar recipe!!
Young generations: it's invented n0000 yrs ago in China but not patented. Please do self a favor by researching it. 🤠 It's called "smashed cucumber cold salad dish (拍黄瓜凉菜)"
I’m going to serve mine with Cheese burgers 🍔 so I’m guilt free!
Never smashed my salad before. It's always something to learn!
I love watching your videos. all the food you prepare looks so good. keep up with the good work + like you always say "enjoy".👍
Chef John I told my date that I would rather cook for her than to take her out, she loved the food so much that she's my girlfriend now. You Rule!
did you wrap your cucumber before you smashed it?
King Kronic awwww 💑
Simp
She told her gf that you're a cheap bastard...
When's the wedding
This morning I smashed my Starbucks coffee and cupcake....and yes indeed, it tasted better when I was licking it from the pavement.
From now on I'll be smashing all my food....tonight I'm gonna give McDonalds a go...
Billie Bleach 🤣🤣🤣🤣
Billie Bleach 🤣🤣🤣🤣🤣
Cool 😁 .... 🤭
Hooters might be more fun
And watching CNN?
Today I made a "Chef John Asian Special" meal using four Food Wishes recipes: Penang Pork Satay, Peanut Dipping Sauce, Savory Coconut Rice, and Smashed Cucumber Salad. I used palm sugar in the cucumber salad, since I had it on hand. It was all outstanding! Thanks once again, Chef John!!
I tried this last Sunday, it was so easy to make, but so delicious! I even saved some of dressing and drizzled on Roasted chicken I got from Costco! Delicious!
Oh really, only a crazy person would eat a whole bowl of cucumbers? Takes one to know one ;) I LOVE your take on this classic Korean dish!
Thanks dad!
love your sense of humor!
One of the dishes my family cook often in the summer time!
I can't belive you didn't remove the cucumber's "butt". That's a big no no in my book
R Stanev - I call it the “belly button”.
Hey, What kind of knife is that?
Looks like an Usuba bōchō - a Japanese vegetable knife
looks like a nakiri
This is an authentic Chinese dish. I first had this (using Japanese cucumbers/Xiao Huang Gua, and minus the chilli) when I was invited to dinner in a Chinese home in Beijing 31 years ago. Easy and tasty summer dish. Brings back good memories.
Yay! This looks amazing!
wrap it before you smash lmao
Ya filthy dirty bum. Lol.
😁 I know:also size doesn't matter as long you stick to it ,Woow!
😂🤣
Yumm n funny. (I just can't listen to that highest voice on a guy more n this once) 😌🤗 my brain sez why?
Yeah why🤔
It’s delicious chef John thank you!
Too hilarious chef John!!! 😂 I keep laughing when I watch your videos! And I keep cooking after, as everything you are showing us is amazingly delicious! I never failed trying any of your recipes! I can't wait to try this cucumber salad; I'm so tired of eating plain & boring cucumbers. 😫
I really like the sound of this guys voice; however, the way he increases in pitch towards the end of every line is bothersome.
He is after al the Chef Johnny
Of his own vocal polyphony...
Listen man.
I want one thing in life.
Money.
But, I may never obtain that.
So baklava is the next best thing.
I will not hatass you any longer if you make it.
Sebastian Michelis ayyyyy he finally did
U serious about this baklava passion of yours?
I mean Have u ever heard of dry aged T bone steak, shrimp cocktail, smoked salmon, jerky, all kinds of cured or dried meats?
Baklava? Seriously?
Unreal! The very first thing into my head when you asked what to serve it with was babybacks.! I love it! A crazy and for a change actually different approach to cucumbers. I have to try it. Printing the blog post as soon as I post this.
love this cucumber recipe for summer.
