    Made it! substituted 1 teaspoon of quality balsamic vinegar with 3 teaspoons rice wine vinegar. It’s delicious a recipe 👌🏻

    It's very classic Sichuan dish. Every family makes it. Equivalent to American's potato salad.

    I first hand this in China. It was brought to the table along with a little bowl of peanuts or other little salad as part of the meal. Like bread would be brought to the table of a American restaurant.

    The label on the vinegar bottle "尖酸刻薄" does not mean "tart" as per Google Translate. The proper usage is to describe someone as harsh and mean, which is why it's hilarious to put on a bottle of vinegar used to dress some smashed up cucumbers

    I wanted this as a midnight snack, but also wanted to be a decent roommate lol. I ended up cutting my Japanese cucumbers (it's all I had) in fourths and pressing on to them with the heel of my hand lol. Salted it, made the dressing and topped it with lao gan ma. It was really tasty! Would make it again.

    gonna try with balsamic vinegar. not running out to find black vinegar but, i've an oversupply of cucumbers from my veggie patch. need more cucumber recipes :)

    What could be used to substitute the black vinegar?

      Rice vinegar if you have it. If not, then regular white distilled vinegar will do the trick. But the black vinegar really really does add a lot of flavor, much like how you can't really substitute for balsamic.

    I’ve made Asian cucumber salad a zillion times. The smashed version really didn’t do anything new. In fact the irregular size made it harder to eat.

      It might be made from bruised or imperfect cucumbers that were damaged in transport. I don’t see the benefit of Amani go over cutting.

      One of ATK's goals is to adapt recipes for American cooks, so they use produce that's widely available across the largest area possible. Asian cucumbers of various types are easy to find in Seattle or San Francisco, for example, but not as widely as English cucumbers.
