    This summer I bought one cucumber seedling then wow, it makes a few cucumbers once or twice a week 😋💖 We haven't bought any cucumber this summer yet! hehe

    Sunomono (Japanese Cucumber Salad - Vegan Recipe)
    Difficulty: Easy
    Time: 5min
    Number of servings: 2
    Ingredients:
    1 Japanese cucumber
    salt
    A
    * 1 tbsp. vinegar
    * 1/2 tbsp. soy sauce
    * 1/2 tbsp. sugar
    * 1/2 tbsp. sesame seeds
    * 1 tsp. sesame oil
    Directions:
    1. Rub cucumber with salt and wash with water to smooth out the prickly surface of fresh cucumber.
    2. Cut cucumber into thick slices, coat with 1/4 tsp. of salt, then wipe off excess water from cucumber slices with a paper towel. *Thin slices are OK but thick pieces are easy for kids to eat.
    3. Mix A. Coat cucumber slices with the seasonings to finish. You can leave for a while till the cucumber slices absorb the flavor.

    It's always a plus to have extra hands; how she was using yours to rub salt on the cucumber and when they collab to mix the seasonings is perfect.
    "I need more!" is exactly the essence of having kids help out and find their love of vegetables and food in general.

      my daughter did not want to touch the prickly cucumber 😂(usually we roll cucumber on a cutting board to smooth out the surface)

    Absolutely loved the tutorial. Your children are so cute. Loved how big sister guided little brother's hand, just like you do hers. And when your son said 'I need more, more' I could quite believe he had 5 onigiri, tho' they must have been tiny!

    We love this recipe. We don't add salt but add 1 TBL spoon of soya sauce. We also dont dry the cucumber or put them in different bowls. Just throw it in one bowl and mix. Less cleanup. Oishi from Canada!

    Hi. I love cucumber and this is a simple recipe. I'm wondering if I could maybe increase the quantity of the seasonings and use the liquid to pickle the cucumber. Do you think it will work?

      I do that, too! but a lot of water comes out from thick cucumber slices like these, so don't soak more than overnight. I forgot mine for 12 hours and cucumbers got small. they taste good tho. haha

      Hi. I've made cucumber sunomono half a dozen times since I first viewed your tutorial. And I've been making changes, all of which have worked well. The second time I made it, I added 1/2 inch piece ginger cut into julienne. It was good. Third time I left out the ginger and added 1/4 teaspoon red pepper flakes. Excellent. Most recently I made it with 250g cucumber, 2 green onions sliced and 2 cloves of garlic crushed. Did not have sesame seeds, so left it out. It came out so good, two of us polished off the whole lot at one sitting. I don't know whether the modified dish is even sunomono, but it's certainly addictive.
      Oh, and I like the cucumber sliced a little thick.

      usually right away but leaving it for a few minutes makes it delicious. maybe less than an hour in the fridge while you make other dishes is perfect.

      I use rice vinegar. Sour taste is not bad for this recipe but if you think it is too sour for you, then maybe you want to use a different one. Just try and see how you like it then use apple cider vinegar or others?!

      yes I used rice vinegar. but here people use white vinegar as well to make sunomono, so you can try with the one you have on hand before getting a new one ;)

      I recommend not to save it over overnight because water comes out from the cucumbers. Rather better eaten soon.

      good question! sometimes I keep it for 12 hours but water comes out from cucumbers and get small... haha so better eat as soon as possible, however after an hour is delicious with perfectly absorbed flavor!
