Before anyone asks, it's because a full magazine doesn't fully insert into an MP5 with the bolt closed, that's why all the modern COD animations have them lock the bolt back before reloading even for tacticals

There are more FALs and G3s around the world and they appeared in more conflicts than the M14, but they were never used by a force as large as the US armed forces. Galil reload is stupid, it should be charged overhand with the left hand, that's the whole reason the charging handle sticks up. They bothered to do it underhand with the AKs, but not the Galil 🤦
It's done that way to avoid the hand clipping through an optic, when one is mounted. Same reason the MP5s don't have the "HK slap". If they did, the hand would clip through wide optics like the Eotech when mounted.

The game is in Early Access, which means multiple guns with different varieties will be added. Not to mention the sheer amount of customizations for said guns. And as time goes on, more attachments will be added over the already spectacular amount of attachments already in-game. The developers also have to focus on character customization, optimization, graphics, networking, and other things.
If the reloads look familiar (Especially the fast empty reloads) it's cause they got the killing floor guy to do them
