He is probably using a very nice quality Extra Virgin olive oil that brings a hit of pepper flavor as well as some floral notes. But I kind of agree with you that for most people it is a superfluous addition.
Why are you on a pizza video talking about calories? If you don't understand it then you aren't a chef or a foodie. Really good olive oil has a wonderful flavor and aromatic quality that is wonderful. It's not like just throwing lard or regular old cooking oil onto food. It's a compliment the same way salt and pepper is.

+hayleypdowd Old Gold is an aged gouda. It has trouble melting. By pouring oil over the time it will help amalgamate the ingredients.
