I had college classes with a member of the Katz family, and I grew up a few miles from Roots Market in Lancaster. based on my experience working as a cook in various hotel kitchens, the solo pizza guy is that one solitary guy in the bakery kitchen who just wanna work night shift every night so he can work alone.
I remember the first time I went to Italy as a kid and went round to my aunt's neighbours house to eat and she had made a large pan pizza with potato on top, I reeeeeally wasn't sure about it... I ate it and it instantly made sense 🤗 that potato and ricotta slice brought it all back for me, looks so yum

Respect on this. Just came across it. Nice to see that Philly gets respect on the pies as well. I, honestly, never thought of trying the "Philly Taco" idea as an adult. Did as a kid, though just usually got a Pizza Steak(cheesesteak with mozzarella & pizza sauce, nice though rarely great), instead I'll try this idea. Especially if I could get two of those Pizzeria Beddia pizzas or Norma's pizzas & use about a slice or two per steak half.
I used to be the same way but I started learning how to talk to people by either waving and smiling at random people or saying hi and not gonna lie when you get a response it feels so great now I can legit talk to who ever 😁😊

Sure he may come off a little hipster-ey but if he actually sticks with it for another 50 years his spot might very well become the next Di Fara's. That's what separates the hipster douches from the real artisans. Time spent.
Galactic123 amen, but you can't tell from how he talks he is burnt out, but that is common when you find success suddenly and have to carry the load still. But so many so called new aged restauranteurs come and go quick cause they aren't dedicated they just want to be seen as the hot thing on the review sites and then they are gone, but it's cool when you see a young guy hanging and making a legacy

It's more about taste, bro. I've had Di Fara's. The best pizza I've ever had, but it's not the prettiest NY slice out there. And besides, if he really does it for 50 more years, he'll be constantly perfecting his craft as he goes along. Like Jiro dreams of Sushi, just with pizza.

Respect on this. Just came across it. Nice to see that Philly gets respect on the pies as well. I, honestly, never thought of trying the "Philly Taco" idea as an adult. Did as a kid, though just usually got a Pizza Steak(cheesesteak with mozzarella & pizza sauce, nice though rarely great), instead I'll try this idea. Especially if I could get two of those Pizzeria Beddia pizzas or Norma's pizzas & use about a slice or two per steak half.
