@@Stoop_Kidd Yeah. They mill it in house for small batches or when the situation calls for it, but they got so busy they had to outsource and find a company to do it for them to their recipe and specifications. People in the restaurant business do it ALL the time; it's VERY common. Prime example, in Chicago a lot of hot dog places just use Vienna Beef Dogs. Some other restaurants also use them but they give them a recipe to follow so it's their own personal blend just now being produced on a larger scale...
Milling flour in house is a financial disaster. Not only because of the machines and labour (people want to get paid believe it or not), but also because space is extremely limited in NY. Also the risk of impurities is very high compared to a professional milling company

This video was great! I think my personal favorite part, was how he talked about when he was growing up and how the pizza guy was nice to him. Sometimes that’s all it takes is to be nice to someone.
exactly, be nice and when someone wants to rise up and learn something new, let them have their shot at it, don't push them down. you never know, they might run the best pizza place a couple years later.
@@erikalbinsson4928 in the video its mentioned him growing up with nothing and working as a waiter at an original nyc pizzeria, and somebody mentioned in the comments he makes 60k a year despite working 11 hours a day just to keep the restaurant up. idk how true it is and if it is then it could just be his passion to do so as he mentions working on his interest in pizza for over 10 years, but despite that, it makes an interesting thought process that if everyone was to do this, could there be anyone to serve to? the obvious response is oh thats just a theory that if everyone was a producer there would be no consumers, but you have to think about it, they are buying ingredients and making food products at a certain cost and selling them at a certain price to pay for the cost of those ingredients, what ever it is to keep that restaurant up, what ever product they need to keep making food, and have profit for people who work and himself etc. if i missed something. the basic idea is everyone is being taken advantage of in some way and thus there are people who want some advantage back in response, they may not get a ton like the system they are held by, but they get more than what eventually becomes a consumer or the average consumer. the mass consumers are those who often dont get advantage and get taken advantage of for the profit of others and in order to continue gaining such a profit. if everyone was looking to do this though, abuse a part of the system for some kind of advantage or self-benefit, then no one could be taken advantage of. therefore no advantage is made and everyone loses. however, they could also just work together or individually based upon themselves, rather than relying on others to be advantageous with-in such a system, they could individually build up their own farms (as we know them as for growing food in a particular area) thus making their own natural food to have and consume. in addition, with trade being a possible action, you could trade foods for certain other things (in this case probably of course food and especially different foods for somewhat even trade) and even build bonds that allow for free transactions as everything would be in abundance and of need. no currency or power possible. he himself states making his own flour, some comments mentioned that it got so busy that it was impossible to create their own flour in time for preparing dough for orders and cooking, so they had to find a factory that would help produce the same flour with their preferred recipe but then you realize its with the idea of reliance. they can no longer make it themselves, thus they have to rely on a different producer or possibly known as supplier to produce for the lower consumers. of course this happens in various ways with previous mentioned items as well but it would probably be a lot of explaining and its just understood that there is different scenarios, different possibilities and different outcomes but it creates an infinite problem of needing someone to buy and someone to create, it ends up taking a tole on something which happened to be these consumers. what ultimately became a great source of power is also its greatest reliance, but they also dont have much power except to consume or not to consume and never be able to produce for themselves. imagine if humans naturally produced for themselves rather than to keep from others, take from others, and force a reliance for others or from others. there would never be problem and thus humanity would be a lot better due to an instant removal or elimination of some of if not the greatest negativity or negative thing itself. its possibly what politics and everything known by humanity relys on, the ability to abuse this notion to take control of others, away from others, and use control of others for yourself. it seems at first that everyone has a choice, but why should that matter if what matters is the truth of it all. should you ever really have to have a choice? or did some negative force ruin the equilibrium to cause you to make a certain choice or else deal with a natural disadvantage? despite always being at a human-made disadvantage regardless your choice; as that choice doesnt determine your ability to gain power or prevent it all, but just take away any from others or rather be in control of theirs. would it be better? it would probably just be a different scenario of the current situation as explained, but maybe making that action would create a physical experience which would cause a wise awareness to the situation, rather than let the force that creates such naivety that prevents anything from actually progressing continue or be even possible at all. earth has everything that life upon it needs, but there are humans taking advantage of those needs to ruin life and the earth of life itself. we are already in that situation but theres the possibility everyone tries to make a choice thinking its an action, but the truth is revealed and the ability to make that truth possible rather than what the force creates is what is true action. the action that is sought to make some such of an improvement.

U.S wheat contains whiteners, rising agents and dough conditioners that are found in industrial applications and are not healthy for humans. That’s why Europe doesn’t allow some American wheats.
This is incorrect. US wheat is hard red wheat, which usually has more gluten. And unless someone suffers from Celiac disease, then gluten is not an issue. the other difference comes from the difference in soil. Our has more selenium in it. Which is actually a vital nutrient. So while the dough at this restaurant may taste better than others here in the states, it's not because he is using a different and more healthy European dough. Btw I am a wheat farmer. :)

Born in NYC in the early 50's and left for the service in 72 and never returned. Back in those days my favorite pizza came from the shop in the Manhattan side terminal of the Staten Island ferry.
I have eaten at many of the most highly regarded NY and Philly pizza joints, but Scarr's was hands down my favorite. I took one bite, stopped, and said wow. It's so damn good.

If you're from nyc, there's Grimaldi's near Manhattan Beach. It's the same one from ny, supposedly they bring the water in from there as well. If you want high end go L'Antica Pizzeria Da Michele in Hollywood. They originate straight from Italy. Super expensive but great.

This place should 1000% be on your list when visiting NYC. It's hard to say it's the best slice in the city as everyone has different taste's, but there's no freaking way you could not like this slice.
Im from Europe and I can agree wiht this awesome dude. Here bread, pizza, croissants etc are just part of our culture and diet and they are super healthy
Scarr's Pizza and Joe's Pizza are hands down the pizza places in the New York. I've always gone there in the evenings and never have I ever seen a line shorter than 5-6 people. Sometimes it's longer than a lot of fancy pubs. The best part? A slice of heaven just costs $3 which I feel is a steal. Hold the slice in the air and stays straight for a good 5-6 seconds. I could go raving about it. But I've got to go ready and take a walk to get a slice...
I had a slice from here earlier in the year. TBH, it was just okay. I like a lot of sauce and felt mine was a little dry. But the crust was crispy & airy, not heavy. I think they drizzle olive oil on top, which is nice. Like most NY slice shops, they leave their pizzas out on display & heat them up when you order, so I could’ve gone on an off hour. Hopefully this place survives the pandemic. The owner obviously loves & cares about what he does.
I live in Mammoth Lakes California, born in Queens New York, and I am a true Pizzaholic. Finally made it to this place and it did not disappoint. Spectacular pizza
To be honest. I was so hyped to go to Scarr’s. When I got my slices they were burnt and not that great. My. Friend who was with me wasn’t feelin her slice too. I’ll go back some day again. They maybe had a off day on that pie.
I just like that guy. I feel like I would like to make pizza with him. i am glad he is experiencing success. We have our own flour mill in our house. That is quite a commitment to doing or sourcing freshly milled. It shows a real commitment because no one would expect it.
It’s funny how so many people that don’t live in the tri-state argue about pizza. You can eat anywhere from Staten Island up to new haven Connecticut and get a REAL slice. Jersey has the crisp bar pie and Connecticut has the true Italian brick oven style. NYC has the legit standard. 🍕 💯! All about the PH in the water...that’s why their bagels even kick ass. Sorry folks but if you don’t live in the tri-state you don’t really know pizza. My fam is from 🇮🇹...only thing close to there is the tri state when it comes to pizza. True Deeply fried dough Neopal pie in Italy would blow out your 🧠
I ate Pizza Diavola in some unknown place in center of Rome and my life has been ruined since cuz I can't enjoy any pizza without real italian salami or salami picante and only restaurant in my city that got real deal salami doesn't have that good flour so I only eat margheritta and fake neapolitan pizza(with regular mozzarella cuz buffalo mozzarela is still expensive even living in Europe relatively close to Italy)
I mill my own flour for pizza and baking and let me say, the little bit of oil in the germ gives the bottom of a pizza such a beautiful color, not just black spots but brown and all different colors. Taste is far better, I think flour milling really is one of those things that should be done by one or 2 people in the community, fresh, daily. It's just better

Pizza hut is the best
I love how much he laughs. He takes his food and health seriously, but he can still relax and have a good time of it
Man talk about hitting the grind for that perfect slice! I bet there's always people milling around!
Tell Ramon I said, hi!
Was only a couple of people when I visited. Good slice though!

@Tom Evers I choose to take that as a compliment! 😜
‘When you have nothing growing up, you become a fighter.’ Bless him!

Can attest, this pizza is amazing. This makes me wants to go back even more!
The guy who makes the effort should be rewarded. A niche market that's growing.

What part of NYC is it in? I live here and would love to give it a shot
@@DrHardlyKummsz Just search it up he has a dope website.... trust me this is the most epic pizza in all of NYC
I have eaten at many of the most highly regarded NY and Philly pizza joints, but Scarr's was hands down my favorite. I took one bite, stopped, and said wow. It's so damn good.
Dude's the man! I love that laugh, too.
I love the way he talks about growing up with nothing like it's an advantage, just something that made him sharper. That's the best of the US to me.
Amen. Life is all about attitude. He seems to have a great one
This man is passionate about what he does. He clearly lives and breathes pizza.
This guy is awesome. Reminds me of Dr Hibert from the simpsons with all the chuckles. Loves the craft and has a passion for business. Certainly comes out when he is explaining everything.
Wow i like him he's like a Easy Going person nice attitude! and Good Pizza Too
i just want to be this mans friend, he just seems so genuine and nice.
This guys coming for Lucali's head. Very passionate abot what he does. I have seen vids on him before, he's a real pizziolo, he's not touring other pizza for cheap tv, he knows wat works, I'd buy a couple of pie's from him. Great Vid. His granma pie is definitely paying omage to di'fara. It look great. Im gna stop by. Keep it up.
@Eros Delorenzi It's just pizza dude chill out
Love the expression when you grow up with nothing you learn to fight, but fighting with distinction, character like him is what separates style over substance. You got both you're doing God's work brother keep up the good fight.
All great pizza begins with a great dough. No way around it.
Anyone know of any great nyc pizza in LA?
Michael's Pizzeria - they use double zero flour
If you're from nyc, there's Grimaldi's near Manhattan Beach. It's the same one from ny, supposedly they bring the water in from there as well. If you want high end go L'Antica Pizzeria Da Michele
in Hollywood. They originate straight from Italy. Super expensive but great.
@@davidoh709 Great. I was at antica pizzeria 3 weeks ago and even shot a RUclips video there. I liked it!
Rockstar Eater hahahah great pizza in LA? Good luck bro!
@@cokezzz8249 I found a good neaopolitan place, Antica Pizzeria in Hollywood, from Naples. I have a video of it too. I'm looking now for NYC pizza.
I enjoy listening to the guy talk, he takes a lot of pride in his restaurant and his food I’d like to try a slice
This place is great. Have gone the last two times I’ve visited and will continue going
Hey Brother, Thank you for all that you do, amen and Bless to you
I like this guys “ I am not in a rush to make money, never had it before” just wants to provide good quality affordable pizza!
You sir, are a gentleman, a scholar, and a true man of the people. I live in Bolton, MA, but you can bet your bottom dollar I’m now planning a trip to NYC for my wife, son and I to visit Scarr’s. I gotta do it. Love and quality of this magnitude must be appreciated. Much love and respect 🤜🤛
This place should 1000% be on your list when visiting NYC. It's hard to say it's the best slice in the city as everyone has different taste's, but there's no freaking way you could not like this slice.
i hate new york pizza i rather watch videos of Chicago deep dish
while eating Pizza Hut cuz New york pizza is stright up TRASH compare to Chicago
Im from Europe and I can agree wiht this awesome dude. Here bread, pizza, croissants etc are just part of our culture and diet and they are super healthy
Alex Delaney from Bon Appetit had this joint in his top 3 when he tried most of the New York slices in his vid

I would love to sit with this man and listen about his childhood, the first ever pizza he baked and his life's philosophy while having his pizza!
Don’t make it weird
Scarr's one of a kind. I agree.
When the owner wants to give what he didn't have growing up, you know there's love, and that's the secret ingredient for amazing food.
When I go to the NYC cant wait to go there!
His smile and laughter make the best recipes
"I have the best pizza."
- every pizza place ever
nah, i'm pretty sure there a lots of places where the employees won't eat the food they produce, because they know better.
Jesus, you deserve all the business in the world! All around great man
"when ya grow up with nothing ya learn how to fight" im from tx he's from ny but tru is tru my guy
"WHEN YOU GROW UP WITH NOTHING YOU LEARN HOW TO FIGHT."
This guy has great integrity for the pizza and that's what great pizza making and baking in general is all about
I need to pay homeboy a visit!!
LIved in NY all my 50 years, and had no idea about this place. This place and this owner is amazing.
Huge Respect for Scarr. Shout outs from Costa Rica!
Respect, need to check this place out
I live in Mammoth Lakes California, born in Queens New York, and I am a true Pizzaholic. Finally made it to this place and it did not disappoint. Spectacular pizza
Im stopping here when I head to NewYork mark my words.
Same.
god damn. That's a happy man that loves his job and I'm glad for him
hes outpizzaing the hut this man needs to be protected
His personality is truly a gem
Mills his own flour????...👏👏👏👏
This guy really knows what he's doing. Never made it to Scarrs last time I was in NY. But will be 1st spot i hit this year when i come back!
6:17 look to the very left
Eater ... you do such a good job on profiling these amazing food places and their Owners. Shows us the passion they all have.
To be honest. I was so hyped to go to Scarr’s. When I got my slices they were burnt and not that great. My. Friend who was with me wasn’t feelin her slice too. I’ll go back some day again. They maybe had a off day on that pie.
Say it like you mean it. "It isn't all that."
His laugh reminds me of Dr. Hibbert
Thank GOD for this man.
Scarr's Pizza Rocks!!! .... 2020! ..... Happy Healthy to
