At last!! I've found someone who love easting Australian Salmon!!!!!! The first time I caught and ate an Australian Salmon was on Lord Howe Island. I'd heard of people not liking it as a table fish, but I caught it late in the afternoon, bled it standing it head first in a hole in the sand, cleaned it out thoroughly in salt water, and cooked in foil in the oven with some lemon inside. Was a very nice delicate flesh and sweet tasting. I've told other anglers when the topic has come up and they think I'm mad.
Best way I have found is to tear the aorta that runs under the gills, leave them in a bucket of water. They go quickly, and reduces the red flesh alot.
